I do something similar with my planned main story for Skyrim (Sugar, Sap, Sun, and Snow) though I have yet to cover all the questlines.
Taralka does main quest and Dragonborn, possibly a little bit of Civil War (Imperial Aligned), and quite a handful of Daedric quests
Veix does the College quests and the majority of Dawnguard, and a few Daedrics but they involve him thwarting their efforts
Aeva goes around doing her own thing of sorts, a very loose modded questline you could say, and also makes an appearance near the end of Dawnguard (same side as Veix, surprisingly)
Yuna helps out both Taralka during the MQ and Veix in the College
Jayhan-daro does the Dark Brotherhood, though I am not sure to what extent - she manages to survive Taralka's destruction of the rest.
That's all I can think of for now. Oh, and also, my alternate universe LDB, Athra, will play a large part in the Civil War (Stormcloak aligned) and Thieves' Guild quests.
Are we venting now? Oh boy here I go. People do NOT make enough OCs for their skyrim fanfictions. I understand in game the dragonborn is the only character you can make but you know what? The Dragonborn, the Listener, the Archmage of the College of Winterhold, and the thieves' guild Nightengale should all be different people. The cities should be larger and have more people than canonically live there. Factions aren't going to be choosing part-time leaders. Make more characters, guys! Making OCs is fun and you know it. The only hard part is picking which one gets to kill Maven Blackbriar.
Yeah, canonically the Dragonborn only does the main quest and the DLCs, so while the faction quests are completed, they're not necessarily done by the Dragonborn, Hero of Kvatch, Nerevarine, etc. It's ambiguous, and that's what makes it fun!
I personally have lots of OCs for different factions in Skyrim, and some with overlap.
Leara Rose-blade — main quest; Civil War; Dragonborn
Aurora Orianus — main quest; Civil War; Dragonborn
Jolinar Aren — College of Winterhold; Thieves Guild; Dawnguard
Artanis Felagund — Companions; Dark Brotherhood
Nixiel Veres — Solstheim (save for Dragonborn)
Phoebus Apollus — College of Winterhold; Bard's College
Sercion — Dawnguard (Volkihar)
And if one of mine DID kill Maven, it would be Artanis. Not because she's Brotherhood, but because she likes killing powerful political figures.

Jonah had woken up before Jai and was thirsty. He slipped out of the bed they had shared quietly, not wanting to wake the other man up. He crept into the kitchen to get a glass, knowing his way around well at this point. When he was on his way back, he noticed a door open that usually wasn't. Jai had told him it was his office and Jonah hadn't questioned it being locked but since it was open and he was nosy, he pushed the slightly ajar door open. It was like a library which was the kind of place that always made him feel at home. He wasn't trying to pry into his work and only just took a wander around the room to see what books he had. There were a lot by Saeid W. Jayhan. Were these... first editions? Then something else caught his attention, some parchment on the desk in the room. He'd caught sight of some of the words and he was intrigued so he started reading, placing the glass of water down as he kept going. He was so caught up in it that he didn't notice Jai there at first until he looked up for a moment in confusion, "What is this?" he asked, pointing to what he had been reading.

Call it ego or simply inane curiosity, but Jaiyash hadn’t been able to resist taking the day off to see the launch of his new book. No one knew it was his of course and he’d had success in the past but that didn’t mean that this would follow suit. For all he knew it would crash and burn despite the hype it had been given, as with many new releases. There was a chance it could disappear in between the other low selling items but he really hoped not. Now, he could wait to hear back from his literary agent or he could go scope it out himself. Being that he wasn’t a patient man, the latter had won out, which was how he’d found himself skirting around the edges of the displays in one of the locals bookshops, casually flicking through a few titles that caught his attention whilst keening an ear in to the conversation surrounding the release of ‘Saeid W Jayhan’s’ new book.
Nose buried between the pages of the book he was holding and a lack of awareness of anything but what he was listening to had him colliding with a passing stranger. Or well, less of a stranger when he looked up to apologise to the person he’d unintentionally played bumper cars with. “Jonah? What’re you doing here?” It wasn’t really a greeting as such but there was a tone to his voice that suggested he was not displeased to see the male.
