Due to a chain of circumstances I won't go into here, I found myself with a surplus of fresh, ripe tomatoes, so I decided to make an emergency batch of marinara sauce:

Smoked Chicken Fettucine with Sun-dried Tomatoes
Source: California Wine Country Cooking Secrets (1993)
Preparation Time: 25 Minutes, Serves 4
1/4 lb. butter, unsalted
5 garlic, cloves, minced
1 1⁄2 cups sun-dried tomato halves
1/2 lb. smoked chicken, diced large
2 cups Niçoise olives, pitted
1 cup white wine
1 cup chicken stock
1 1⁄2 cups cream
Salt and pepper to taste
1 lb. fresh fettucine
Heat butter in skillet and add garlic, tomatoes, smoked chicken and olives. Stir about 2 minutes and add wine, stirring constantly. Reduce sauce by half and add chicken stock, bringing the mixture to a boil. Reduce by half and add cream, bringing sauce to a boil. When sauce has thickened, remove from heat and season with salt and fresh cracked black pepper.
Cook fresh pasta in boiling water 2 to 3 minutes. Drain pasta toss with sauce. Serve on a warm plate.
Cooking tip: This dish complements fresh basil and garlic fettucine.

Chicken Carbonara
Chef’s Note: Thirty, maybe forty minutes total?

Ingredients
12 oz fettuccine
4 slices bacon
3 garlic cloves, minced
1 boneless skinless chicken breasts, cut into strips
Kosher salt
4 large eggs, beaten
3/4 cup shredded Parmesan
3 tbsp dried parsley
1 1/2 tsp onion powder
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp dried thyme
Instructions
0. Cut your chicken breast into strips (across)
1. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to the pot.
2. Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper-towel lined plate.
3. Add chicken to the skillet and season with salt. Cook, flipping halfway through, until no longer pink, about 10 minutes.
4. Add minced garlic and cook until fragrant, about 1 minute. Turn heat to low.
5. Crush the bacon into pieces. Return bacon to the skillet. Add cooked pasta and toss until combined.
6. In a small mixing bowl, beat the eggs
7. To the eggs, add Parmesan, parsley, onion powder, oregano, basil, thyme, and a dash of salt. Stir until combined
8. Pour egg mixture over pasta and toss until coated. Add a couple tablespoons of the pasta water until creamy.
Add more pasta water by the tablespoonful as necessary.
9. Serve warm
