Prepping apricots to be dried. Loved the image of them all piled out the counter.

How do I prep my apricots for drying?

- split and depit

-blanch in boiling water for about 1-2 minutes

-dunk in icewater (or cold water, as I often do not have ice) to stop cooking process

-dunk in bath with a bit of acid (i use either white vinegar or powdered ascorbic/ citric acid) and a bit of sugar

-pop the center out so they lay flat

- lay skin side down on the tray, dehydrate

Sladký ježek (Sweet Hedgehog)

I made this Czech decoration this afternoon (Holy Innocents Day/Childermas/svátku Mláďátek) to honor children who have suffered throughout the world and will place it upon the altar tonight.

A sweet that Czech children used to receive from “Baby Jesus”. It was an apple in which various types of dried fruit, nuts, and even puffed peas were stuck on twigs.

Related to the polaz (more here) an old Czech decoration hung from the ceiling that has the shape of a ball and is skewered with natural objects. It hangs from the solstice, i.e. from December 21st. It represents the sun and is supposed to symbolize abundance and health. It is a reminder of an old pagan holiday. It comes from the word "polazit" or to walk around caroling.
