Looking for an extra special vegan surprise meal? Here is a recipe on how to make vegan fish and chips. This delicious treat calls for banana blossoms, which are big, tear shaped flowers that grow at the end of a banana fruit cluster.
🌱 Heat 1 liter (4 cups) of vegetable oil in a large saucepan (180˚C). 🍌 Split banana blossoms from two cans, add juice of half a lemon, 20-30g of seaweed flakes, and sprinkle with salt. 🍲 In a large bowl, mix 200g (1⅔ cups) plain flour, 7g (1½ tsp) baking powder, and 6g (1 tsp) salt. Add 275ml (1⅛ cups) sparkling water or vegan alcohol-free beer; stir. 🌾 Coat banana blossom pieces in extra plain flour, then dip in batter. 🔥 Fry battered flowers until golden and crisp. 🍋 Squeeze fresh lemon, serve with baked wedges or fries.

We recently became subscribers to @eatstickyfingers cookie of the month club (hiiiighly recommend!!!) This month had n’oreo cookies and these amazing soft sugar cookies. My son keeps asking for more - so I pulled out my favorite cookbook and low and behold their soft sugar cookies are in there!!!! I followed the recipe exactly but sadly halfed it. I am still questioning my sanity - if anything I should have doubled it! They are easy to bake, and delicious to eat. Perfect in every way - and spoiler alert - they are vegan! Italian Cabbage Bean Soup
Robust...filling...nutritious...warming...this soup is all these things as well as easy to fix and comes together quickly. This is the way I like to cook ahead which makes more time for me to pursue my other interests. Give this a try...see what you think.
1 c. dry navy beans
1 bundle epazote
2 c. water
3 c. vegetable broth
2 bay leaves
2 t. salt
½ t. coarse black pepper
2 t. garlic, minced
oil
1 onion, diced
3 c. carrots, sliced thin
2 c. celery, sliced thin including leaves
1 bell pepper, seeded, diced
2 c. cabbage, chopped
1 T. Italian herb mix
1 - 14.5 oz. diced tomatoes with liquid
In a large soup pot, add beans, epazote, water, vegetable broth, bay leaves, salt, pepper, and garlic. Cover, bring it to a boil, then turn it down to a simmer. In a large fry pan, add oil to then saute onion, carrots, celery, and bell pepper. Once the onions are tender, add to beans. Then layer cabbage, Italian herb mix and tomatoes on top of beans which will float to the top. This helps keep the beans under the water to cook. When the beans are tender – maybe 45 min. - ladle up into deep soup bowls and enjoy.

A tasty and creamy vegan pasta dish with soft broccoli and a rich cashew sauce that tastes like cheese. This dish is simple to make and great for a cozy dinner during the week.
Ingredients: 200g pasta of your choice. 1 large head of broccoli, chopped into florets. 1 cup raw cashews, soaked for at least 2 hours or overnight. 1/2 cup nutritional yeast. 2 cloves garlic, minced. Juice of 1 lemon. 1/2 tsp salt, or to taste. 1/4 tsp black pepper. 1/2 cup water, plus more as needed.
Instructions: Follow the directions on the package to cook the pasta. Remove the water and set it aside. For about 5 to 7 minutes, steam or boil the broccoli until it's soft. Remove the water and set it aside. Put the cashews that have been soaked, nutritional yeast, garlic, lemon juice, salt, pepper, and water in a blender. If you need to, add more water to get the consistency you want. Blend until smooth and creamy. Put the steamed broccoli, cooked pasta, and creamy sauce in a large pan. Stir the food all the time over medium-low heat for about two to three minutes, or until it's fully heated through and covered in sauce. If you want, you can serve it hot with extra black pepper and nutritional yeast on top.
