Alright we got a breakfast sausage recipe I can live with. I thought I was going to have closer to 3lbs of meat for breakfast sausage but I ended up with 2 1/4. Some of the weight of the pork was just water that leaked out in the packaging. All the test patties ate up a few ounces plus I set aside some meat for the cheddar jalapeno stuff tomorrow. I used this recipe as a guideline. The recipe was supposed to account for 1lb of meat and I was under the impression that I had 3lbs of meat. For those who don't know 3tsp = 1tbsp so scaling up the recipe was pretty easy. Still I added more to adjust to my liking and this is what I ended up with.

2lbs ground pork 2tbsp brown sugar 3tbsp dried sage 1 1/2 tbsp salt 1 1/2tbsp black pepper 1tsp garlic powder 1tsp dried thyme

I was a bit apprehensive about using brown sugar in the sausage. I don't really like sweet sausage but I tried it anyway. There's a slight sweetness to it but it's not bad. It does kinda annoy me because as grease ran off the patty it washed out some of the sugar into the skillet where it caramalized so it's gonna make a mess that I'll have to clean up but I can live with that.

I used a lot more sage, pepper, and garlic than I thought the scaled up recipe would use. I thought I was using as much salt as the recipe called for only to find I was in fact using less meat. Still it wasn't nearly as salty as Jimmy Dean sausage

I could have added more garlic powder to the mix but I mostly wanted the sage. With the cheddar jalapeno stuff I make tomorrow I'll add a lot more garlic.
