First Take Points: 5 - full disclosure: i love fusilli and i am incredibly biased in its favor. it doesn't even MATTER what i ate it with (but for the record spicy red sauce is the best).
Remix Bonus Points: 5 - you saw the note above about bias??? i will eat these wiggly twisty slides in ANYTHING.
Amusement Points: 5 - these dudes are the Tiggers of pasta - boucy trouncy flouncy pouncey fun fun fun fun fun! they look like a party favor! when they are cooked, they wobble around like a bobblehead! they have SILLY in the name!
Annoyance Deductions: .01 - absolutely nothing wrong with this noodle. i mean, you have to shake in the collander or spoon to dispel some of the pasta water. that's it.

Creamy Porcini Pasta (Vegetarian)

Even on a day where one haven't gone to the market and don't wish to venture out in the cold rain, one can indulge into a heart-warming mushroom pasta dish, with a few larder staples! Like this delicious Creamy Porcini Pasta! Happy Tuesday!
Ingredients (serves 1):
1/4 cup dried porcini mushrooms
1 litre/4 cups water
1 teaspoon coarse sea salt
1 1/2 cup short pasta like fusilli or penne rigate
1 tablespoon Truffle Olive Oil
1/2 tablespoon olive oil
5 large leaves Garden Sage + 2 smaller ones
1/3 cup crème fraîche or sour cream
1/2 teaspoon freshly cracked black pepper
1 tablespoon demerara sugar
Combine porcini mushrooms and water in a small pot, and bring to the boil over medium-high heat.
Once boiling, stir in coarse sea salt.
Then, stir in fusilli and cook, according to package's directions, generally 9 minutes until al dente.
Once cooked, drain pasta, keeping half a cup of the mushroom cooking water.
Return the pot over medium-high heat, and heat Truffle Olive Oil with olive oil.
Finely chop Garden Sage, and stir into the pot. Fry, 1 minute, and add drained fusilli and mushrooms, stirring into the oil and herbs, to coat.
Stir in crème fraîche, and season with black pepper.
Gradually stir in reserved mushroom cooking water, until the sauce thickens slightly and beautifully coats the pasta.
Stir in demerara sugar until dissolved.
Enjoy Creamy Porcini Pasta hot, garnished with Sage leaves, and a glass of chilled dry white wine, like a Marlborough Sauvignon Blanc.
