1st day of Ramadan Ifthar I am trying my best to eat healthy food this Ramadan with a balance of everything on my plate - protein, veggies and carbs. Alhamdulillah it was a delicious meal! I made roasted red pepper chicken kofta curry. This time I made it a little different by adding cashew & poppy seed paste (which induces sleep) to the tomato and onion based curry masala and no yogurt. It did help me sleep well. The recipe is on my blog and the link is in my bio. I made the grilled Zucchini following Chef Thomas Keller’s recipe @chefthomaskeller inspired by @kesarkitchen. The zucchini was so soft, juicy and creamy and so good that it did not need any dressing or vinaigrette to go with it. For the salad I julienned the white Indian radish and cucumber, tossed in some chopped ginger and sprinkled some lemon juice, salt, pepper, red chilli and cumin powders. You could add some chat masala if you like. BY HAND

I’m a firm believer that your hands are your best kitchen tool. Touching your food brings you closer to the things you’re eating. You can better familiarize yourself with the textures, tastes, smells of a dish when you use your hands to prepare it. Pulling gnocchi dough ropes by hand, tossing a salad in a homemade vinaigrette, peeling an orange. You activate your sensory connection through touch. I’ve got plenty of other tools I love to use in the kitchen, that cast iron’s not going anywhere, but I feel more attuned to a meal when I’ve been able to use my hands.

Methodically chopping vegetables is meditative. Crushing and peeling garlic gives a fragrant whiff of aromatics. Cooking is a sensory experience and to use touch when possible creates a mindfulness in the kitchen. I’m more likely to think about where my ingredients are coming from, how they’re prepared, and how to store them when I can physically experience them.

So excited for our pasta making class this evening, we’ll be getting hands on with some homemade winter squash dough. Recipe to come!

Here I am on day 3 of my Whole30 journey. It is a 30 day clean-eating program/elimination diet that doesn't allow sugar, dairy, grains, legumes or any baked paleo goods. So this pretty looking nice-cream with nut butter is off limits because it is still a treat. And why am I doing this to myself, you might ask? Because I've realized, even though I try to eat clean, with all the holiday baking and snacking I have developed a habit of eating certain things in excess. Primarily chocolate. Doesn't matter that it is dark chocolate, it's still a sugar craving that I have been too lazy to fight off. So, like many people this January, I've jumped right into this program to break my world record of going the longest ever in my life without touching chocolate.
