Enjoy these healthy turtle bars without feeling bad about it. They are paleo and vegan-friendly. They taste great and are full of healthy things like coconut oil, almond flour, and dairy-free chocolate.
Ingredients: 2 cups almond flour. 1/2 cup cocoa powder. 1/2 cup coconut sugar. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1/2 cup chopped pecans. 1/2 cup dairy-free chocolate chips. 1/4 cup coconut cream. 1/4 cup pitted dates, chopped. Pinch of salt.
Instructions: Preheat the oven to 350F 175C. Line an 8x8 inch baking dish with parchment paper. In a mixing bowl, combine almond flour, cocoa powder, coconut sugar, melted coconut oil, and maple syrup. Mix until well combined. Press the mixture evenly into the bottom of the prepared baking dish. Bake in the preheated oven for 10-12 minutes, or until set. Meanwhile, in a saucepan over low heat, combine chopped pecans, dairy-free chocolate chips, coconut cream, chopped dates, and a pinch of salt. Stir until the chocolate is melted and the mixture is smooth. Pour the chocolate mixture over the baked crust, spreading it evenly. Place the baking dish in the refrigerator and let it chill for at least 2 hours, or until the chocolate layer is set. Once set, remove from the refrigerator and cut into bars. Serve and enjoy!

These Low-Carb Strawberry Cheesecake Popsicles are a treat that won't make you feel bad. In the form of a popsicle, you can enjoy creamy cheesecake with fresh strawberries and a buttery almond flour topping.
Ingredients: 8 oz cream cheese, softened. 1/4 cup powdered erythritol or preferred low-carb sweetener. 1/2 cup heavy cream. 1 tsp vanilla extract. 1 cup diced strawberries. 1/4 cup almond flour. 1 tbsp melted butter. Popsicle molds.
Instructions: Softened cream cheese, powdered erythritol, heavy cream, and vanilla extract should all be mixed together in a bowl. Mix until it's nice and smooth. Add the strawberry dices slowly while mixing them into the cream cheese. Put the melted butter and almond flour in a different bowl and mix them together until the mixture is crumbly. Put about half of the cream cheese mixture into each popsicle mold. Spread the almond flour mix on top of the cream cheese mix in the molds. Cover the molds with the rest of the cream cheese mixture. Place a popsicle stick in each mold. Freeze for at least four hours, or until the cheese is set. Be careful when taking the popsicles out of the molds after they're set.

Ingredients: 4 large eggs. 1/2 cup unsweetened almond milk. 1/4 cup cocoa powder. 1/4 cup erythritol or preferred keto-friendly sweetener. 1 tsp vanilla extract. Pinch of salt.
Instructions: Warm the oven up to 325F 160C. Add the eggs, almond milk, cocoa powder, sweetener, vanilla extract, and salt to a mixing bowl. Use a whisk to mix the ingredients well. Put the mix into a baking dish or ramekins. Put the baking dish or ramekins in a bigger baking pan. Add hot water to the bigger pan until it comes halfway up the sides of the ramekins or baking dish. After the oven is hot, bake the custard for 25 to 30 minutes, or until the edges are set but the middle is still a little wobbly. Take it out of the oven and let it cool down before you serve it. Before serving, you can decorate it with whipped coconut cream or shaved dark chocolate.

Living Gluten Free (+ A Recipe You'll Love)
The heart of every Indian household's diet is roti. It is found at almost every meal. If you told me two years ago that I’d give up gluten, I probably would have called it a bluff. All my life, I could not imagine a single meal without the soft, chewy flatbread that effortlessly melts in your mouth. So the idea of not having gluten seemed impossible.
Giving up gluten was not a choice I made for myself in the beginning. It all started when my sister was suggested to go gluten-free by a nutritionist. For quite some time, she was experiencing severe acid reflux and had borderline thyroid markers. To reverse this, she decided to go gluten-free. As an act of solidarity, I decided to go gluten-free too, because what is better than gluten-free trauma bonding? To my surprise, the only thing we were suffering from was success. After going gluten-free, throughout the day, we were both less bloated, had improved digestion, and had twice as much energy.
This transition was anything but easy for me. As a college freshman on the 9 to 5 grind, my go-to breakfast was bagels with cream cheese, a gluten bomb, so it was no longer an option. I had to completely rethink my approach to food. I started checking food labels on the back and trying food swaps that didn’t taste like cardboard. But I changed the lens through which I viewed this situation. Instead of grieving all the foods I had lost, I started to think about all the new foods I get to try.
Now, eating gluten-free fits into my everyday routine naturally. It's as normal as brushing my teeth before bed. If you're wondering whether going gluten-free is the right path for you or are just in the mood for an appetizing snack without the guilt, this is exactly the place you should be.
My Gluten- Free Experience
I was completely oblivious to how much gluten is used in certain foods. It was present in almost everything, from sauces, breads, and chocolates to beer. At the beginning of my gluten-free journey, some of the things I struggled with were:
1.Finding foods that were gluten-free and easy on the taste buds
2.Eating gluten-free in social situations when dining out
3.Managing cravings
After I battled through this initial phase
I was able to explore some equally yummy and nutritious food swaps, like ragi chips, almond flour and chickpea pasta. These foods helped me with better digestion and made me feel light.
If you are considering ditching gluten. Here are some things that helped me.
-When grocery shopping, make sure to check food labels (gluten is present in almost everything today).
-Replace wheat flour with almond flour, oat flour, or buckwheat.
-Make sure your diet is filled with gluten-free options like fruits, veggies, fiber, and protein.
-When choosing to dine out, plan your meals. Many restaurants now offer gluten-free options.
Now Finally To The Recipe,
My Favourite Gluten Free Recipe: Cinnamon Balls
This gluten-free dessert recipe is quick, scrumptious, and easy to follow, with just 100 calories per serving.

Ingredients:
1.2 egg whites
2. 225g ground almonds
3. 1½ tsp ground cinnamon
4.½ tsp vanilla bean paste
5. icing sugar (used for dusting)
Method:
1. Heat the oven to 160°C and line a large baking sheet with baking parchment. Whisk the egg whites to stiff peaks in a medium bowl. Using a spatula, mix in all the remaining ingredients, excluding the icing sugar and a pinch of salt, until fully combined.
2.Roll the mixture into miniature balls using dampened hands so the mixture won’t stick. Arrange them on the baking sheet, leaving space between each one.
3.Bake for approximately 20–30 minutes or until the balls start to brown slightly. Keep checking on them, and be sure to check halfway through baking. Dust with icing sugar while still warm, then leave to cool before serving.
Keep in an airtight container for up to a week.
Giving up gluten has been a transformational journey for me. It wasn’t always smooth sailing, but I wouldn’t go back for anything. If you're thinking about going gluten-free, definitely give it a shot. Be patient and gentle with yourself throughout the process, and keep experimenting with different foods until you find what works best for you!

Instructions: In a blender, combine the Greek yogurt, fresh strawberries, honey, vanilla extract, and a pinch of salt. Blend until smooth and the mixture turns a pretty pink color. Pour the yogurt mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold. Freeze for at least 4-6 hours or until the popsicles are completely set. To remove the popsicles from the molds, run them briefly under warm water to loosen. Serve these delightful pink yogurt popsicles on a hot day and enjoy!

Instructions: Warm the oven up to 175F 350C. You can line a muffin tin with cupcake liners. Peanut flour, coconut flour, cocoa powder, baking soda, and salt should all be mixed together in a large bowl. Add the eggs, melted coconut oil, maple syrup, and vanilla extract to a different bowl and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together until everything is well mixed. You can add chocolate chips if you want to. Fill each muffin cup about three quarters of the way to the top with batter. Put it in the oven and bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. After baking, let the cupcakes cool in the pan for 5 minutes before moving them to a wire rack to cool completely.
