Reposted from @hungrygirlintoronto The Murshidabadi Chicken Korma is a sublime example of one of the oldest , yet relatively unknown Indian cuisines. This cuisine hailing from Murshidabad which was the Mughal seat of power ruling over undivided Bengal, Bihar and Orissa in the 18th century is one with a beautiful amalgamation of Bengal and Mughal influences. Yes, it is not well known like the Hyderabadi or Awadhi cuisine and after the partition it has become something only present in stories of pre partition Bengal ...but this cuisine is a magnificent example of how we imbibed the Persian influence into the local flavours of Bengal. . Kormas are synonymous with Mughlai cuisine with their rich base of cashews and other expensive ingredients and a souring agent like yoghurt. However in the Murshidabad Chicken Korma we use tamarind which is a rustic and more common ingredient in Bengal. Also interestingly , the other kormas in this cuisine are primarily vegetarian with ingredients like yam and potatoes.. . This collab #forgottenfoodofindia co-hosted with @food.tweaks started with an idea as both of us chat endlessly into the late night about everything food.. Whether it’s intricate recipes from the royal kitchens of the Maharajas, decadent secret dishes from the chefs of the Nizam or recipes which were closely guarded secrets of the humble hearth, there are some recipes which have faded into oblivion. All plain and simple. Desi chai- Desi cha as they call it in Jammu or pink tea. This is the first thing I make every morning during the winters. Green tea boiled with saunf , cinnamon and green cardamom and sometimes ginger. With a wee bit of salt. If you add a pinch of soda bicarb to it, it turns pink. I generally never add sugar to my tea or coffee, but with this tea... I love it sweet with a few slivers of almonds . No ,I don't like the malai.😵 It's extensively warming and comforting. So what if it's not cold in Mumbai. It's winter somewhere.
