My hot chocolate recipe! It's like the only sweet thing I can make since no baking is involved *laughs*

Ingredients:
4 cups of whatever milk you want (nice, right?)
1/4 cup of sugar (I recommend cane sugar if you've got it)
1 whole cinnamon stick
1/2 whole vanilla bean, scraped OR 2 teaspoons vanilla extract
1/4 cup cocoa powder of your choice (Hershey's or Ghirardelli would be my recommendation)
3 & 1/2 ounces semi-sweet chocolate of your choice (NOTE: if you want to use milk chocolate instead of semi-sweet, then just ignore the sugar part of the ingredients)
pinch of salt (kosher salt if you've got it)
whatever you wanna use to top your hot chocolate
Instructions:
Use a sharp knife to chop the chocolate into small pieces, the smaller the better but like it doesn't have to be super fine, ya know? just get them like chocolate chip size or smaller
Add the milk, powder, chocolate, sugar, vanilla, cinnamon stick, and salt to a medium saucepan that's on low heat
Stir regularly! That's an important tip. Use a whisk if you've got one or a spoon if you don't.
Warm and stir until the chocolate has completely melted.
Remove the cinnamon stick from the saucepan and the vanilla bean (if you didn't use extract) and just throw those away.
Divide it up into mugs, add your toppings, and enjoy!

actually, because of that secret secret i just read, iā€™m going to post this thought before i forget about it, actually ā€” for the last few days iā€™ve been turning over the idea of dan heng x reader where the reader, a chef or at least competent cook, joins the express and works as chef to save everybody from himekoā€™sā€¦ creative dinner plans (inspired by the recent event)ā€¦ and thereā€™s something about the effortless, easy confidence with which you navigate the kitchen which dan heng admires. itā€™s an art form of its own, really.
(plus, as i mentioned, everyone loves you because youā€™re there to step in and lend some guidance when himeko decides itā€™s her turn to cookā€¦..)
#idk the domestic vibe is just on point#i WAS thinking that i have to give reader some trauma because likeā€¦ come on. be serious here. we canā€™t have them be UNtraumatised#butā€¦ for the first time everā€¦ i think i might not give them intense and horrific trauma?#maybe itā€™s the generous christmas spirit possessing me or something#but i feel like the reader being genuinelyā€¦ fine is something the surrounding cast and especially dan heng could appreciate#because thereā€™s no need to dwell in emotional baggage around them and itā€™s just very comforting#the reader does have some emotional struggles here of course ā€” maybe something to do with their family? not a great relationship there?#thereā€™s got to be a reason why they left their home to join the express#but i get the idea that theyā€™re the kind of person who doesnā€™t dwell on hardship too much where they experience it#which doesnā€™t mean theyā€™re 100% okay but they are pretty content with life most of the time#and again this easy-going-ness really helps dan heng wind down around them#plus cooking!#before reader joined i think the express crew had a cooking rota (now they do most of the cooking but sometimes someone else takes the helm#(stelle not included because she would unironically place a bin bag on the table and tell everyone to ā€˜eat upā€™)#(in fact this did happen once and is why she is no longer on the rota)#also! reader collecting recipes from every world they visit (especially from planets or people who are dwindling in number/ at risk)!#as a way of not only learning but also preserving the memories and cultural identities of different groups#reader asking dan heng to show them how to use & put these recipes in the data bank!#dan heng initially asking them how they made this one dishā€¦ and this spirals into routinely midnight cooking sessions#reader falling asleep in the archive/ dhā€™s room while organising their recipes after one such midnight cooking session#etc etc#i need to sleep now goodnight#r.ambling in the tags#dan heng x reader

RED VELVET CRINKLE COOKIES

Easy classic red velvet crinkle cookies recipe, homemade with simple ingredients from scratch. Crispy on the outside, soft on the inside with a beautiful crackled powdered sugar topping.
RED VELVET CRINKLE COOKIES
Prep time: 10 minutes Cook Time: 14 minutes Chill Time: 2 hours
Makes approximately 3 dozen cookies
Ingredients
3/4Ā cupĀ ButterĀ Unsalted, Room temperature
1ā…“Ā cupsĀ Granulated sugar
3Ā EggsĀ Large
1Ā tbspĀ Whole milk
2Ā tspĀ Lemon juiceĀ Or vinegar
2Ā tspĀ Vanilla extract
Red gel coloring
3Ā cupsĀ All-purpose flour
1/4Ā cupĀ Cocoa powder
2Ā tspĀ Baking powder
1/4Ā tspĀ Baking soda
1Ā cupĀ Granulated sugar, Ā For rolling cookie dough balls
1Ā cupĀ Powdered sugar,Ā For rolling cookie dough balls
Instructions
In aĀ mixing bowl, cream together butter and granulated sugar until mixture is light and fluffy.
Add eggs, milk, lemon juice or vinegar,and red gel coloring and mix until smooth.
In a separate mixing bowl,Ā whiskĀ together the flour,Ā cocoa powder, baking powder and baking soda.
Dump the dry mixture into the wet mixture and mix until just combined. Do not over-mix!
Chill the dough for 2 hours or overnight.
Scoop out small portions of the dough and make small balls. Roll them in granulated sugar first and then, roll in powdered sugar. Place them on a baking tray, lined with parchment paper.
Bake at 350 degrees for 10-12 minutes or until the cookies are firm around the edges. Enjoy!
When the cookies cool down completely, store in a container at room temperature for up to 3 days.
VARIATIONS FOR RED VELVET CRINKLES
Add white chocolate chipsā€“ They are unbelievably delicious! Stir in 3/4 ā€“ 1 cups white chocolate chips in the batter.
Add a cream cheese fillingā€“ Use theĀ best cream cheese frostingĀ ever. These make delicious cookie sandwiches.
Add mini marshmallowsā€“ For more color and texture.
Add nutsā€“ Such as pistachios, macadamia, or walnuts for a nice crunch.
Add a drizzle on topā€“ Such as white chocolate. Note that this will make the powdered sugar coating disappear.
Dip in white chocolate-Ā Dipping them halfway in melted white chocolate would look so pretty. You could also sprinkle crushed candy canes on the white chocolate for an even more festive version.
TIPS AND TECHNIQUES FOR RED VELVET CRACKLE COOKIES
The powdered sugar on my crinkle cookie disappeared. How to prevent this?
Ā The powdered sugar has a tendency to get absorbed in the cookies after a few hours. One way to preventĀ this is by rolling the cookie dough balls in granulated sugar and then rolling them in powdered sugar and then baking them.
You will need to add a lot of red food coloring to give these cookies their bright color
I like to use gel coloring since they are more concentrated but you can use liquid food coloring too. You will have to add 4-5 tsp of liquid food coloring though! If you donā€™t use enough food coloring, your cookies will have a weird brown color.
You must chill this cookie dough!ā€“ That makes the dough firm and easier to handle. It also prevents cookies from spreading while baking and the cookies will hold their round puffy shape.
Do not replace butter with oil!ā€“ The consistency of the dough will change and so will the flavor.
Use room temperature ingredientsā€“ Because this results in the smoothest incorporation of ingredients.
Use unsalted butterā€“ Because this prevents the cookies from becoming too salty
Do not over-mix the doughā€“ Because it can result in flat and dense cookies.
How do I know the cookies are done?Ā They are done when the cookies are firm around the edges.
WHY DONā€™T MY COOKIES HAVE CRINKLES AND CRACKS?
There can be quite a few reasons for this. If the cookies are not baked at a high enough temperature the tops will not dry out and crack. If the dough is not chilled, it may not crack either. In addition, the leavening agent (baking powder and soda) may be expired resulting in cookies that donā€™t rise and crinkle. Lastly, coating the dough in granulated sugar helps to draw moisture out from the cookie to make the tops crack, so donā€™t skip this step.

I'm not saying my family panicked last year about having to do one meatless dish at the Christmas dinner table, I'm just saying we weren't able to make it, we were 400km away from the impact site, and we were still involved in a 3 hour video call on the subject of "all vegan ground meat is sold out; the veg(etari)ans will surely starve to death if they only have the starter, soup, dessert, cake and coffee with cookies".
This year, I'm very very casually asking a month in advance what they're feeding the plant based folks. Just because. No reason. I need weekend dinner inspo. I'm feeling festive. Yep. Totally that.
