Ingredients: 1 lb chicken breast, diced. 1 medium cauliflower, riced. 1 cup pineapple chunks. 1 red bell pepper, diced. 2 cloves garlic, minced. 2 tbsp coconut aminos. 1 tbsp coconut oil. 1 tbsp fresh ginger, grated. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Heat the coconut oil in a big skillet over medium heat. Add the diced chicken and cook for 5 to 7 minutes, or until browned all over. Add the grated ginger and minced garlic, and saut for an additional one to two minutes, or until fragrant. Add the chopped pineapple and bell pepper, and cook for a further three to four minutes. After adding the coconut aminos, taste and add salt and pepper as needed. When the riced cauliflower is added to the skillet with the chicken and pineapple mixture, stir everything together thoroughly. When the cauliflower rice is soft, remove the lid from the skillet and cook for 5 to 7 minutes. Before serving, garnish with fresh cilantro.
