The first festive pasta experiment is complete. Two important things we learned: 1) designs do not respond the same way on the X and Y axes as the sheet moves through the roller, so don't invest a lot of time or emotion trying to achieve a perfect design, because no matter what you do some of it will be determined by the pasta machine; and 2) once the sheets are cut up & shaped, even pretty shonky designs look like something fancy & fun to eat, so don't stress out too much about clean joins &c. on the colored strips because how good the sheet looks as a whole has relatively little bearing on the finished product. Also, I keep forgetting that beet powder really fades in cooking, so the red strips turned out more like a horrible-undercooked-bacon color after the pasta was boiled -- spinach pasta only in the future.

If you'd like to watch a guy from Bon Appétit make a squillion -- OK, 29 -- handmade pasta shapes (video helpfully time indexed by pasta), you can do that here. Be careful, though, because he has a lot of interesting tools that you will want. I only watched parts of the video and now I need an anolini stamp and one of those fancy pinking cutters. If you watch the whole thing, god only knows what you may end up ordering.

I'm confused about the semolina flour bit. I have seen that stated, but I've also seen videos of Italians making regional pastas out of all sorts of different grains and legumes. Maybe they have semolina flour as well? A mystery.

But I do think the boundary between noodles and dumplings is important here, since pasta can be either. Filled pastas like tortellini, ravioli, anolini, etc. are all dumplings. These should not be considered noodles, in my opinion.

But ovoid dough bits like gnocchi are ALSO considered dumplings (in fact, they are the type of thing originally meant by 'dumpling'), and sometimes considered a pasta. Are THEY noodles?

There are differences, but they are COMPLEX!

(And what about the eggs in egg drop soup? In Polish and Mennonite traditions they are considered noodles. In other places, a little flour is added and they are considered dumplings. Are they either? Or just eggs?)
