Smoky Spinach Quiche
Light...fluffy...tender...flavorful...piquant...this crustless spinach quiche has all that and foregoes the extra carbs a crust provides. Layer sauteed scallions, smoked goat Gouda and Swiss cheeses, a generous portion of spinach topped with a milk-egg-smoky Spanish paprika-nutmeg custard to hold all these flavors together in a pie plate. Bake until the egg is just set to then top with Romano cheese to then pop it back into the oven to melt this over all. A great dinner to savor...see what you think.
oil
2/3 c. shallots, ribbon cut
1/2 c. each smokey goat Gouda and Swiss cheese, coarse grated
1 - 5 oz. bag spinach, ribbon cut
5 eggs, whisked
1 1/4 c. half and half
1 t. salt
dash nutmeg
dash smoky Spanish paprika
2/3 c. Romano cheese, fine grated
Preheat oven to 350 degrees. Grease a pie plate. Saute shallots in oil and transfer to the pie plate. Layer Gouda/Swiss cheeses and spinach. In a large mixing bowl, whisk together eggs, milk, salt, nutmeg, and paprika. Pour over spinach covering all layers. Bake 55 min. or until knife inserted in the center comes out clean. Sprinkle Romano cheese over all to then pop back into the oven until it's well melted. Serve this along side a crisp green salad or cool cucumber slices.

Experience amazing flavors with this Best Pork Loin Stir Fry with Asian Sauce! Thinly sliced pork loin is stir-fried with a vibrant mix of broccoli, red bell pepper, and carrots, all coated in a delicious homemade Asian sauce. Quick, affordable, and bursting with flavor!
Ingredients: 1 lb pork loin, thinly sliced. 2 cups broccoli florets. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 2 tablespoons vegetable oil. 3 cloves garlic, minced. 1 tablespoon ginger, grated. 1/4 cup low-sodium soy sauce. 2 tablespoons oyster sauce. 1 tablespoon hoisin sauce. 1 tablespoon sesame oil. 1 tablespoon cornstarch, dissolved in 2 tablespoons water. Cooked white rice for serving. Sesame seeds and green onions for garnish.
Instructions: Put vegetable oil in a wok or large skillet and heat it over high heat. Stir-fry the pork loin slices until they are browned and fully cooked. Take the pork out of the wok and set it aside. If you need to, add a little more oil to the same wok. Broccoli, red bell pepper, and julienned carrot should be stir-fried until they are soft but still crisp. Grate some ginger and mince some garlic and add them to the vegetables. Stir-fry for another minute or two. Add the vegetables back to the wok with the cooked pork. Put soy sauce, oyster sauce, hoisin sauce, and sesame oil in a small bowl and mix them together. Cover the vegetables and pork with the sauce. Add the cornstarch mix to the wok and stir it around a lot until the sauce gets thicker. 13 Bean Soup
Heartwarming - belly warming too as this is a hearty filling meal to ladle up for the whole family or to take on the go as a work lunch to microwave.  Does well as a make ahead meal if you do your cooking on the weekend.  The 13 bean blend is in the bulk bins at my favorite grocer or bagged with the other dried beans.  Freezes well, too for plan ahead cooking.  See what you think...
2 c. 13 bean mix
7 c. water
4 c. vegetable broth
1 bay leaf
3 carrots, sliced thin
2 c. celery, sliced thin
1 lg. onion, diced
1 t. pepper
1 t. salt
1 - 15 oz. can tomato sauce
1 - 14.5 oz. can diced tomatoes with liquid
2 T. garlic, minced
Optional: 1 bunch epazote leaves - dried or fresh
In a large soup pot, add beans, water, vegetable broth, and bay leaf.  Cover, bring to a rolling boil.  Add epazote (optional), carrots, celery, onion, pepper, salt, tomato sauce, diced tomatoes and garlic.  Turn down to simmer for approx. 2 hours until the beans are tender.

🌟🌟 Japanese Inspired Ramen With An American Twist🍜🤤🌟🌟 . . . Ingredients: 1. One pack top ramen chicken flavor by Nissin. 2. Ramen noodle seasoning packet by Nissin. 3. Two boiled eggs. 4. Half pack of John Morrell sausages. Any Flavor.(There are two long sausages in one pack. I used one and chopped it up.). 5. One 12 oz pack of frozen broccoli. Any variety. 7. One teaspoon of extra virgin olive oil. 8. Half teaspoon of salt. 9. Two packs of soy sauce. (Or add soy sauce to broth as desired.) . . . Instructions: . 1.First I boiled two cups of water in pot. Then I added the ramen noodles and cooked for 3 minutes. Then I added a whole pack of ramen noodle chicken seasoning packet. Set heat to low. Set aside. 2. Next, in a separate pot, I added two eggs. Then I added water to cover them. Then I brought the eggs to a boil. After the eggs were boiling, I removed the eggs from the heat and let sit in water in pot for 6 minutes for soft boiled eggs. Removed from water. Peeled eggs. Cut both eggs in half. Set aside on a plate. 3. Meanwhile, added half a cup of water to another pot. Added in 12 oz frozen broccoli. Brought to a boil. Then steamed until de-thawed. Set aside. 4. Took John Morrell sausage link out of package. Chopped up into bite sized pieces. Cleaned same pot that I used to boil eggs out. Next put the John Morrell sausage pieces in that pot with one teaspoon of extra virgin olive oil. Brown all sides. Add about half of a cup of water to bottom of pot to deglaze the pot. This creates a gravy. Set aside. 5. Assemble. Add half your ramen noodles with noodle broth to a bowl. Then add half of your broccoli on top of the noodles. Put half the broccoli broth in your bowl as well. Add half of your John Morrell sausage pieces. Add half of the John Morrell sausage broth as well. Add one boiled egg that has been chopped into two halves. Sit on top of ramen. Add two small packets of soy sauce. Take pics if desired. Then mix together. If not salty enough, add half teaspoon of salt. Do same for other half of ingredients. 6. Enjoy. . . . How to cook the perfect Jacket Potato in the microwave
Russet potatoes are best. If you can’t get those potatoes, any other potatoes will do.
To microwave medium size:
Wash & dry ( wash under tap & use scrubbing brush if needed, then dry with tea towel)
Massage with oil (use whatever oil you’ve got, rub oil into potatoes in circular motions making sure to cover all of the potato)
Prick with a fork all over (think of the potato as having 4 sides. On each side thrust fork into potato top, middle and bottom)
Set microwave to medium (my microwave runs hot so I set it to medium for everything, if yours doesn’t you might need to set to high) for 3 minutes 30 seconds
Turn potatoes 180 degrees (from front to back)
Microwave on medium heat (see point 4) for 3 minutes 30 seconds
Use for to check if done (stab fork into potato, if there isn’t any resistance & it’s easy to insert fork, the potatoes cooked, if there’s resistance to inserting the fork, it isn’t done, continue to cook for 1 min intervals, checking using the fork every minute)
Rest for a minute (you can use this minute to cook all sorts of toppings)
If you don’t want to cook extra topping or you want cheap eats, add a ‘dollop’ (whatever you can afford) of butter, twist of salt & a twist of pepper (see seasonings blog for advice on cheapest way to do this)
