Smoky Spinach Quiche
Light...fluffy...tender...flavorful...piquant...this crustless spinach quiche has all that and foregoes the extra carbs a crust provides. Layer sauteed scallions, smoked goat Gouda and Swiss cheeses, a generous portion of spinach topped with a milk-egg-smoky Spanish paprika-nutmeg custard to hold all these flavors together in a pie plate. Bake until the egg is just set to then top with Romano cheese to then pop it back into the oven to melt this over all. A great dinner to savor...see what you think.
oil
2/3 c. shallots, ribbon cut
1/2 c. each smokey goat Gouda and Swiss cheese, coarse grated
1 - 5 oz. bag spinach, ribbon cut
5 eggs, whisked
1 1/4 c. half and half
1 t. salt
dash nutmeg
dash smoky Spanish paprika
2/3 c. Romano cheese, fine grated
Preheat oven to 350 degrees. Grease a pie plate. Saute shallots in oil and transfer to the pie plate. Layer Gouda/Swiss cheeses and spinach. In a large mixing bowl, whisk together eggs, milk, salt, nutmeg, and paprika. Pour over spinach covering all layers. Bake 55 min. or until knife inserted in the center comes out clean. Sprinkle Romano cheese over all to then pop back into the oven until it's well melted. Serve this along side a crisp green salad or cool cucumber slices.

Experience amazing flavors with this Best Pork Loin Stir Fry with Asian Sauce! Thinly sliced pork loin is stir-fried with a vibrant mix of broccoli, red bell pepper, and carrots, all coated in a delicious homemade Asian sauce. Quick, affordable, and bursting with flavor!
Ingredients: 1 lb pork loin, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 tablespoon ginger, grated. 1/4 cup low-sodium soy sauce. 2 tablespoons oyster sauce. 1 tablespoon hoisin sauce. 1 tablespoon sesame oil. 1 tablespoon cornstarch, dissolved in 2 tablespoons water. Cooked white rice for serving. Sesame seeds and green onions for garnish.
Instructions: Put vegetable oil in a wok or large skillet and heat it over high heat. Stir-fry the pork loin slices until they are browned and fully cooked. Take the pork out of the wok and set it aside. If you need to, add a little more oil to the same wok. Broccoli, red bell pepper, and julienned carrot should be stir-fried until they are soft but still crisp. Grate some ginger and mince some garlic and add them to the vegetables. Italian Cabbage Bean Soup
Robust...filling...nutritious...warming...this soup is all these things as well as easy to fix and comes together quickly. This is the way I like to cook ahead which makes more time for me to pursue my other interests. Give this a try...see what you think.
1 c. dry navy beans
1 bundle epazote
2 c. water
3 c. vegetable broth
2 bay leaves
2 t. salt
½ t. coarse black pepper
2 t. garlic, minced
oil
1 onion, diced
3 c. carrots, sliced thin
2 c. celery, sliced thin including leaves
1 bell pepper, seeded, diced
2 c. cabbage, chopped
1 T. Italian herb mix
1 - 14.5 oz. diced tomatoes with liquid
In a large soup pot, add beans, epazote, water, vegetable broth, bay leaves, salt, pepper, and garlic. Cover, bring it to a boil, then turn it down to a simmer. In a large fry pan, add oil to then saute onion, carrots, celery, and bell pepper. Once the onions are tender, add to beans. Then layer cabbage, Italian herb mix and tomatoes on top of beans which will float to the top. This helps keep the beans under the water to cook. When the beans are tender – maybe 45 min. - ladle up into deep soup bowls and enjoy.

How to cook the perfect Jacket Potato in the microwave
Russet potatoes are best. If you can’t get those potatoes, any other potatoes will do.
To microwave medium size:
Wash & dry ( wash under tap & use scrubbing brush if needed, then dry with tea towel)
Massage with oil (use whatever oil you’ve got, rub oil into potatoes in circular motions making sure to cover all of the potato)
Prick with a fork all over (think of the potato as having 4 sides. On each side thrust fork into potato top, middle and bottom)
Set microwave to medium (my microwave runs hot so I set it to medium for everything, if yours doesn’t you might need to set to high) for 3 minutes 30 seconds
Turn potatoes 180 degrees (from front to back)
Microwave on medium heat (see point 4) for 3 minutes 30 seconds
Use for to check if done (stab fork into potato, if there isn’t any resistance & it’s easy to insert fork, the potatoes cooked, if there’s resistance to inserting the fork, it isn’t done, continue to cook for 1 min intervals, checking using the fork every minute)
Rest for a minute (you can use this minute to cook all sorts of toppings)
If you don’t want to cook extra topping or you want cheap eats, add a ‘dollop’ (whatever you can afford) of butter, twist of salt & a twist of pepper (see seasonings blog for advice on cheapest way to do this)
