CHEF ILONA: CREAMY EDAMAME DIP
Tumblr media
Edamame Dip:
Edamame are the young, green soybeans which are harvested while they are immature. This dip is entirely plant-based and gets its creaminess from silken tofu, and this dip packs an herbaceous punch with both basil and cilantro. I love this dip with rice crackers or as a flavour base in a lettuce cup.
Tumblr media
Silken tofu is a great ingredient for making vegan dips due to its unique texture and nutritional profile. Here's why:
Creamy Texture Silken tofu has a smooth and soft consistency, making it an ideal base for creamy dips like ranch, spinach-artichoke, or hummus-like blends. It can easily mimic dairy-based dips when blended.
Neutral Flavor Its mild flavor allows it to take on the taste of other ingredients, making it versatile for both savory and sweet dips.
Nutritional Benefits High Protein: Silken tofu is a good source of plant-based protein, adding a nutritional boost to your dips. Low Fat: It’s naturally low in fat compared to many traditional dip bases like cream cheese or mayonnaise. Cholesterol-Free: Perfect for heart-healthy recipes.
Allergen-Friendly It’s dairy-free and egg-free, making it suitable for people with lactose intolerance, egg allergies, or following a vegan diet.
Easy to Work With Silken tofu blends seamlessly with other ingredients, creating a smooth, lump-free dip without the need for additional thickeners.
Tumblr media
Edamame Dip
Serves 8-10
1 package silken tofu, drained
2 cups shelled edamame, plus ¼ cup for garnish
½ cup cilantro, roughly chopped
1 cup basil, torn
1 jalapeno, halved, seeded, and roughly chopped
4 green onions roughly chopped
¼ cup olive oil
juice of 2-3 limes
¾-1 Tbsp salt, season to taste
Put everything into a food processor minus the tofu and begin to blend on high. When the puree is almost completely smooth, add in the tofu. Blend the mixture until the mixture is smooth. Refrigerate the dip for at least an hour before serving, but the dip is best served after being chilled overnight.
Garnish options: whole edamame beans, gochugaru, scallions, basil, cilantro, pistachios, olive oil

Isn’t it interesting that some people would use this extra time at home to criticize instead of keeping things positive. My comment of the day was quite unsettling. Apparently, (according to this person) they are quite upset and state that I need to clarify the term and use of tart tins to muffin tins for these “Ultimate Canadian Maple Butter Tarts.” This recipe and accompanying article has consistently been my most popular post with positive feedback. I really don’t know how to answer this person’s rather caustic comment or even if I should bother. @urbnspice has always been a teaching blog with a pay-it-forward mantra , sharing my culinary and pastry knowledge free of charge (my site is and always has been non-mobilized). My recipes make use of easy to access equipment (like muffin tins to make tarts). Anyway, if you happen to have a spare muffin tin, you should make these butter tarts. If I could deliver a dozen of these delicious tarts to this cranky person, I don’t think they would mind if I made them using muffin tins instead of tart tins. #behappy #bekind #wereallinthistogether Here’s the link: https://urbnspice.com/my-recipes/dessertsandsweets/ultimate-canadian-maple-butter-tarts/ #stayhappy #staystrong #stayathome #commentoftheday #ultimate #pastry #canadianrecipe #canadianchef #proudtobecanadian #pastrychef #crankypants #buttertarts #ultimatebuttertart #allcanadian #proudchef #maplesyrup #maple (at Kelowna, British Columbia) https://www.instagram.com/p/B-F_JR6FJBe/?igshid=vbx1qfytn80o

Posted @withrepost • @takeahikemarket We continue to grow each and every day! We have often found ourselves new or unfamiliar territory throughout the process of building TAHM. The best part of that is the growth each of us has experienced along the way as a result of gaining the knowledge and understanding that’s been required. Growth and development are concepts we think are crucial to our success both as leaders and in business. I, for one, am thankful that Amanda & Jonathan are so like minded in this regard ❤️️ #canmorealberta #findmoreincanmore #yycfood #canmorekananaskis #yycfoodie #canadianchefs #canadafood #explorecanmore #canmorefood #supportlocalcanmore #eatnorth #canadafoodie #canadianfood #food #canmorelife #candadianchef #buyitinthebow #lovefoods #foodie #tastyfoods #foodporn #canmore #yyceats #yycfoodies #tourcanmore #downtowncanmore #canada #canadianfoodblogger #eatcanada #canadianrockies (at Canadian Barista Institute - Calgary Campus) https://www.instagram.com/p/Cii6i4gL2uS/?igshid=NGJjMDIxMWI=

CHEF ILONA: Festive Whipped Feta Dip w/ Cranberry Chutney
Tumblr media
Creating a festive and delicious spread that will guarantee an experience that is merry and bright for your guests can be low-stress and even fun by curating a graze comprised of a selection of versatile dips. My dips can be used as a flavour foundation for a canape, a crunchy lettuce wrap, or in its natural state as a dip.
Tumblr media
How to serve whipped feta dip: Top my whipped feta dip with homemade cranberry chutney, toasted pistachio, and honey for the ultimate sweet-salty combination. You can get creative here. The toasted pistachios add an incredible crunch to your dip but leave them off if you’re not a fan. Don’t feel like turning on the stove? Top this dip with our cranberry relish instead or jam you made in the summertime.
Tumblr media
Feta’s salt and tang make it a versatile cheese that can both contrast and enhance other flavors.
For the best pairings:
Balance its saltiness with sweet fruits, mild grains, and fresh greens. Complement its acidity with earthy, robust flavors like nuts, olives, and roasted vegetables. Enhance its Mediterranean character with herbs, olive oil, and spices like oregano and dill. These pairings allow feta’s unique qualities to elevate both simple and complex dishes, adding brightness, richness, and a delightful contrast in texture and flavor.
Tumblr media
Whipped Feta Dip
Cranberry Topping:
Juice and zest of 1 orange
3 Tbsp. honey
1 ½ cups fresh or frozen cranberries
1 sprig thyme, plus 2 tsp. chopped fresh thyme leaves
In a small saucepan over medium heat, whisk orange juice and honey until combined and bring to a boil.
Add cranberries and thyme sprig and return to a boil.
Reduce heat to medium-low and cook, stirring occasionally just until cranberries burst and
become saucy; approximately 7 to 8 minutes.
Remove the thyme sprig, and then stir in orange zest and chopped thyme leaves.
Whipped Feta:
6 oz. feta in brine, cut into small cubes and drained
1 clove garlic, grated or minced
1/4 tsp. crushed red pepper flakes (my preference is Aleppo pepper flakes or gochugaru)
1 cup cream cheese, room temperature
3 Tbsp. extra-virgin olive oil
In a food processor, pulse feta, garlic, red pepper flakes, and chopped thyme until feta is broken up into small crumbs.
Add cream cheese and pulse until combined.
With the food processor running, drizzle in oil and blend until mixture is smooth and fluffy.
Transfer dip to a serving dish and top with cranberry topping.
Garnish options: Toasted chopped pistachios, chopped parsley, additional orange zest, additional drizzle of honey, walnuts, and fresh thyme.

👋 Hi, that’s me wearing one of @chefandcocanada ‘s fab aprons. They are comfortable, practical, and look good. Buy local, cook global! Posted @withrepost • @chefandcocanada We want you to meet a new family member of Chef & Co Canada, Susanna Gilbert! @mainlyfood She was introduced to us through one of the Masterchefs in Vancouver. She has some very exciting events and projects coming up. Stay tuned on our posts in the next little while to learn more and participate. We want to tell you a bit about her and welcome her to our food network of friends so we asked her a few questions and this is her response: . “I’ve enjoyed cooking for as long as I can remember and am eternally grateful to my parents who let me and my siblings experiment in the kitchen — as long as we cleaned up. It’s a gift to be able to rummage through fridge and cupboards and come up with a meal. Way before mystery boxes and secret ingredients, grocery exile, or simply a busy life taught me to make the most of what’s available. I grew up in Norway, spent time in France, and now live in Vancouver, Canada with my three boys — 16, 20 + hubby — and a very cuddly cat. They like eating my various experiments and often have suggestions for improvement. They also make great sous chefs, dishwashers, and obviously critics. When I’m not cooking, reading cookbooks, browsing the farmers market or local specialty stores, and thinking about what to make next, I work in marketing at a local tech company — sharing weekly recipes with my colleagues, of course.” . . 📸 @matthewmct @mainlyfood . . #torontofood #aprons #canadianchefs #cooking #homecooks #vancouverfoodie #vancouverchefs #vancouverrestaurants #chefstable #foodies #vancouverfoodies #chefs #cooks #kitchen #vancouvermom #personalstylist #chefaprons #vancouverbc #canada #gastown #pacificnorthwest #discovervancouver #discoverchefs #yvreats #foodstagram https://www.instagram.com/p/B4XokMshZ3z/?igshid=1p403ostfwvye
