There's nothing more attractive than a guy who's not bothered by what other's think of him, much less a guy who doesn't feel intimidated by other's masculinity nor feels the need to compete with them. I believe this is especially prevalent in the remakes, no? I don't think he has a specific type as in girly girl or masc or 50/50, i think he just wants an emotionally compatible human being, physical attributes are just an icing on the cake but people see a built like a brick guy and immediately go = he wants sub women, super feminine lol

I don't know what Leon's taste in women has to do with his masculinity. Though I also subscribe to the belief that Leon doesn't really care about what "type" of woman he dates. Especially OG Leon, where he's happy as long as she's hot and has a hole he can slot himself into lmao.

I don't see Leon challenging toxic masculinity being any more prevalent in the remakes than in the original continuity tbh. The only time Leon's appearance is mentioned is by Krauser when he calls him a prettyboy during his boss battle, which, like almost everything in the remakes, is just drawing upon/attention to what has already been established in the original games. We already knew that Leon's a prettyboy in comparison to a lot of men, we already knew that Krauser is a battle hardened and more traditionally masculine character. It makes sense that Capcom would use this information to further establish how Leon is perceived by men like Krauser that he's been forced to surround himself with.
