Eating homemade coronation chicken while watching the actual coronation of King Charles III is a whole mood.
Here’s the classic Coronation Chicken sandwich filling recipe if you’d like to make it yourself! My Mom’s recipe uses celery, fresh black grapes, green onions, dried apricots, and chopped cashews in addition to the basic ingredients shown here.
Fortnum & Mason and Tom Parker Bowles’s Coronation chicken sandwiches
This version omits the original nuts and uses fresh coriander, plus plump raisins, mango chutney and a little spice to keep all that naughty sweetness in check.
Ingredients
Makes 16 finger sandwiches
1tbspn vegetable oil
1½tbspns mild curry powder
1tspn turmeric
3 cooked chicken breasts, skinned and finely diced
8–9tbspns good-quality mayonnaise
3tbspns mango chutney
1tbspn chopped golden raisins
2tbspns chopped coriander
Salt and freshly ground black pepper
Butter, for spreading
8 large slices of white bread
Method: Gently heat the vegetable oil in a small pan, add the curry powder and turmeric and cook over a very low heat for one minute, stirring constantly. Remove from the heat and cool slightly. Put the diced chicken into a bowl, add the spice mixture and rub it into the chicken. Add the mayonnaise, mango chutney and raisins and mix well. Fold in the chopped coriander and season to taste.Lightly butter the bread and spread the Coronation chicken mixture over half the slices. Sandwich together with the remaining bread, cut the crusts off, then cut each sandwich into four fingers.
From ‘The Cook Book: Fortnum & Mason’ by Tom Parker Bowles (Fourth Estate, £30). Tom’s new book with Fortnum & Mason, ‘Time For Tea’, is out now (Fourth Estate, £20)

Leftover Chicken Salad with a Curried Mango Chutney Dressing
When I’ve had a roast chicken on Sunday I always have leftovers as its just me and Paulie (oh and 2 dogs and a cat) I like to spice it up so its different to the traditional flavours. Sometimes I might make a curry or a tagine. This week I was working in the office, so I made this curry salad. The mango chutney was so nice against the thai green curry paste. I love dried cranberries they are full…

CarolCooks2…#National Curry Week )3rd-9th) October 2022 UK…
It has often been said that curry is the new National dish of Britain it is certainly easy to see why… Since the 1970s, curry houses have become a staple of high streets up and down the country and millions of curries are consumed every single week. The love affair with curry shows no signs of slowing and that’s what we’re celebrating with National Curry Week…yesterday I featured Thai Curry...not…

6/16/2024 - Home sweet home! We made it! Whew! Our unplanned stay in London was a surprisingly nice experience. Our brief time at the airport hotel included an AMAZING chicken makhani curry with mango chutney, the chance to drink a couple of British ales whist watching a little futbol, and (after a long and interrupted “travel day” yesterday) a welcome 8-hours of solid sleep. Sumi seems to dig the traditional English Breakfast (complete with a crumpet!)…which is what she had this morning. :) We were rebooked on two American Airlines flights (London - Philly - Portland) that went off without a hitch. …upon our arrival back at the house we discovered an absolutely wonderful ‘welcome home’ gift my sister dropped off containing fresh flowers, South African wine(!), chocolate, coffee and other goodies to get us thru at least till Tuesday. (Becki ROCKS! Thank you!)

Classic diner converted to Indian fusion restaurant.
Kashmiri deviled eggs: Indian spiced deviled egg, fried curry leaf.
Thai basil cooler: lime, Thai basil, cucumber, soda.
Lentil coated (podi) seared salmon: masala mashed potatoes, charred broccolini, mango chutney puree.
Gulab jamun waffle a la mode: warm buttermilk GF waffle, cardamom saffron syrup, vanilla ice cream.
The entire meal was tasty. A novel experience of familiar foods with unexpected flavors. The GF waffle tasted great, but the texture was a bit like plastic (melted G.I. Joes), which means I was glad I did not get the chicken and GF waffle dinner.

Child-friendly/mild Chicken curry!
Tumblr media
Serves 6-8 grown-ups. At least a two day endeavor as it has to marinade over night in the fridge and simmer for a few hours.
Ingredients:
For the marinade:
1 big tablespoon Mild curry mix powder (mine has: coriander (34%), turmeric (31%), buck thorn seed, cayenne pepper, cumin, fennel, black pepper)
1 small tablespoon Tandoori masala mix (mine has: salt (50%), onion powder, cumin, turmeric, coriander, cayenne pepper, cinnamon, nutmeg, laurels, carnations/dianthus, buck thorn seed, garlic, black pepper, ginger, dill)
1-2 dL Apple or lemon juice
2 tablespoon Soy sauce (I use a thin one from Thailand, but I guess whatever you can get works)
Fresh cracked black pepper
1 teaspoon Salt
1 teaspoon Monosodium Glutamate (msg (optional))
1400 g chicken meat (breast, deboned thigh, or the tenderloin. Or a mix of the things) (fresh or frozen. Just make sure it is completely thawed before working with it, should you use frozen. This requires you to get it out of the freezer and into the fridge at least 24 hours ahead of time)
Next day:
2 large or 3 small Onions
Half head of Garlic (remove any sprouts if you easily get reflux)
Butter/oil for frying
1/2 L cream (38% fat content) (i suppose you could use coconut milk instead if you can't have cream. Bevare of coconut flavor though)
Black pepper
1 small tablespoon Curry mix (same as in marinade)
200-250 mL Water
Edelsüß paprika (optional)
Side dish and possible toppings:
Rice or ramen noodles
Pineapple (fresh or canned, whichever you prefer)
Peanuts (roasted and salted)
Coconut flakes or sprinkles
Raisins
Banana chips
Mango chutney
Apple pieces
How to assemble:
How to marinade:
Dry stuff in a big bowl
Add soy sauce and juice
Taste test. Is it spicy enough? Sweet enough? Sour enough? Salty enough? Adjust to taste. It has to be almost unbearably much of all as it is the main seasonings for the food
Cut chicken into bite sized pieces and add to bowl. If you dislike the veins and sinewy things in chicken, now is a good time to remove it as well. No need to have disgusting things in the food you make yourself.
If you used frozen chicken, there usually is some liquid in the bag of bowl or whatever. You do not want that in this dish. Somehow use it for something else or get rid of it.
Cover and put in fridge until next day.
Next day: at least 4 hours before eating time
Take marinaded chicken out of fridge
Find a big pot. We are talking at least 3 L capacity
Peel onions and garlic
Heat many amount of butter in pot (it should cover the bottom completely when liquid) at like medium heat (5-6 of 9)
While butter heats up you cut your onions into small dice
Crack quite a lot of pepper into the pot and add curry powder
When fragrant, add onions and fry until soft
While onion fries you mince your garlic and just leave it on the cutting board until later
Fish chicken out of the marinade and fry until pale at a bit hotter than medium heat (like 7 of 9)
Add garlic and marinade
Add cream and water. Much water if you like the sauce thin, less water if you like it thicker
Get to a boil and then down to a low simmer (2 of 9) for at least three hours. Lid is optional
Taste test. If it feels like it is good as it is then perfect! If not, add what you feel misses. Salt, pepper, soy sauce? Paprika? It is usually paprika if it feel salty and spicy enough, but lacks depth. 1-2 teaspoons paprika rounds it out and deepens the flavor profile.
Make rice or noodles however you usually do
Put toppings on table. Either just in the containers they come in, or if you want to be fancy put it in ramekins or pretty bowls. Apply fork or spoon for hygienic getting toppings.
Assemble your bowls as you like and enjoy it :]
If anyone who tries this has ideas, feel free to add them so other can enjoy them as well

last meal on earth? (27)
For this questionnaire
I want it to be very specific meal. If you are not a Telugu person you might not know some of the stuff.
First I want one or two purnalu ( it's a sweet dish).
Secondly two garelu(also known as Vada)
Then some plain white rice with lots and lots of ghee.
Some guttu vanakaya koora(a kind of Brinjal curry)
Some more rice with mudda pappu and avakaya ( a type of dal and mango pickle)
Some chicken 65 and one tangdi kebab with green pudina chutney.
Then some rice with pappucharu(Telugu version of sambar) and some appadalu(papads)
Then plain white rice with Perugu (curd) and meegada ( cream on top of curd) with some salt.
Lastly one sweet paan.
I hope that wasn't a weird last meal lol.
