First of all I’m sorry I couldn’t find the exact same pose to compare - the reason is because I wasn’t the most confident in my own skin in the past, so obviously I didn’t save a lot of pics that showed my tummy and all that (I don’t think I even owned a crop top tbh lol... 😳🙈) . I feel like the 2016 pic embodies my lifestyle at the time. That wasn’t the greatest year for me - I used to drink, smoke and party quite a bit 🍻 (even though that’s not really who I am as a person). Not saying there’s anything inherently bad about these things (except maybe smoking lol unhealthy 🚫), but I was using them as an escape because I was unhappy and dissatisfied on the inside, and hey, this is what everybody else my age just does I guess, right? Grilled Pork Ribeye over a bed of Asparagus topped with garlic shrimp & a white wine shallot cream sauce! —————————————————Natural Smoke House Dry Rub Ribeye (from grocery outlet) Directions *Set oven to 350 *Grill on medium high 3-4minutes each side *Place in oven for 5-6 minutes *Take out oven and out of pan to let rest ——————————————————————— Shrimp 1 tbs butter 1 tbs avocado oil 1 tsp minced roast garlic Salt Pepper Directions *season shrimp with salt and pepper *heat oil and butter in a sauté pan. Once warm toss in garlic and sauté for a minute or two. *add shrimp to pan and simmer shrimp on each side for 2-3 minutes. ———————————————————————— Asparagus 1/2 tbs butter 1/2 tbs olive oil Salt Pepper Directions *Sauté on medium-high about 6-8 mins depending on size of asparagus. ———————————————————————— White Wine Shallot Cream Sauce 3/8 cup heavy whipping cream 3 tbs white wine 2 tbs butter 1/2 shallot 3 cloves garlic 1/2 tsp Fresh cracked pepper 1/4 tsp salt Directions *In a saucepan simmer minced shallot and garlic a couple mins. *add heavy whipping cream, white wine, salt and pepper. *simmer 6-8 minutes or until sauce has thickened . . Watching every day (I know they say don’t do this but I CANNOT help it) as the scale slowly decreases provides me with incentive. When you go into a department store and try on a pair of jeans or a pencil skirt three sizes smaller or a blouse in a MEDIUM instead of an XL it’s easy to go “eat sushi” and not “eat sushi” but stick to peppered tuna and avocado instead. Same great taste but minus the million carbs and bloating that usually follows.

Cooking has been on the back burner most nights with us either fending for ourselves or ordering out. I decided this week’s menu was going to be all based around cleaning out our upstairs freezer and our fridge of open items. Started out with a cheesy Buffalo chicken casserole - two kinds of chicken strips, bacon bits, cheese sauce with HWC and lots and lots of mixed cheeses. Side dish of stuffed mushroom casserole - leftover mushrooms sliced up, butter, @heatyourmeat seasoning, salt and pepper, @porkkinggood ranch pork rind crumbs and some Parmesan cheese. Hubby and son had burger Salisbury steaks with brown gravy and braised beef ravioli. Tomorrow night the youngest is making air fried pork belly BLTs. Oh my am I feeling it! It stops today! We have not been home for 2 weeks due to an emergency home repair that I honestly thought would take less than a week. During these last 2 weeks I have not kept it keto and my body is definitely feeling it. For a while now I have noticed that when I eat a non keto meal I have difficulty breathing normal. Well this week has been tough with that issue and it has gotten out of hand and uncomfortable to the point where I can’t even sit down on the sofa without having to get up and try to catch some air. I had this problem growing up and after my mom took me to get checked multiple times, they never found out what was wrong with me. Well now I honestly think it was the daily tortillas, pb & jelly sandwiches, and avocado sandwiches. Yesterday was so uncomfortable for me and I promised myself to get back on track to be able to go back and feel like my normal self again. I started keto to support hubby reverse Type 2 Diabetes and was so glad that it helped me lose 42 pounds. But now I do keto to be overall healthy. Yes now because of all the carbs I have eaten these last 2 weeks I probably gained 5 pounds or even more, what matters to me is my health. I had forgotten how good keto makes me feel that I took it for granted these past 2 weeks. Keto is a life changer and I am going to do my best to get back to 100% keto for me, for my health.
