Air fryer Italian stuffed chicken breasts

Ingredients

1 lb (2) chicken breasts

4 oz. (½ cup) cream cheese

2 tbsp green pesto

2 tbsp Parmesan cheese, finely grated

½ tsp avocado oil

¼ tsp sea salt

¼ tsp ground black pepper

Instructions

Preheat the air fryer to 350°F (180°C).

Place the chicken breasts flat on a chopping board and slice a pocket into each breast horizontally.

Combine the cream cheese, pesto, and Parmesan cheese.

Spoon equal portions of the cheese mixture into the pockets of the chicken breasts. Fold the top of the chicken breast over the filling and secure it with a toothpick.

Drizzle the avocado oil over the chicken breasts and rub it in. Season on both sides with sea salt and ground black pepper.

Place the stuffed chicken breasts in the preheated air fryer and cook for 18-20 minutes until golden and cooked through.

Remove from the air fryer and serve with a green salad or your favorite veggies.

Tips

To boost the flavor further, sprinkle some Italian seasoning on the outside of the chicken breasts after rubbing them with oil.

Smaller chicken breasts will take 16-18 minutes to cook, large ones 20 minutes or more.

Try red pesto or olive tapenade instead of traditional green pesto!

¼  cup confectioners’ sugar

Preheat air fryer to 350 degrees. Roll dough out on a work surface and press all seams together. Cut dough into 8 even pieces.

Place an Oreo at center of each piece of dough. Fold dough around Oreo and gather edges, pressing dough together to fully enclose each cookie.

 Spray each cookie lightly with cooking spray and place in air fryer basket. Cook 8 minutes, turning halfway through cooking time. When done, Oreos will be golden brown. Allow 5 minutes to cool, then dust with confectioners’ sugar. Serve warm.

175 Easy and Delicious Single-Serving Recipes, from Chicken Parmesan to Pineapple Upside-Down Cake and More

 Having wanted to buy an air fryer but not really knowing what to look for, this book seemed perfect for me to read and review. I was pleased to find that the information was relevant and provided the information I was looking for related to oven vs basket air fryers. It also provided the ‘why’ of buying one and it will be what I buy when I replace my toaster oven soon. The many functions it replaces from deep frying to toasting and baking all sound perfect and the one electrical appliance will be perfect for my husband and me.

 The book begins with an introduction and important information, tips, and suggestions for cooking with an air fryer. It provides optional accessories and how they would be used if purchased. THE RECIPES ARE APPETIZERS AND SNACKS, SIDES, POULTRY, BEEF AND PORK, SEAFOOD A ND FISH, VEGETARIAN AND DESSERTS. Every recipe includes calories and that is important to me since calorie counting is something that I do. The tips on how to purchase say small peppers instead of large ones to avoid waste, were informative. The recipes also sounded delicious and provided some healthy options along with comfort and more decadent foods.

 I believe this is a book that I would enjoy having in my kitchen…along with an air fryer, and may request my daughter bring it to me for my birthday this year.
