RANDOM SILM CHARACTERS FAVE SOUPS (because it's finally getting cold where I live)
Fëanor: tomato soup. No grilled cheese. Nerdanel (and the rest of his family) thinks this is terrifying. Solid color (and red), he likes the consistency.
Nerdanel: beefy stew. A very hearty soup for someone who is probably very strong. Gotta get that protein for chiseling out some marble 💪💪
Maedhros: Zuppa Toscana. Flavorful, a lil spicy, and has some potatoes in it. Perfect.
Maglor: chicken noodle with tri color rotini. My dad likes the tri color rotini, and Maglor gives dad vibes
Celegorm: no salt added bone broth. Do NOT EVER eat any soup he offers.
Curufin: French onion. Bougie guy. Likes to take the bread off the top and eat it separate. Celebrimbor thinks he's crazy.
Caranthir: miso soup. Add spicy soup dumplings. Was begrudgingly taught how to make soup dumplings in his youth by Finwe, forgot, and was then re-taught by Haleth.
Amrod: chili. Warm and filling, likes it with tortilla chips, cheese, sour cream, the whole shebang. He does not usually like beans, but will tolerate them for chili.
Amras: corn chowder; nice and creamy, preferably with some thick toast to dip it in. He likes it thin, not thickened with a flour/corn starch slurry, so it's kinda weird.
Celebrimbor: potato soup. All the way. He does not skimp on the garnishes of bacon and cheese: to him, they are not garnishes, but added, necessary ingredients (me too, bro).
I had potato soup for dinner because by brother did not want the zuppa toscana that I wanted to make.

There has been so much going on in my personal life that’s been affecting my mental health, and unfortunately I haven’t been able to focus much. I’ll explain in another post when I get the chance. Cheesy potato casserole (I do mine with a rosemary rarebit-based cheese sauce) + whatever meat or veg is lying around.
Chicken (or veg) enchilada casserole - made with corn tortillas.
Any kind of noodle casserole (chicken, mushroom, tuna).
Thai drunken noodles. Pretty much any basic Thai curry (red, green, yellow, panang).
A full roast chicken + stuffing, gravy, and potatoes.
This fun one-pot Spanish dish I picked up when I was living there. It's chicken, chorizo (or whatever spicy sausage), mushrooms, gravy and white wine (although I can do a cream and stock version instead)
Shepards pie (usually mixed meat, but I can do a veg version)
Lamb stew (and, frankly, most stews, they are super easy).
Lamb vindaloo
Whatever salad is needed to go with any of the above.
I'm also pretty good at crepes, omelets, Bismark pancakes, and these "egg in cups" that are made in muffin tins, so I can do a breakfast for 10-12 pretty fast too.
Oh and I can pretty much always bake: gf orange chocolate cake, banana bread, and fruit crisps.
When I am in any one place for any length of time I tend to become the party house host and I love feeding people. So I've developed a back catalogue of quick reference feeds a lot foods.
I've also lived off the land and weird stuff like that, so I'm basically a "make it work" kinda cook. I'm one of those who can walk into a kitchen, assess the state of the canned goods, carbs, condiments, fresh & frozen food, and the pans/heating elements and come up with something. More art than science.

R was out of town late Monday to Friday night, and I had his parents over on Friday to welcome him home, but he wasn't back til after dinner. The older kids have been getting better at eating more and more foods, as may be exemplified in my meals. But for the 3 that are 2 and under, they are still eating things like plain ground turkey, cabbage, and buttered noodles instead of Paprikash. M does always take bites of my food, though, so he's clearly getting ready to eat the same as me. I often see myself comparing M and V since they're so close, but every week still at their ages make so much of a difference. So even though they're less than 10 months apart they, that means V will be 10 months behind. Blabbing over, let's get to last week's menu.

On that note I made food tonight, so here's a list of some of my favorite college food staples
before you continue, know that this is a long list:
-pasta with sauce
-caccio e Pepe but I used parmagean and garlic powder with milk and flour too
-buiscuits and gravy (the biscuits are from a can the gravy is homemade)
-ramen noodles with egg and maybe some green onionor seaweed and hot dog or ham
-ramen noodles with sirracha mayo and cheese sauce and maybe egg and hot dog
-eggs in a basket
-tamago gohan (japanese styled egg over just cooked rice, then you stir them together and the really hot rice cooks the egg for the most part while you stir)
-peanut butter and jelly (enough said)
-discontinued homemade dunkin donuts sandwich with pesto, cheese and fire roasted tomatoes (I owe this sandwich my life)
-guacamole and tortilla chips (this bad boy keeps you full forever)
-Onigiri with salmon and spicy mayo (a lot of work but only needs three ingredients if you don't count salt)
-pancakes (yay food!)
-tim hortans biscuit sandwich (sausage, egg, american cheese, ketchup)
-ham and cheese sandwich
-pan con frijoles (refried black bean paste and eat with sour cream or queso fresco, or grated parmesean if your desperate on top with whatever bread you have. It's also amazing on sandwiches or as a toast topping. preferribly cook with onions and garlic)
-hotdog and egg pizza (eggs mixed before you put them in the pan. cut hotdogs into small circles and place like you're putting pepperoni on a pizza. zigzag ketchup on top and eat with a fork and knife. add toasted tortilla that was cut into triangles for extra crunch.)
-grilled cheese and tomato soup
-miso soup with green onion and tofu and seaweed
-steamed pork buns
-Crisp Sandwich (sandwich made with butter and chips. Preferably barbeque or Salt and vinegar. It kept me alive for a week so you can do it, but not recomended to live on. Tastier than you think if the bread is sturdy enough. Target bread is not but dollar tree bread suprisingly is think enough and tastier too)
-japanese curry with potatoes, carrots, and either beef cubes or breaded pork and rice
-katsudon
-butter chicken
-chicken tika masala
-mashed potato patty fried in a pan with a fried egg on top. my mom's lazy dinner night specialty
-salmon with pesto butter on top with mashed potatoes ( I miss being able to eat costco salmon)
-alfredo sause and pasta with beef
-beef stroganoff but I made it with alfredo sauce, barbeque sauce, and worschechire sauce instead and something else that I can't remember but god it was good and filling.
for sweet tooth moment:
-pancakes with m&ms to make you feel special
-peanut butter and nutella (or chocolate frosting if you're desperate) sandwich
-toast with nutella
-chocolate frosting sandwich
-australian fairy bread for fun (you can use vanilla frosting if you can, it's okay, it doesn't have to be the butter if you're desperate)
-frosting
-corn bread
pancakes with syrup (it works as a treat if it's not breakfast
-geletan
-kids sugar cereal
-steamed red bean buns
-cookies (preferrably chewy bakery styled ones but the hard dollar tree ones will do)
-cheap off brand ice cream
Drinks:
-any drink concentrate you put into water (always iced)
-matcha latte
-coffee with milk and sugar
-just straight up milk my beloved
-orange juice
-berry smoothie with greek yogurt and sugar (tim hortans style my beloved)

Well, as we approach the end of season 2, things are getting more intense. Heating up, you might say.
Anyway, this clumsy segue brings us to my latest Taco Dragon recipe post:
Fire Chicken Nachos!

Now some of you might not be quite familiar with buldak, or Korean fire chicken. You might, however, recognize a brand of instant noodles based on the dish:
I think we all remember that viral trend of the "Korean Fire Noodle Challenge" or whatever. Well, it's based on a dish that's essentially chicken (usually thighs) coated in a spicy sweet paste, then grilled over charcoal and often topped with cheese. So I figured that that would make it the perfect candidate for nachos!
Anyway, let's get started with the base of any good dish of nachos: the chips!
Of course, you could easily just buy a bag of your favorite brand of chips and call it good, but I thought I'd make it a bit more special and fry up my own! Besides, I had a lot of extra corn tortillas to use up, so it worked out.
Speaking of which, I stacked some up, cut them into quarters, fried them in oil, then tossed them in a bowl while sprinkling on salt
These rule, actually, and I highly recommend frying up your own tortilla chips if you have extra tortillas lying around. It's super easy and quick, and they'll be better than most store bought offerings.
Anyway, onto the buldak!
I just followed Maangchi's recipe for doing it on the stovetop. I did make a few changes from it, though:
Chicken thighs instead of breasts
Corn syrup instead of rice syrup (that stuff's expensive, and your homegirl had to stick to a bit of a budget this time around)
Pepper jack cheese instead of mozzarella (I felt it was more thematically appropriate)
No rice cakes, since we are, of course, using tortilla chips!
Alright, let's put together the paste:
½ c gochugaru
3 tbsp gochujang
1 tbsp soy sauce
2 tbsp vegetable oil
½ tsp black pepper
⅓ c corn syrup
~6 minced garlic cloves (I used 1 tbsp from a jar)
2 tsp minced/ground ginger
White/light parts of a bunch of green onions
Mix it all together well, then add the chicken
Now doesn't that look fiery!
Now we take a skillet, put it on medium high heat, add the chicken, rinse out the bowl with ~¼ c water, cover, and allow to cook for 10 minutes. After that, reduce the heat to low, stir around the chicken, put the cover back on, and cook for about 10 more minutes or until fully cooked through. This is where using chicken thighs works to our advantage, since thighs tend to be more forgiving than breasts and not dry out.
I sampled a bit of the chicken in this state, and while not as spicy as reputation had led me to believe, nevertheless packed a decent kick! The flavor also has that interesting funk from the chili flakes and chili paste, and was definitely packed with umami.
Now to assemble the nachos! Take a heat safe dish (in my case, a cast iron skillet), layer the bottom with chips, spoon on the buldak, top with a generous amount of cheese, then toss under the broiler until melted, bubbling, and with a nice amount of color. Garnish with green onions and a generous dollop of sour cream.
I must say, everything here worked together beautifully! Pepper jack is always a good choice for melty cheese, and sour cream and fire chicken play extremely well together, with the cool creaminess contrasting pleasantly with the funky heat. If I were to make this again, I think I might make it hotter and sweeter, maybe throw in a couple of taco friendly spices to make things interesting.
