I remember so much
the kid with the locker next to mine who volunteered to piss on a acidity test in 5th grade and how it came back more acidic than normal bc of how much soda he drank, the same kid who dreamt of being in the army, and later leaked his girlfriends nudes but somehow they’re still together. I remember going to her house, her mom, her little sister who so clearly looked up to her, her bedroom which I thought was so cool bc she had a bed with another bed that could pull out as a drawer and a tv in her room with princesses? hello kitty? I remember moving schools and losing touch and seeing her at the open house for the middle school we would end up going to together, and how she acted like she didn’t know me. oh well. I remember feeling so out of place when I switched schools and dying to go to middle school to pick up where I left off but everyone was so different and had moved on without me. I remember feeling that way again in high school but the added ache of watching it happen in real time. I remember how awesome and excited I felt to wear my circus costume as a top to school and feeling on top of the world in it and then the discomfort and self consciousness that followed when I noticed how other people reacted. they weren’t ready for me. my grandmas top that mysteriously disappeared from my closet, the white silk one with the bow that tied in the front. sorry grandma. I remember the kid who melted crayons down and made them into valentines in 4th grade, I remember always somehow being in a friend group with an odd number of people. twinning with my sibling during spirit week, being told i was annoying daily by someone i considered my best friend. the first time i was made aware that I'm a loud breather. the crushing disappointment of our poetry presentation in 3rd grade. my music teacher with gorgeous black slightly peppered hair who I absolutely adored and her love of dark chocolate, “don’t call me mrs bennett, that’s my mother”, and her attempt at switching to carob chocolate bc it was healthier. the lunch lady who was so sweet and my hair would always get caught in the buttons on her uniform as she passed by with the trash can. she was so so sweet to me. I remember the first girl I ever had a crush on, her name was victoria and I thought she was beautiful and graceful and I was too shy to even speak to her. I remember the cruelness of most boys I had a crush on, and the sweetness of the ones I never told a soul about. the feeling of walking into school with live piano music filling the air, stopping to buy pencils and erasers from the machine with my best friend, and the deafening silence and anxiety when the piano was no longer playing bc I was late. the birthday party I invited her to with all my new friends at my new school, that she didn’t really fit in with, that I didn’t really fit in with, but what can you do, at 9 going on 10. hearing that the boy I liked liked me back and marching up to him demanding that he ask me out because what else are you supposed to do when you like each other besides date? funny how I still don’t quite get that one. crazy to think how my teacher in 5th grade was slut shaming me, and my other one blatantly disliked me. it was probably the undiagnosed adhd but even still I was just a bit chatty. she deserved better, my younger self. she was so strong to live with that uncertainty and anxiety every day at her age.

Hey maybe it's less than cool that when I image search "Margaret MacDonald Mackintosh" the first hit is her photo and the very next hit, right next to her face, before any of her actual art, is a compilation of images generated in Midjourney based on her style.
"Oh you can edit your search terms to exclude AI". Shouldn't have to. I'm not searching "art nouveau style" or "hedgehog cute", I'm looking up a specific artist. Imagine buying a chocolate chip muffin at a bakery and having to specify you would like actual chocolate chips in order to not get carob.

Main Post: Food Sensitivity Diet Recipes
@miloscat has been going through a food sensitivity diet, so I've been trying to make nice stuff for them to eat with a limited set of ingredients. I thought maybe this might help someone else so I'm going to try and post the recipes I've used/adapted/made up.
Please don't take any of these as diet advice! This is being done with a licensed dietician. But if you're going through something similar, these might be useful for you?
Background & Weird Ingredients
I've been using the immersion blender's beater attachment for the first time. I've also had to buy a few odd ingredients, so I thought I'd document that.
Carob powder. Got this from a health food shop online, used to make carob / chocolate sauce which is used as a base for hot chocolates but could also be put on icecream
Ascorbic acid powder. Got this from a health food shop online too. Not the sodium or potassium salt, but the acid. Adding this in to cordial to make it more "healthy" and to try and cram as much vitamin C as possible in to life.
Citric acid powder. This you should be able to find in the baking isle of the supermarket. Make into a 5% solution for a lemon juice sub, and also used in cordial.
Eggs. Okay, this isn't weird, but we're going through so many more eggs.
Textured vegetable protein. I got this before the diet started, but it's been super helpful. The stuff we have (from the supermarket) is un-flavoured and unseasoned and unpreserved (It's just soy protein), which means it actually works with the diet which is great because most mince meat doesn't.
So much garlic. We get it in jars, if we were using fresh the garlic press would just live in the sink.
Green onions. These grow really well where I live, all year around. It just so happens that about six months ago I bought a bunch of green onions and planted the white bits, and they've been going gangbusters. Really great when you want to add just a little green onion.

What solution is there to all the horrors behind chocolate? Do we just stop eating chocolate (is carob better?) or is there other things we can do?
The thing is it's not so much chocolate as a thing as it is, as always, the industry.
I want to re-re-re-peat that my bringing up how I feel about chocolate guy's videos isn't to say no one should eat chocolate. That's kind of a hard and somewhat irrelevant sell, but there are things we can do.
Honestly, to answer this, let me give you my stance on sugar:
Sugar the molecule isn't bad. There are lots of sugars actually, and for the most part they are necessary and beneficial to a human diet.
I don't like when people say sugar is bad, or to cut sugar out of diets (unless a medical professional has indicated the need). I think that's way too broad and unnecessarily strict.
However,
Sugar as a sweetener and thus the confections and baked goods it allowed to be made became accessible and popular because of its increased producting and availability as a result of the slave trade and the colonization of indigenous lands bringing with it, also, further decimation of the ecosystem in colonized areas as well as illness that disproportionately affects BIPOC.
That's bad. It's possible to defend sugar, but it's less plausible to defend refined white sugar as a cultural staple.
So I don't buy it. I avoid (avoid means avoid, it's difficult and unnecessary to make this a strict 0) the kind of industrial confections made with white sugar. I use coconut sugar, molasses, date sugar etc instead and buy from smaller, fair-trade companies as often as possible.
I don't know to what extent such a behavior might take money out of the pockets of Dixie or other sugar giants. That's not the point. I don't think it's morally meaningful whether I do this or not.
But I DO know what white sugar actually is- it is not just a sweet tasting granule. It is, quite plainly and in the form most encountered, the direct byproduct of the slavery my ancestors and relatives experienced. It is a product that rose to popularity at the hands of genocidal colonial enslavers, due to the pleasure it brought rich people in europe. That's what it looks like to me, that's what sugar is as a cultural object (and not just a white granule).
So, what about chocolate? Well, ask the question: Why is chocolate everywhere in the first place? How did it get here, and get so popular? How was it originally consumed and by whom?
Chocolate is a product, cacao is a fruit. What do you know about the cacao tree? What you do isn't really my place, I really don't think it's meaningful to say what someone should or shouldn't do with something like this. I guess my point is that it's not about the idea that chocolate shouldn't be eaten, and sure maybe carob could be better, but overall it's important to question things you think are 'normal' and figure out what kind of relationship you want to have with them.

Cynthia Soto and Jessamyn Gonzalez Carrasco have been friends since 2015. Today, they’re business partners, bringing handmade clothing designs from Mexico to pet owners in Chicago.
Gonzalez Carrasco lives in Guadalajara, Mexico. She’s always loved animals, and dreamed of designing clothes for them.
“I used to design clothes for humans. I have a dog, a chihuahua. With all of the textiles I had left over, I started making her clothes,” Gonzalez Carrasco said in Spanish.
She eventually ended up opening her own shop in Mexico: Benito Moda.
Soto used to work in child care. Then, the pandemic hit.
“I was looking for a side hustle, something to do at home instead of sitting at home and waiting to see what was happening,” Soto said.
Soto was already buying Gonzalez Carrasco’s products for her own dogs. She decided to try selling them to others in Chicago.
“I said, ‘I’ll give you a certain amount of products [to sell]. I’ll give them to you, don’t worry. When you start selling them, you can pay me or something,’” Gonzalez Carrasco said in Spanish.
The business quickly grew from there, Soto said.
“I think quarantine really brought everyone together closer to their pets and or pushed them out the door to adopt pets,” Soto said.
The shop sells colorful collars, tiny sweaters, and patterned vests. Some items have matching human-sized pieces for owners to match their pets.
“All of our items are outfits for pets, dogs, bunnies, even ferrets, we have really really tiny outfits that will definitely fit your pets,” Soto said.
In March 2021, Soto opened her own storefront in Pilsen on Cermak, called Pocha Pets Boutique. She moved to her current location on 1840 S Racine Ave last fall.
The boutique’s name comes from a derogatory term Soto says she was called growing up as a first generation Mexican-American.
Today, Soto embraces the word, and says she’s working to present it in a positive light at her boutique.
Now, the shop is offering special valentines-day themed treats — including “pup-cakes” and “barkuterie” boards and carob-covered strawberries, which are a safe chocolate alternative for dogs.

In the future, Soto and Gonzalez Carrasco hope to expand their business, with Gonzalez Carrasco focusing on the business in Mexico, and Soto in the United States.
“I want to grow into maybe California, Florida. Just, you know, expand our stores so that people can see us and see themselves within the name, and see themselves being seen,” Soto said.

Hey, how did you do that, with the chocolate thing? How did you go from eating lots to eating none?
Oof. It was really, really hard.
The trick that basically did it in the end was to buy carob and suck on it instead of devouring chocolate.
Carob is similar enough to chocolate it helped with the cravings, but it also tasted terrible.
And like I said... I sucked on it. Basically anything to slow down the consumption of it. It’s hard to crave something if it’s in your mouth, but if you suck on it you’re ultimately consuming less and that helps “tame” the cravings on their own. That was, ultimately, the only thing that worked. Cold turkey was flat out imposisble. I had carob in my mouth for a full month. Every time I got a craving, I popped a square in my mouth and sucked on it.
If you can’t do carob, do dark chocolate instead. I don’t know why, but I found it far less addictive.
And beware of eating other sugars while you’re doing it. It’s ultimately the sugar that causes most of the cravings (altho some of it might be the caffeine as well). It would be really easy to change your chocolate addiction into a lolly addiction.
The first week was complete and utter hell, and it was so bad it was why I ended up doing the carob trick. The first month after that week wasn’t so bad, but it was still hellish. After the first month it was just a matter of maintaining it -- the cravings were still there, but not overpowering and I could ignore them. This time my willpower had more stamina than the cravings are. After three months the cravings would only be background thoughts and not in the forefront of my mind.
I know sugar isn’t benzos or heroin, but holy shit sugar addiction is definitely a thing. You won’t go into shock, you won’t end up sweating on the floor, but the cravings are just so powerful that when you’re trying to get off sugar it’s all you think about and you’d fucking kill a man just to get a chocolate chip. There’s really no words to convey just how fucking horrible those cravings are and just how much they consume your brain.
I can’t even describe why craving something is so unpleasant, it just is. You need to get it now and... it’s not like I felt like I’d die if I didn’t get it, or anything. I didn’t feel sick. I didn’t feel cranky or like I wasn’t myself any more, or like my personality was suddenly broken. It didn’t physically hurt. Sure, I was a bit more down than usual but the emotional part of it was mild.
But it just felt like every cell in my body was screaming right in my ear and I couldn’t turn it off unless I had the carob in my mouth. It felt like putting my hand on a burning stove and willing myself not to pull my hand away, and having to do that for weeks without a single break. Ignoring the cravings felt like trying to overpower an instinct, only it never got tired, never turned off. There’s only so much willpower you have.
The unpleasantness wasn’t the hellish part. It was listening to my body scream at me without a break and trying to ignore it that was awful.
Keep in mind that I’ve been bedridden from illness, so I am not at all exaggerating when I say how much simply having those cravings sucked. I’m not someone who’s never felt awful pretending that something mild is worse than it is. I’ve been exhausted in my bed so nauseous and sick I’ve seriously considered shitting myself rather than taking the immense energy it would have taken me to walk to the bathroom. I have starved myself because I was too sick and tired to get food or eat. 
I won’t say chocolate withdrawal was worse than that, but neither am I someone who’s never dealt with how shitty a body can feel carrying on like a paper cut is the same as being stabbed. This is not a paper cut. It’s horrible, just... in a different way I can’t describe. It’s more that it’s so intense and full-on and unyielding that makes it so hard. 
I guess it’s the difference between being stabbed, and being strapped to a concert speaker with Barney’s song on repeat for 24 hours a day for weeks at an unbearable volume. Yeah, you could say it’s nothing compared to being stabbed, but on the other hand... does that really sound like something you can tolerate?
Sugar withdrawal sucks ass. So if you’re going for it, god fucking speed and good luck.
TL;DR -- I spent a whole month sucking on carob to basically brute-force my consumption lower. Had a craving? Pop some carob in my mouth, and don’t chew, just suck. Doing that reduced my sugar consumption, which spaced the cravings apart a little more and reduced their power, which meant -- despite how AWFUL the cravings were if I didn’t have any carob -- I actually reduced consumption without even trying as long as I had access to the carob. Once the cravings were weak enough I stopped eating carob naturally because it tastes like shit.
Chocolate cravings stuck around for a few years but they were only background after the first three months or so.

...It has been far too long since I’ve had tea. But the tea I’m having now kind of makes up for it.
I work at a vet office, and a lot of clients like to bring us food and such over the holidays. i wish I knew who... but one client brought in this Candy Cane Tea by Benner Tea Co. (I’d never heard of it, but research says it’s an Aldi brand).
Naturally, rather than loading up on cookies and chocolates, I snagged a few bags of the tea, and decided to try it when I got home.
So try it I did.
And... Well. Of course it’s rather pepperminty, there’s some spearmint in there. But it also has... licorice? And carob? And something else I can’t remember-- hibiscus maybe; something that really didn’t make me think of Christmas at all. I thought it would be... weird. (Licorice and peppermint? Not exactly my idea of a Christmas confection.)
But it’s balanced much better than I thought it’d be. It’s mostly peppermint.. but the additions almost add a chocolaty texture, more than a flavor. It’s nice, though....
I might have to buy some of this for myself.
or adopt all the bags of tea, when my co-workers inevitably go for the cookies instead.
