🍁Happy Thanksgiving🍁
Canadian Thanksgiving falls on the second Monday of October each year. I hardly ever see anyone mention it so I'm gonna do it!
Living in Japan makes it difficult to find the traditional Thanksgiving fixings, particularly turkey. So for this year's spread we've got: roast chicken with cranberry BBQ sauce, homemade perogies from scratch with kielbasa sausage (procured from a specialty meat shop in Nasu), lasagna from scratch, mascarpone dinner rolls from Costco, and a pumpkin pie, also from scratch! I even had to boil and puree the pumpkins myself. My other Canadian co-worker doesn't drink alcohol so we made mulled apple juice to drink which I think may be my new winter staple.
Put apple juice in a pot, add a cinnamon stick, a couple of whole cloves, some allspice berries, and a touch of maple syrup and let it simmer on low heat on a back burner. Hot, tasty, and simple!

- Food
A thing I notice whenever a gringo comes here id how they seem to love our food! We're very set on a good meal (normally rice, beans, meat and some sort of salad, It's a very common thing to find on the table of any brazilian at lunch or dinner), but we also have some more region specific foods! And we are damn PROUD of our stuff!
I LOVE FOOD! AND ABOVE ALL, THESE ONES! In order, they are: coxinha, pastel, pamonha, brigadeiro, pão de queijo, beijinho, feijoada, farofa e churrasco! Lemme talk a bit about them:
- Coxinha -> it's made out of shredded chicken amd enveloped into a dough, then fried and I SWEAR this is the best thing ever! When I was small, my aunt owned a food place and after I helped her around, she'd pay me with coxinhas xD it was lovely
- Pastel -> similarly to the coxinha, it's a tasty interior made out of whatever you want (can be cheese, any meat, veggies, fish or even chocolate and fruits!) and a crust. It's crunchy and I love it! You can buy the crust pretty much in any market (or make it at home) and then fill it up with whatever you want! After that, it's just fry and enjoy!
- Pamonha -> it's a boiled paste made out of corn and apparently coconut milk! It's enveloped on the corn's own husk and it can be sweet or not! One day, my auntas came together to make a GIANT batch of pamonha and I swear it was one of the cooles experiences ever! Pamonha is also a thing we use to call dumb people, tho xD
- Brigadeiro -> AUDHBRJWJW I LOVE IT!!! It's prettymuch homemade (you'll need butter, condensed milk and cocoa powder, then sprinkled chocolate to cover it up if you want!). It's sweet and good and normally can be seen in any birthday party (it's victim of the biggest trafficking scheme in the world called Hungry Children, and it's highly effective until an adult gets you sneaking brigadeiro from the food table at the party. I was a big trafficker).
- Pão de Queijo -> THE beloced cheese bread! I have no clue how it'sz made but I know it's fucking amazing, i'll tell you that!!
- Beijinho -> the name translates to little kiss!! It's like the brigadeiro, also a birthday party sweet, made out of condenses milk, grated coconut and rolled over either sugar or coconut! It's less sweet than brigadeiro but just as good! Sometimes, it's topped off with a clove, too, but you don't need to eat that xD
- Feijoada -> a stew of beans with beef and/or pork (sometimes veggies as well), served with farofa (more on this one down bellow), rice and other stuff.
- Farofa -> tasty sand. Litterally. It's made from toasted cassava. It can be found in any narket but also can be made at home! (My mom makes the best one with bacon 😭). It's not meant to be eaten alone as it's salty and fucking hard to swallow without something kind of moist!! It can be used alongside the feijoada, churrasco or even on your normal sunday family lunch siting common beans and rice!
- Churrasco -> I don't care if other countries have barbecue as well, nothing will ever top off south-brazilian bbq!! It's meat and garlic bread and it's ducking amazing????? Any kind of beef, sausages (either pig or chicken), chicken wings, chicken hearts, sometimes veggies, garlic bread! All of tgis. Together. IT'S THE BEST THING!!! My family has these almost every weekend and I love it so much! Now add lemonade?????? THE MEAT IS SO WELL SEASONED AS WELL LIKE!! GARLIC, ONION, A LOT OF STUFF THAT GIVES IT SUCH A GOOD TASTE AND IT NEVER IS DRY!!
This was me going crazy over my favorite foods :3 obviously there are others like acarajé, açaí and a lot of other stuff from the upper states, but I never had them so I can't give an opinion xD

- Language
I'm entireky convinced that the brazilian portuguese is the best portuguese and funniest fucking language I ever saw. Maybe because is the only other one I speak but who knows KAKSKSKSK
I like our words. Compared to english and some other languages, I feel like portuguese is more soft spoken? I may be crazy but like... i get the vibe of that.
Our sayings are lovely and funny, especially when you're watching foreign movies with the brazilian dub (God bless Surf's Up). Here are some pf my favorite sayings and sounds and whatever!
- "Bah" -> common here on the south, can be used for pretty much anything, even as punctuation. It can mean whatever your heart desires depending on context (Bah...; bah.; bah???; BAH!; bah, [...]; I promise all of these mean different things and there's more that can only be use when soeaking irl xD). I use the bah all the time and I'm sure you saw it KSKSSKKS
- "Hit it waith a dead cat 'till it meows" -> I dare you to find a better way to say you're gonna shove some sense into a person. There isn't. This is my fave saying
- "Pila" -> our currency is called real (good ol' R$). But fuck me if you'll see a brazilian saying "i've got 10 reais". You'll see us saying "I've got 10 pila" (or "10 pau", can be that too. Pau can mean either wood or dick tho so use at your own risk. I laugh everytime I see the word pau :D)
- "Shove a set of teeth up your ass and smile to a dick" -> I think nothing needs to be said here, right?
- "To make the asshole fall from your ass" -> when something is unbelievable, I think. I love it :3 (de cair o cu da bunda, in portuguese)
- "É foda..." -> don't know how to answer anything? É foda... "Fulano, my friend got into a car accident!", "...é foda...".
AND WHILE ON LANGUAGE! Accents!!! I love accents and I think my favorite is the accent from Nordeste (or at least Ceará), tho I absolutely love our South accent (especially Rio Grande do Sul).

- Fauna
Surprise surprise! I like animals!! I bet ya didn't know 'bout that one, did you?????? I don't think so!
In order: southern-lapwing (quero-quero), toucan (tucano), harpy eagle (harpia), sunbittern (pavãozinho-do-pará), potoo (urutau), brazilian tanager (tiê-sangue), oven-bird (João-de-barro), caracara (carcará), jabiru (tuiuiú).
DID YOU KNOW, the Harpy eagle is the largest species of eagle? Their talons can go from 8.6 to 12.3 cm (3.4 to 4.8 inches). They grab sloths out of trees like they weight nothing. Their paws are the hugest fucking thing???????? Fucking scary
Yes the lapwing has claws on its wings. Yes they are extremely agressive and territorial. Yes you SHOULD fear them.
In order: golden lion tamarin (mico-leão-dourado), tapir (anta), giant-anteater (tamanduá-bandeira), maned wolf (lobo-guará), bush-dog (cachorro-do-mato), ring-tailed coati (coati), jaguar (onça-pintada), marsh deer (cervo-do-pantanal), giant river otter (ariranha)

Especially nature, man... this country us so unbelievably pretty. The beaches, the forests, the cities, everything... i love it so damn much. And it's not only Rio de Janeiro. In fact, there are much better, prettier and safer places.

- Folklore
NOW I LOVE THIS!! SO MUCH!!!!!! FUCK!! WE HAVE SO MANY LEGENDS AND FOLKLORIC CREATURES! I'll talk a bit about them!
- Cuca -> A witch with the head of a crocodile known gor kidnapping kids! Shess became famous thanks to Monteiro Lobato, in a book (and went on to be the villain in a kid's show called Sítio do Pica-pau Amarelo. She's sometimes compared to the bicho-papão (same vibe of kidnapping and eating misbehaving kids).
- Boto-cor-de-rosa -> I already talked about this one but it's always fun to bring him up again! Legends says that at night, an extremely seductive man comes out of the waters to sleep with young girls. By the morning he flees,leaving them pregnant. Yeah, he's an amazonian river dolphin. It's a story told when girls appeared pregnant and din't want to tell the truth.
- rasga-mortalha -> rasga-mortalha (a.k.a. barn-owl) is a pretty common legend that says that when the owl flies over someone's house, someone there will soon die. She got the name rasga-mortalha because when she emits her sound, it's like when you rip that thing used to cover dead people on funerals (mortalha).
- Mula-sem-cabeça -> the headless mule is a popular one as well! It's a common mule but, in place of it's head, it has flames. One of the legends behind her is that if a woman had sexual relations with a priest, she'd be cursed and turned into the monster. When I was a kid, a common game was to race and say that the last one would be the priest's wife, meaning you'd turn into a headless mule.
- Boitatá -> a giant serpent of fire who protects the forest and it's animals against people that treat them badly. Some legends say that whoever looks at a boitatá turns blind and goes insane.
- Curupira -> a small boy with fiery red hair and feet turned backwards! They are protectors of the forests and some native people said they went after anyone who went inside a forest to hunt or deforest. Some even used to left gifts for the curupira in order to freely hunt!
- Caipora -> sometimes confused with thes corupira, the caipora is a mischievous animal protector who'd go after hunters who didn't respect the rules of hunting fairly (who took more than needed).
- Saci -> a black and mischievous boy with only one leg, that smokes a pipe and weaars a red hat that gives him magical powers. He's a playful boy that does pranks on people and their animals, like: braiding animal's fur at night, hide objects, change the salt and sugar pots, distract women so they burn the food and those kinds of things! He's also a guardian of medicinal herbs and confounds people that tryvto take them without his blessing. They can also moove in a tornado.
Those are only some of the brazilian legends, and I find them extremely cool! Obviously there are many others, but these ones are the most common and loved!

I know you're dealing with alot right now--may I offer you a distraction?
For my dinner I have Harira and naan. Harira is a north African soup that has a chicken broth and crushed tomato broth with lots of spices like curry, cayenne, paprika, coriander seeds, mustard seeds and minced ginger and garlic. The stars of the show are millet (or rice), lentils, chickpeas, and lots of cilantro and parsely. It is super flavorful and tasty. The naan I also made myself from a trusty recipe I got from a youtube video. Ideally you'd also make garlic-cilantro-melted-butter to brush onto the fresh-off-the-flying-pan naan. Yum yum!
What sorts of things do you like to cook?

Hm, more often i bake (havent done much of that either lately) but I like making waffles (does that count?)
and homemade chili: 2-3 cans of beans, black or kidney or navy or combo. Tomato sauce, spices (my mom helps with this but usually chili powder, sometimes taco seasoning instead, various stuffs. I have a recipe somewhere lol), and a can of petite diced tomatoes to add after the chili is cooked. Best served alongside cornbread or cornbread muffins
Hm, what else. Oh! One of my favorite recipes is ‘skillet enchiladas’ (not real enchiladas lol). Basically you put tons of cheese in rolled up tortillas, place in a layer in the cast iron skillet, add bbq sauce and more cheese (and probably tomato sauce etc) and ground meat i think? Maybe? And cook! And enjoy :)

Their Call for Home: Maud and Amon would bring cake and other baked goods, just because they maybe finally had the time for it.
Feyre would bring dessert. She takes her desserts very serious, and you can be sure it is sweet, very sweet.
Meir would be in charge of drinks of alcoholic and non-alcoholic kind, always making sure everyone has some tasty options.
Saylah would bring the salads and get the buns, bread and such from the best baker she can find.
Iskra is the snack girl all day through, so of course she would bring some homemade snacks. Things like pigs in a blanket, hearty puff pastry pockets, sandwiches of all kinds.
Kaladin will turn into Mr BBQ and be in charge of everything meaty and cheesy.
Moon Daughter:
Connor will bring meaty and vegetarian stuff to be grilled, of course with his secret marinade.
Danika will make donut or beignets, whatever she feels like more and depending on if Candice can help her (and eat half of it).
Neil (if he isn't broke again) will make kabobs.
Ezra will bring the chips, cracker and self-made dips (mostly because he needs something to chew when he gets tensed)
Aleah is the sweetie with the sweets and will be the one with more cake.
Mika, contraray to what people will think because of her job, won't bring drinks but use the chance to make various salads.

There will be a few that need a couple of extra ingredients to finish.We will be staying away from meals in a jar that require a ton of dairy or other fresh ingredients that cannot be replicated with freeze-dried or dehydrated alternatives. We'll also stay away from dessert or salad in a jar things that should stay fresh.We also want to keep these mixes shelf-stable for long-term as much as possible, so things like granola won't be included.My hope is to give you viable, good, shelf-stable options for meals in a jar recipes at every one of these vetted links to help you build your pantry with long-term pantry storage.TIPS FOR SUBSTITUTION:Many of these recipes may contain products that are from a specific freeze-dried company. They may not be 'in the jar' and are usually geared more towards single or double serving meals in a bag, but they can be used easily translated to your family serving size.A caveat to these kinds of recipes is that they may often use oils/fats while cooking and meats. Hard sided plastic containers (not the more pliable) will also work Mylar bags - these are reusable and great for camping and can be sealed with a simple heat seal with an iron or vacuum sealer, or vacuum sealed with an O2 absorber Vacuum-sealed plastic storage bags as is used with many vacuum sealers Zip-top bags for short-term storage (less than a week). Cool, dark, dry places are best for storage. If you have proteins, storing them in the freezer is optimal, and they can be pulled out at any time for a backpacking/hiking trip with no issues.Using Oxygen AbsorbersThese can be used in your jars to help control the shelf life of your meal in a jar recipe. They are not necessary but can be helpful. You can learn all about how they work and if you really need them (you really don't) with this handy guide on storing dehydrated foodsHelpful Tips for Creating Meals in a JarUse Instant Rice or Instant Beans. For those ingredients that take longer to prepare, using dehydrated rice or dehydrated beans can cut your time down. Mark your packages: Mark your bags or attach a recipe sheet to your jars. Having the correct directions on how to prepare or what more needs to be added. Mylar can be written on with sharpie markers. You can write on the lid of a jar, tape a recipe card to the outside, etc. Never assume you'll remember! Interchange recipes. You'll often find recipes online that are built from freeze-dried foods only. While a little adjustment in the time to rehydrate may be different, you can easily replace freeze-dried with dehydrated foods. Using dehydrated foods - consider cooking your vegetables fully then dehydrating to make the end product a little quicker to reconstitute. Preparing Meals in a Jar RecipesUsually simmering in enough water to replace the original water is enough, though I suggest a little extra to make up for loss in simmering and the extra sometimes needed to rehydrate. But follow the above recipe suggestions for best results as all will vary.Tools for rehydrating meals in a jarSaucepans Fondue pots -surprisingly, these are excellent in emergency situations as they require nothing but a candle or other fuel source that is easy to store, and can be used to simmer smaller meal portions during power outages. Look for older non-electric fondue pots in thrift stores for less expensive options. Thermoses Other Helpful Resources for Meals in a Jar RecipesRainy Day Food StorageTips to convert recipes:Many recipes you already cooked can be made into a meal in a jar recipe. Some helpful tips to covert recipes you already love are:Stock: Replace 1 quart of stock with 1 ½ tablespoons bouillion. Then use 1 quart water to make soup Vegetables: Use ⅓ cup of dehydrated or freeze dried vegetables to replace 1 cup of fresh. Remember that dehydrated vegetables may need a little extra time to rehydrate and cook, so meals that allow simmering work best. Milk: Use ⅓ cup milk powder to replace 1 cup milk (and ⅔ cup water) Ground Beef: 2 Cups freeze-dried ground beef for 1 pound of beef Chicken: 2 ½ Cups freeze-dried chicken for 1 pound of beef Meals in a Jar Frequently Asked Questions:How long do meals in a jar last?Typically, most meals in a jar will last a year to three years by the safest standards of the National Center for Home Food Preservation.However, using the proper storage standards listed above, you may get 5 or more years out of them. Just remember, things like tomatoes have a shorter long-term life and may begin to degrade a little faster than the rest of your dehydrated goods, so be sure to rotate often!Meats should also be freeze-dried as opposed to dehydrated for best storage results.Can I use freeze-dried foods?Yes! In fact, I recommend using freeze-dried meats for all of my long-term storage of dried foods. They are prepared in a different way than dehydrating and can be shelf-stable for up to 25 years (unopened) and then longer than typical dehydrated meats on the shelf opened.My favorite places to purchase freeze-dried foods are Thrive Life and Augason Farms, depending on who is running the better sale.However, if you are concerned about storing meats long-term from a dehydrated or already opened, freeze-dried state, you can always keep your meat in the freezer and just add it as you put the meal on the stovetop to cook.Can I replace freeze-dried with dehydrated food?Yes, they are usually interchangeable in any meal. Just remember dehydrated foods may take a little longer to reconstitute. And if they were not dehydrated from a fully cooked state, they will also need time to cook.Can I store salads in a jar on the shelf?Unfortunately, salads in a jar type recipes are still meant for safe refrigerated storage but can help extend the life of your greens when vacuum sealed. They are not safe for shelf-stable storage, which is why they are not included in this list.Do I have to use a mason jar to store meals in a jar recipes?Use mylar bags with or without oxygen absorbers, food storage bags, airtight containers, and commercial glass jars with airtight seals. Zip top bags are to be used for very short-term storage only (think a week or so).Can I do any meal and put into a jar?Unfortunately, just any meal doesn't dry and qualify for shelf-stable meal in a jar storage. Many foods are high in fats/oils, or aren't considered shelf-stable.So while you can do a bulk load of spaghetti sauce and noodles with meat, drying it once cooked is easy, but the meat may not be shelf-stable because of the fat content, and any oil used in the sauce can also create an issue.This is why freeze-dried proteins and non-fat dairy are suggested for storage.However, these meals would be fine for short-term backcountry/hiking meals, or can be stored in the freezer until needed.Do items need to be kept separate?With some mixes, the soups need different cooking times. A vegetable quinoa soup might need the quinoa cooked separately. Or in the case of a mac and cheese meal, the sauce components are bagged separately, then inserted into the top of the jar. Each recipe should notate if this might be necessary.Can I make my own freeze-dried foods?Yes! You can freeze-dry single ingredients or whole meals using a freeze-dryer. They usually have a longer shelf-life than dehydrated foods making your meals in a jar last much longer.The Harvest Right Freeze Dryer is the premiere home freeze-dryer on the market (much like Excalibur was 15 years ago). It is an investment, but for those serious about long-term food storage and control of your own food, it might be an investment worth making rather than purchasing from various companies.Conclusion:There are so many resources for meals in a jar on the internet. Some are great for long-term storage, and some are made more for the effect of storing in a jar but might be better used for short-term gift giving.Either way - play, explore, make up your own recipes! Allow pasta to soak while preparing the sauce Add 2.5 cups of water to dry ingredients Mix thoroughly and allow to sit an rehydrate while pasta rehydrates Mix with pasta and serve. Notes: If using regular pasta, cook it first (you can rehydrate the protein in the same water), drain, then go into the next steps. You can use some of that pasta water to mix the dry ingredients to form your sauce. For ease, you can cook all the ingredients together. The sauce may clump and it may take more time to mix together, but given time, the ingredients will mix properly.
