Thought this one would be a breeze, but it was a bit annoying. Took longer than expected for a raw veggie platter with dip.
Heating heavy cream with garlic, and anchovies in oil and butter seperately. Simply combine them once the anchovies dissolve in the oil and the cream is reduced by half, then blend...
What. The fuck.
This looks like shit! Right beside the recipe in his book, Tony has this photo.
This leads me to believe that the dip should be creamy and a little loose. Not seperated, beige and hidden under a ton of oil!! (also, it was so, SO salty)
So I heated up some more cream until steaming, and slowly added it to the gross looking dip while blending.
Much better! The salt level was perfect and it was no longer seperated, so I was happy. Served it with the veg and baguette slices I prepped. He said to use breakfast radishes, but I haven't seen them in stores in ages.
Then later in the night, I get curious and google "bàgna cauda"...
And this is what I fucking see! It was totally supposed to look gross and separated. I realized his photo must have been just the garlic cream spilled on the floor and not the dip in its finished state.
For fucks sake.
After scrolling for a bit on google, I did find a few pictures of bàgna cauda that were creamy, but they were few and far between. So, I still think this still counts, but I definitely took some liberties.

Taste is a 3.5 out of 5. Pretty good for a dip.
Difficulty is a 2 out of 5. But I made it a 3 with my confusion, and liberties.
Time was 30-45 minutes. Great for catering parties, like Tony suggests.
I think even if I did it again, I would still add the extra cream. It's more visually appealing, and the salt level is less insane. The oily beige version does intrigue me a bit though...

Boiled Egg and Crudité Salad (Vegetarian)
This simple, beautifully colourful Boiled Egg and Crudité Salad makes a light, nutritious and easy weekday lunch! Simple as, and also very good!
Ingredients (serves 1):
1/2 teaspoon coarse sea salt
1 egg
1 large carrot
half a large heritage tomato, rinsed
half a small gem lettuce, rinsed and spin-dried
2 tablespoons v
Bring water to the boil in a small saucepan over medium-high heat. Once boiling, stir in coarse sea salt until dissolved. Then, gently add the egg. Boil for 7 minutes and 30 seconds.
Meanwhile, thoroughly scrub and rinse carrot under cold water. Using the coarse side of a box grater, grate carrot and place grated carrot onto serving plate.
Cut heritage tomato into slices, and roughly chop gem lettuce. Add both to the plate as well. Generously drizzle with v.
Once the egg is boiled, drain the water and cool slightly under cold water before peeling it. Cut boiled egg in half, and arrange egg halves onto the crudités.
Enjoy Boiled Egg and Crudité Salad immediately, with slices of toasted and buttered.

Spinach with anchovies and olive oil (prose, cooking)
A French dish for making a reservation (Crudité). Boil the spinach, rinse in water for about 10 minutes, and cut into strips. Mix 15cc of olive oil, 1.5 anchovies (minced: 5g), 2g of salt, a moderate amount of grated garlic, and a little pepper. Toss the spinach in this sauce. There are a few anchovies, but they create a rich flavor.

フランスの取り置き料理(クリュディテ)。ほうれん草は茹で、水で10分ほど晒して切りそろえる。オリーブオイル15cc、アンチョビー1.5枚(みじん切り:5g)、塩2g、おろしにんにく適量、胡椒少々を混ぜ合わせる。このソースにほうれん草を和える。アンチョビーは少なめだが、重厚な味を演出する。

Another piece of diet culture to unlearn: that eating an "unhealthy" food negates the benefits of other nutritious things you've eaten. Put bacon and ranch on your salad? Congratulations, you still got a lot of fiber, that's great for your gut biome, and the veggies still contain nutrients. Finished up your dinner with a dessert? You still ate the dinner. You don't have to eat "pure" to take in nutrition from your meals.
