I massively fucked up making cookies and made something completely different
Ok not too different, they didn't become a sirloin steak what actually happened is that the mixture didn't form together like it should so instead I just bunged it into two trays and just decided to see what would happen.

So what we have chat, is something that is somewhere between a biscuit and a blondie.
I dub it 'The DEEP Cookie'. They're pretty nice. I like them. Here's the recipe because what if Tumblr wants to make some Deep Cookie. Idk, you want it it's there.
Ingredients
200g Softened Butter (preferably unsalted but does it matter?)
200g caster sugar
1 egg (I used medium but realistically, an egg is an egg)
half a teaspoon of vanilla extract (I mean it, half a teaspoon I know what you are like Tumblr)
400g Plain flour
3-4 desert spoons of chocolate spread (I am so sorry I don't remember how many it was. I did not plan on making Deep Cookies and did not know I needed to remember how to make them)
Method
Preheat oven 200C/180C fan/gas 6 or I think that's 392F/356F fan in Fahrenheit.
Beat butter and sugar together with a wooden spoon.
Then add the vanilla extract and egg and beat that.
Add half of the flour mix that in with the wooden spoon.
Then add the chocolate spread and the rest of the flour. Mix with a spoon until it doesn't seem like the spoon is doing anything and then use your hands.
Make a futile attempt to bring the dough into cookie dough, decide that the mixture is too wet and give up. Find two square trays at about 3cm depth (or like any trays with depth to be fair, that's just what I used, I'm not your mum). Line these trays with baking parchment/baking paper.
Put in the oven and like you can just like keep checking them but I recommend just putting them in for like 35-40 minutes although if you want them to be more gooey and cookie dough like put them in for less time. Then take them out and let them cool. You can cut them however you like but I did it into sixteen.

In the upcoming chapter we have:
🍪 Rookie!Shakes and Dancing Rasta as the emotionally distanced idol. Also, Rasta’s husband and my original character - his name is Simone.
🍪 Chocolate chip gooey cookies!
🍪 Shakes is very, very new to the team. He barely joined them three months before! And now, if I wrote already a short story featuring Skarra…. Now, Shakes is trying to define for himself: Who Dancing Rasta is?
🍪 Protective Dancing Rasta, even if he acts cold sometimes. A pinch of angst and some marriage struggles. But of course, there is comfort! I love writing comforting stories, especially after watching the Rookie Season once again. 🥹

So it's officially fall tomorrow, so I made a log cake with moss and little mushrooms!!! It's my first time making one and I am so proud and excited with how it came out!! (My sister did the piping work, I did the decorating baking and assembly lmao)
Gonna make cider, burn some incense, work on self care and leave an offering in the woods tomorrow when we go for a hike!

Cake recipe:
Preheat to 350
Line sheet tray with parchment paper, optionally spray grease it for even easier removal (i did)
Bowl a:
-4 egg yolk (save the whites!!)
-8 grams cocoa powder or a little more than that of hot chocolate mix
Mix!
Bowl b:
-4 egg whites, beat till frothy
-80 gram sugar, gradually added
Beat to stiff peaks!!
Combine bowl a and b gently!
-55g flour
!!Gently!! fold in!
Pour into pan and bake @ 350 for 13-17 mins depending on your over (ours is shit so it took longer lmao)
Roll while still hot, let cool before adding frosting/filling
Frost outside and decorate!
Easy frosting that tasted Great:
-1 large container whipped cream
-1 large packet pudding mix in prefered flavor (recomended chocolate, or you can color it brown with food coloring for bark look)
Done!! Good job!!!

Ube brownies with cream cheese chips, and pecans layered with homemade Ube Jam and cream cheese drizzle. ✨
So good 😭 my camera doesn't make them look as purple as they do irl. Such a wild and perfect flavor combination.
Ube Brownies
3 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking powder
1-1.5 c flour
1 c brown sugar
1/2 bag of frozen ube puree (thawed)
1/2 c chopped pecans
1/2 c mini marshmallows
1/2 cream cheese / white chocolate chips
- 350°f for 30-45min
Puree and smoothen ube as much as possible.
Mix wet ingredients.
Mix dry ingredients.
Add dry to wet ingredients.
Bake.
Ube Halaya Jam
1 can sweetened condensed milk (I used ube flavored for dark color and flavor)
1 can evaporated milk
1/2 c melted coconut oil
1/2 bag of frozen ube puree (thawed)
1 tsp corn starch
- Medium heat (to bring to boil, then lower to medium low to low heat as it thickens over 30 min
- stir frequently to prevent burning
* do not overheat
Take thawed puree and smoothen as much as possible.
Add all ingredients to warm pot and bring to a boil.
After boiling starts, lower heat to medium low to low heat and continue cooking and stirring till product is thick and creamy and less prone to falling off the mixing spoon.
Add tbsp of evaporated milk or water and 1 tsp of corn starch to small container to mix and remove all clumps from corn starch mixture then add to pot with the mixture and mix till it thickens while turning off the heat.
Completely cool in fridge.
* Should be creamy like frosting *
White Drizzle
1 tbsp Coconut oil
1/2 cream cheese chips / white chocolate chips
Double boil with metal or glass bowl or microwave to melt and mix
Drizzle on top and serve brownies.

Jelly filled Donuts!

So this week I’ve done a lot of baking, I’ve make biscuits (which need some work, but great texture), tanghulu (which was a disaster that can be its own post), and these donuts (which are really good when warm)
All of this from scratch too! I made doughs, rose the yeast, kneeded and cut it out to shape my needs, and I was able to creat stuff I’m proud of!
If you’re ever looking for a hobby, I will always recommend baking, even if it’s just from a box! I know 3 months ago I was content simply adding pumpkin pie spice to boxed pumpkin bread mix, but now I’m ready to gut pumpkins and make it from scratch next fall!
Always try new things, and don’t let failures get to you! The tanghulu I made went so bad it burnt a whole through the kitchen garbage bag (which I only discovered today), so the bin itself was covered in burnt sugar, but that’s not gonna stop me! I will master tanghulu even if I burn a dozen more batches (hopefully not though because fruit isn’t cheap…)
Besides, the best part is eating whatever you make! 😋

Made red velvet cupcakes for my friend’s birthday!!

[recipe here. I halved the quantities and did cupcakes instead of a 4-tier cake because they’re easier for sharing and I don’t have to Bring A Knife To School]
I think they’re the best looking thing I’ve ever baked! Normally when I try to bake cakes, they taste great, but look horrible. That’s partly because we don’t have any decorating tools like piping bags or those leveller pallet knife thingys, but also I generally lack skill at cake decorating. I put too much batter in the cupcake paper wrapper things, so I had to cut the edges where they had come out of the oven like this:

I added a heaped tablespoon of icing on top, rotated each cupcake and sort of swirled/flattened it with the spoon, and then sprinkled the crumbs from the trimmed edges on top. Probably the first time one of my baking mishaps has added to the aesthetic value of a cake, but I’m not complaining!
I had one and can confirm they’re delicious!! There was one minor cock-up and one slightly less minor one. My hand slipped as I was adding the red food colouring, and I accidentally added way more than I meant to, but it turned out fine. The recipe called for an absurd amount of sugar in the icing, and I haven’t made cream cheese icing in ages, so I didn’t know that it was an absurd amount, so the icing is much sweeter than I’d like, but still delicious.
Because it’s for my friend’s (belated) birthday, I decided to go fancy and use proper vanilla extract instead of vanilla essence! It may have just been the difference of prices acting as a placebo, but it tasted absolutely delicious! However, it is three times the price for not a great deal of difference, so it’s not a substitution I’ll be making often.
I’ve never made a recipe that’s called for both baking powder and baking soda before. Despite the amount of rise this should have given it, they turned out a bit flat (as seen above), probably because the batter was quite wet. The sponge itself is light and airy, so I can’t complain. My guess is it needed both BECAUSE of the consistency of the batter, but I’m not an expert. If someone is an expert, let me know! I’m curious!
I don’t normally do this type of thing on Tumblr, but it’s been fun!! I might do this more often.

Would you want to read a fanfiction settled in another universe? Recently, I started to think about writing a fanfiction, where Dancing Rasta is an owner of small, local bakery in a small town in German Alpes and the players are his customers. Some of them come to buy his pastries regularly, the others are just there I.e for a weekend getaway. Every chapter would be focused on a different player, especially Iron Tanks because I love them very much.
