Ingredients: 2 cups unsweetened shredded coconut. 1 cup pumpkin seeds. 1 cup sunflower seeds. 1/2 cup coconut oil, melted. 1/3 cup keto-friendly sweetener such as erythritol or monk fruit. 1/4 cup sugar-free honey substitute. 1 teaspoon vanilla extract. 1/2 teaspoon ground cinnamon. Pinch of salt.
Instructions: Preheat your oven to 300F 150C. In a large mixing bowl, combine shredded coconut, pumpkin seeds, and sunflower seeds. Ingredients For 4 Servings:
• 4 bell peppers (any color)
• 7 eggs
• 2 turkey sausages, halved lengthwise and diced
• 1 tablespoon smoked paprika
• 1 tablespoon salt
• 1 tablespoon diced oregano
• 1 cup shredded mozzarella cheese
• 1 cup grated Parmesan cheese
• Cooking oil spray

Instructions
1. Prepare the Bell Peppers
• Preheat the oven to 380°F (193°C).
• Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the peppers face-up on a baking tray.
2. Mix the Filling
• In a large bowl, crack the 7 eggs.
• Add smoked paprika and salt. Whisk until well combined.
• Dice the turkey sausages and stir them into the egg mixture.
3. Stuff the Peppers
• Use a ladle to fill each bell pepper half with the egg mixture.
• Sprinkle mozzarella cheese and Parmesan cheese evenly on top.
• Lightly spray the peppers with cooking oil and sprinkle diced oregano on top.
