hiii im going to be living w my aunt over the summer and therefore buying my own groceries. I am going to be busy w summer classes and working on the weekends but I do rlly want to try cooking at least once or twice a week. I can make an egg and pasta but that’s about it. What are some of your fave recipes that aren’t super complicated that I could start with if you have any? (I am open to a minor challenge but cooking can overwhelm me so I like a challenge but not too much of one lol). I am also vegetarian (not vegan) if that matters! If you don’t get to this that’s okay !!! I hope u are well 🩷🩷🩷
now it's been a little while for me since i've had to use this model due to moving back home w my family for a time but when buying groceries for one person i found it helpful to follow this sort of structure about once a week! when i do this it feels a lot easier to 'wing it' in the kitchen and mix and match my meal components. and to preface, this is what i find to be helpful and everyone is different and finds different things to work for them!!
1-3 protein sources - i like to center my meals around this because i've found it helps me feel the most nourished and full, i always think of it as things that can be the 'star' of your dishes. i eat meat so i usually do salmon, chicken thighs, and alternate pork + beef. but for u that could b things like tofu, eggs, beans/lentils, mushrooms maybe, vegetarian 'meat' fakes lol, peanut butter if u like any peanutty noodle dishes
3-4 veggies - i love to snack on veggies so i usually get snap peas, cucumbers, + bell pepper just for snacking, and then something like brussel sprouts for roasting as a side dish w a dinner, these can also be frozen
2-3 types of fruit - i am a smoothie enjoyer bigtime so i get a combo of frozen and fresh, almost always mango, and then whatever is seasonal that i can see myself being excited to eat throughout the week
2-3 grains - pastas, premade pizza crusts, bread, rice, etc!! these rly round out ur meals!! and imo they make it simpler to make a meal on the fly. i am a huge fan of microwave rice LOL
2-3 multipurpose dips/spreads/sauces/condiments/pantry items - now here is ur golden ticket for being able to reliably make well rounded and varied meals!!! slowly building up your collection over time is the most cost effective way imo. it's helpful to stock up your pantry w things like baking supplies (flours, sugars, leaveners), spices, shelf stable canned goods (canned tomatoes, beans, vinegars, oils, soy sauces, fish sauce, cartons of things like oak milk), and 'fridge pantry' items (parmesan, herbs, lemons for juice and zest, miso, gochujang, ketchup, mayo, hot sauce, jam, pickles, etc). you can use these to season your food as you cook!
2-3 snacks/frozens - any microwave meals or chips or desserts you might want!!
using this structure makes it easier to look at what you have and be like, i have xyz and they would go together well.
EX. i have rice, tofu, and bok choy, now i can cook the rice and pan fry the tofu and bok choy with my pantry ingredients (soy sauce, miso, sesame oil, chili oil) and create a filling meal!
some of my favorites that could be made vegetarian -
ground pork seared on the bottom of a dutch oven in patties (you could sub tofu or use a fake meat replacement), broken up into smaller chunks, eaten with linguine, sliced snap peas or celery, + a garlicky peanut butter sriracha sauce
pizza w a store bought crust!! super easy, done in like 10 minutes! i like to make mine in a cast iron following this protocol
i really love to dress up ramen w sliced veggies and eggs
i like to make pasta dishes and then form a sauce w parmesan cheese, butter, pasta water, lots of lemon zest and juice and sometimes chicken stock, then adding in peas and fresh herbs at the end

back in my apartment after winter break so i'm cooking again! this was dinner tonight. a couple slight modifications--chicken stock instead of white wine (did not feel like buying wine) and i finished with the juice and zest of one small lemon. probably should have used a little less since it came out very lemon forward but it's not unwelcome here--i also should have used more tomatoes (i think i only used half the amount called for? i don't know i only had a pint and i think it calls for two)
winter ordinarily calls for hearty soups and stews but i wanted to delude myself into thinking it was spring for a fleeting moment and i've also been eating like shit recently so something with a lot of vegetables was certainly necessary

Sun-Dried Tomato Pasta
Ingredients:
• 1 7-ounce jar julienned sun-dried tomatoes in olive oil
• 1 lb. boneless skinless chicken breasts
• 1 1/2 tsp. kosher salt, divided, plus more for pasta water
• 3/4 tsp. ground black pepper, divided
• 1/2 medium yellow onion, finely chopped
• 1 6-ounce can tomato paste
• 3 cloves garlic, chopped
• 1 tsp. lemon zest
• 1/4 tsp. red pepper flakes
• 1 1/2 c. chicken broth
• 1 lb. dry linguine
• 4 oz. cream cheese, cubed
• 15-ounce baby Spanish
• 1 c. grated parmesan, plus more to serve

Directions:
1. Bring a large pot of salted water to a boil. Drain the sun-dried tomatoes, reserving the oil.
2. Slice the chicken into ½-inch thick slices and season with ½ teaspoon of salt and ¼ teaspoon of pepper. In a large pot, heat 2 tablespoons of sun-dried tomato oil over medium-high heat. And the chicken and cook until lightly golden, 3 to 4 minutes. Remove to a plate.
3. In the same skillet, heat 2 tablespoons of sun-dried tomato oil over medium heat. Add the onion, remaining 1 teaspoon of salt and ½ teaspoon of pepper. Cook, stirring frequently, until soft and lightly golden, 3 to 5 minutes. Add the tomato paste, garlic, lemon zest, and red pepper flakes. Cook until fragrant, 1 minute. Whisk in the chicken broth and reduce heat to medium-low. Simmer and reduce the sauce by one third, about 10 minutes.
4. Meanwhile, cook the linguine in the large pot according to package instructions. Drain the pasta, reserving 1 ½ cups of pasta water.
5. Stir the cream cheese, sun-dried tomatoes, and the spinach into the tomato sauce. Cook over low heat, stirring occasionally, until the cream cheese melts into the sauce and the spinach is wilted, 2 to 3 minutes. Remove from heat. Add the parmesan, pasta, and cooked chicken, using a pair of tongs to toss. Add about ½ cup of pasta water to loosen the sauce. Add more pasta water if needed, 2 tablespoons at a time, until the sauce is smooth. Serve with extra parmesan.

SUN DRIED TOMATO PASTA RECIPE.
INGREDIENTS:
1 7-ounce jar julienned sun-dried tomatoes in olive oil

Favorite pasta: lemon pepper garlic pasta with tuna. Boil pasta; pappardelle is best but penne and linguine are my next choices. Drain and oil with olive oil. Mix in lemon juice, garlic, black pepper, canned tuna, and Parmesan until you like the ratios. (I’m sorry I can’t be more specific about my seasoning ratios). Extra points for fresh parsley or green onion garnish.
Daddy’s Pasta Dish: boil pasta. For this one rotini is my favorite but anything short and curly does nicely. Drain, oil if you want to, then put in a huge bowl and mix in: enough tomato sauce that all the pasta should be red, diced Italian sausage (ours was usually chicken), oregano, basil, and Parmesan. Red pepper flakes are good in this if you like them. Everything should be well mixed such that you can take a ladleful and get all the ingredients in it. Serve from huge bowl. :)
Garlic noodles: boil long noodles; preferably angel hair but this’ll probably be good with rice noodles too. You could also use short noodles I just like it this way. Drain; oil with sesame oil. Mix in lots of garlic and rice vinegar (probably roughly equal amounts but I usually use garlic powder. I want the vinegar a little stronger than the garlic) and a little soy sauce. Garnish with/mix in diced green onions. My family liked this with teriyaki beef, but I think teriyaki anything would be a good addition.
Thai basil tofu: sauté purple onions in a pan until they are fairly translucent. Add a sauce made from roughly equal parts soy sauce and white vinegar, a little sweetener (I use a drizzle of honey), and maybe a teaspoon of mint for every cup of sauce. If you like spice add the spicy here. Add tofu cut into however you want to eat it. Then, add a whole bunch of Thai basil leaves. You should probably mince them but you don’t have to. Sauté until tofu is a desirable texture. If you don’t have Thai basil, you can make a makeshift version with fennel instead or add more sweetening to the sauce to cover for it a bit. Also good with green bell peppers in it. And you can make it with chicken thighs but I like tofu better. Also good with Thai eggplants!! I love their texture
Daddy’s Taco/Chili Seasoning Mix: cumin base with a pinch of salt and maybe two punches of pepper. Enough paprika to be slightly noticeable if it’s smoked—I don’t like smoked so I use sweet instead. Garlic, enough coriander and oregano to come up near the cumin but not to its level. For taco meat: sauté with yellow or purple onions, bell peppers, other any other veggies you desire, and ground turkey. (I’ve tried making it with tofu but the flavor didn’t sink in well—I may just need to make it again). For chili: slow cook with ground turkey, tomatoes, black beans, and whatever other veggies you want.
Goat cheese pizza: once you have pizza dough (we use store-bought or the recipe on the 00 flour bag), cover it with either tomato sauce OR sliced tomatoes drizzled with olive oil. Add layer of goat cheese. Round log slices will crack nicely; crumbles may crisp a little. Add oregano and basil if desired and cook (about As High As The Oven Can Go for 8 minutes, but depends on pizza size). I also like tomatoes, mushrooms, and spinach on pizza, but I feel that most people don’t know how good goat cheese pizza can be and should know about it. If you like caramelized onions, you should put them on with the goat cheese. I don’t like them but I can still acknowledge they pair really well.
Mashed potatoes—good as a depression meal if you just need to ensure you have enough calories to function. Takes a while but you can drag your feet and lie on the couch while it cooks. Wash and cut a bunch of potatoes into pieces. The more pieces you have the less water you need to use, which is nice because I want the water but don’t want it too soupy, but it’s not that important. You can also peel them; I just don’t because I like the skins. Put them in a pot and pour in enough water to cover them, add pinch of salt if desired. Boil until you can stick a fork in with minimal effort. Drain off water until you have less. I’m sorry, I haven’t figured out the best amount yet. Mash potatoes with a fork or potato masher. Season with salt, pepper, and sour cream until it tastes good to you. You need to be boiling it during this so the excess water will evaporate (but leave you the dissolved potato nutrients). Scrambled eggs with radish leaves
The greens on my radishes were extra fresh looking this week, so I washed and saved them to put in my scrambled eggs. Just sauté them like spinach and add the eggs after they’re wilted. I had this with sourdough toast with butter and jam.
Shrimp scampi linguine
Prep all of the ingredients - peel and devein shrimp, zest and juice two lemons, finely chop a shallot, 4 cloves of garlic, and parsley. Grate parmesan and have butter and chicken broth at hand. Boil pasta until just done, save some pasta water and set the drained pasta aside. In a pan over medium low heat, sauté shallots and garlic in olive oil and butter until fragrant. Add salt, pepper, red pepper flakes, about a cup of chicken broth, and the shrimp. When the shrimp is cooked through, combine everything with the pasta. Then add the lemon juice, lemon zest, pasta water, parmesan, and parsley. So yummy!
Lemon herb chicken with sheet pan veggies
Preheat oven to 425. Whisk together olive oil, lemon juice, dijon, salt, pepper, oregano, and fresh herbs. Pour over chicken breast in a roasting pan. Slice delicata squash and place on a sheet pan with olive oil, salt and pepper. Add broccolini to a separate sheet pan with olive oil, salt and pepper. Bake everything together until the chicken is cooked through.

4 Tbsp. unsalted butter
2 large garlic clove, finely chopped (1 1/2 tsp.)
1/2 tsp. onion powder
4 cups heavy whipping cream
8 oz. Parmesan cheese, grated (about 2 cup)
