Breakfast this morning is 4 pieces of malted granary toast with…. . . 1. Marmite and Banana 2. @hodmedods Umami Paste and Banana 3. Tahini, Sunflower Seeds and Apple 4. Raspberry Jam, Chia Seeds and Apple. . . It’s shopping day and the last thing I want to do is go there hungry. I have to admit having the pantry where I can see it is making a huge difference to what I can make. Things that need using because I forgot they were there. . . Oh and today I have not used any butter or margarine or equivalent type spread. I know for me in the past it was a texture thing which is why I did it. Because let’s be honest who doesn’t like lashings of butter on fresh baked bread or toast but I use too much. . . I know that and while I sit here typing this and munch on this toast… honestly I think it would spoil it. Not only texture wise but taste wise. . . So toast and butter is either a thing of the past or something I will save for when I make a fresh loaf of bread. Here's a great breakfast for easy Sunday mornings! Try it next weekend and let me know what you think! Buckwheat, almond & cacao pancakes! 🥞 Mix 1 cup buckwheat flour and 2 tpsp ground almonds with a pinch of baking powder, 1tsp cacao, 1/2 tsp maca and a dash of cinnamon ✨💜 mix in any plant milk (today I used rice milk but Almond would be delicious!) mix until the mixture is thick but will run off a spoon (approx 2 3rds of a cup) Heat a large non-sick pan and heat pancakes until bubbles have formed on the top sides! Flip and cook on the second side! For toppings I used a chia and Berry mix that I previously made. Plant based Weight Loss Foods | Consider The Versatile Vegan Favorite Tofu
In this video, you'll learn how tofu works in a plant-based diet to provide a low calorie protein alternative to meat that does double duty in your battle to lose weight.

When it comes to tofu, you just can’t say enough about this health food from Asia. Also called soybean curd, it’s basically tasteless, so any spice or flavoring you add blends with it nicely.  
In a 2011 study by the university of Colorado, Denver, it was found that eating protein-rich food, like tofu, instead of those high in carbs or fat can make you feel fuller longer and may make it easier for you to stick to a reduced-calorie diet.
A  two-and one half inch square of tofu has 86 calories and nine grams of protein. Experts suggest an intake of this plant-based food of about 40 grams per day.
Tofu contains calcium and iron, almost no sodium and not a bit of saturated fat. It makes your metabolism run on high which is great for losing weight; and it even lowers cholesterol.
Add to that, the fact that tofu has more fiber, calcium, iron, magnesium, zinc and folate than chicken and contains fewer calories ounce for ounce. Plus, this meat alternative is yet another plant-based food, along with berries and kale, that provides antioxidants to combat free radicals and prevent premature aging.
With different varieties of tofu available, the firmer tofus are good for stir-frying or adding to soups and sauces, while the softer ones are good for mashing, chopping and adding to salads. Try tofu slices lightly sautéed and drizzled with a bit of olive oil for a lovely tofu sandwich. Also, consider adding it to smoothies in lieu of the more processed protein powders.
One more thing. You can improve the flavor of this tasteless meat alternative by marinating it. Just be sure that marinades aren’t too high in oil and use coconut aminos instead of the traditional highly processed soy sauces which can contain wheat and sometimes, too much sodium.

Food prep Sunday!
If I didn't cook for the week on Sundays, I'd be spending tons of cash on lunch and dinners during the week. So I dedicate my Sundays to cooking. Thank good I love to cook! Luckily I'm not the type of person that can't eat the same thing three times in a row. Eating without meat or dairy also really helps the food last longer in the fridge. If I'm ever away on the weekend, you can bet I'm eating like crap the whole next week.
This weeks lineup:
Roasted red pepper and tomato bisque, made with creamy coconut milk
Banana walnut oatmeal muffins, refined sugar and gluten free
Acorn squash alfredo
As usual everything is plant based, vegan, and refined sugar free.

Bloo’s Plant Based Journey - Week 2 Day 2 … I’ve been incredibly busy today and yesterday and had issues with time blindness especially today. I even forgot my own live stream on YouTube but we got there eventually. . . As you can imagine taking pictures of what I’ve been eating hasn’t been high on my list of priorities honestly it’s been a lot of chilli and a lot of grabbing fruit and veg and just munching. At least when I actually remember to eat. . . My energy levels have far acceded my abilities though especially with a broken foot but I’m getting through stuff as I can … bit by bit… with resting In between. . . You know what though, life always comes first. Learning to work around my abilities is an ever ongoing process as I keep seeing more and more to do and want to do more and more especially as it is becoming lighter for longer. . . 2 days of organising my kitchen it’s been over this week and another one to go tomorrow and hopefully I will be able to get back in there and go wild!!! I really want to build myself a bench/island for in there… there’s just no work space and it’s frustrating!!!
