had a brain foggy day yesterday but made caramelised onions for a family thing.

sort of made a few mistakes like throwing the orange and lemon juice the onions had been soaking in with it right from the start and then accidentally tipping in way more sugar than I meant to, it started off sort of stewing like apples till I cooked off the liquid.

this actually worked very well, because it meant that the process was very gentle, and i didn’t have to stand over it. it took a few hours, checking it every twenty mins or so, but the end result was jammy and delicious!

result later as it��s in the fridge, but it’s basically onion jam. (onion jam I will freeze, because I’m not sure that was enough sugar to preserve it)

Both me and sis had been telling mum not to cook too many dishes at night since it is just the three of us eating but she never listens. So for dinner, there are Spicy Tiger Prawns with caramelised onions, crispy Fried Chicken Mid-Wings and two large steaks of Pan-Fried Batang (Spanish Mackerel). If I am the one cooking, I did keep the fish for another day.

terrifying moment today when i tripped and collided with a lamp post (2 weeks post top-surgery). felt a wet sensation on my chest. looked down to see a large brownish-red stain blooming across my torso. experienced maybe 30 seconds of frozen horror before i realised it was residue from the poorly constructed caramelised red onion and roasted pepper sandwich i had for lunch

Also Very Useful Info about how adding a little water now and then helps speed up the onion-caramelising process; it’s jogged the memory of a TV prog I once saw (can’t remember title) in which a couple of Indian ladies from the UK were browning a lot of onions for something or other, and they used the add-water trick as well.

Some food for thought here. (Disclosure: I’d have been a big fan of the onion-soup-mix school of onion dip thought. But I can’t get that here, and maybe it’s time to examine other options. Especially since onions can make my IBS give me grief…)
