Food prep Sunday!
If I didn't cook for the week on Sundays, I'd be spending tons of cash on lunch and dinners during the week. So I dedicate my Sundays to cooking. Thank good I love to cook! Luckily I'm not the type of person that can't eat the same thing three times in a row. Eating without meat or dairy also really helps the food last longer in the fridge. If I'm ever away on the weekend, you can bet I'm eating like crap the whole next week.
This weeks lineup:
Roasted red pepper and tomato bisque, made with creamy coconut milk
Banana walnut oatmeal muffins, refined sugar and gluten free
Acorn squash alfredo
As usual everything is plant based, vegan, and refined sugar free.

Every once and a while I like doing a day of smoothies, I always feel better the next day, and it's super easy to do. . Gives your body a lot of easy to digest nutrients, you don't miss out on fluids (although keep drinking your water). And it's easy to weigh out and track (if you're doing that.) . Because it is Sunday.... We love reminding you how "convenient " it actually is to cook at home and for the week. If you own a good processor...it takes a whole 3minutes to add in onion, peppers, mushrooms and asparagus. Chop chop chop and throw in a bowl. Adding whisked eggs, choice oil (like extra virgin olive) and flavour (spices a day such) Bake in a non-stick muffin tray and let cool. These can be frozen&reheated. Ate by themselves, mixed into rice/quinoa dishes, chopped up into lettuce cups, wrapped in a tortilla, made into a sandwich, paired with sweet potato hash, topped with salsa or guacamole.... ...the list is endless.
