Avocado Toast With Poached Egg
INGREDIENTS—————————————————
- 1 slice whole grain bread 🍞
- 1 ripe avocado 🥑
- 1 egg 🥚
- 1 tsp white vinegar 🥄
- Salt 🧂
- Pepper 🌶️
- Red pepper flakes 🌶️
- Fresh herbs 🌿
INSTRUCTIONS————————————————
1. Toast the whole grain bread until it’s golden brown and crispy.
2. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until it’s smooth, then season with salt and pepper.
3. Fill a small saucepan with water and bring it to a gentle simmer.
4. Add the white vinegar.
5. Crack the egg into a small bowl or cup.
6. Create a gentle whirlpool in the simmering water using a spoon, then gently slide the egg into the center of the whirlpool.
7. Cook for about 3-4 minutes until the egg white is set and the yolk is still runny.
8. Use a slotted spoon to carefully remove the poached egg from the water and drain on a paper towel.
9. Spread the mashed avocado evenly over the toasted bread.
10. Place the poached egg on top of the avocado.
11. Season with additional salt, pepper, and red pepper flakes if desired.
12. Garnish with fresh herbs for added flavor and presentation.

being a chicken farmer is awesome because if you want to give somebody a present for the holidays/their birthday you can make a cupcake using your chickens' eggs and write a note along with it that says "made with love by [your name] and some help from [chickens' names]" and give them a dozen or half a dozen carton of eggs with little polaroid portraits of all your laying hens on there :')

Two thoughts this morning:
1. It’s really hard to heal when all my fever dreams (and most of my regular dreams) are about him…
2. Why do I have two cute raincoats, two large umbrellas, and a pair of nice rain boots, when 99% of the time it’s raining I just go running outside barefoot and in whatever I happen to have on at the moment? If I have to go anywhere in the rain, I’m far more concerned about my books staying dry than I am having wet socks or catching cold…
(Btw: good Italian bread + honey goat cheese + fresh apricots + more honey + fresh thyme = 😩)
