This vegan leek quiche tart has a healthy whole wheat olive oil crust and the savory flavors of leeks and tofu. It's a tasty and healthy choice for any meal. It's great for brunch, lunch, or a light dinner, and both vegans and non-vegans will love it!
Ingredients: For the crust:. 1 1/4 cups whole wheat flour. 1/4 cup olive oil. 3-4 tablespoons cold water. Pinch of salt. For the filling:. 2 medium leeks, thinly sliced. 1 tablespoon olive oil. 1 cup firm tofu, pressed and crumbled. 1/2 cup unsweetened almond milk. 2 tablespoons nutritional yeast. 1 tablespoon cornstarch. 1/2 teaspoon turmeric. Salt and pepper to taste. 1/4 cup chopped fresh parsley. Optional: vegan cheese shreds for topping.
Instructions: Turn on your oven and heat it up to 375F 190C. For the crust, mix the whole wheat flour, olive oil, and a pinch of salt in a bowl. Mix until it falls apart. One tablespoon of cold water at a time should be added until the dough comes together. Do not forget to cover the bottom and sides of the tart pan with the dough. Fork the crust, and bake it for 10 to 12 minutes, until it's just beginning to turn golden. Take it out of the oven and set it aside. Put 1 tablespoon of olive oil in a pan and heat it over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the sliced leeks. Break up the tofu and add it to a blender along with almond milk, nutritional yeast, cornstarch, turmeric, salt, and pepper. Mix until it's smooth. Add the tofu mixture to the pan with the leeks that have been sauted. Stirring all the time, cook for two to three minutes until it gets a little thicker. You can add chopped parsley now. Check the seasoning and make changes if needed. Fill the tart crust that has already been baked. Spread out evenly. If you want, you can top it with vegan cheese shreds. The tart should be baked in a hot oven for 25 to 30 minutes, or until the filling is set and the crust is golden brown. Take it out of the oven when it's done and let it cool a bit before cutting it. Enjoy while still warm!

This tofu quiche is a delicious and satisfying plant-based alternative to traditional quiche. With a flavorful filling of crumbled tofu and mixed roasted vegetables, all nestled in a crispy hash brown crust, it's sure to impress vegans and non-vegans alike! Perfect for brunch, lunch, or dinner.
Ingredients: 1 package firm tofu, drained and crumbled. 1 cup shredded hash browns, thawed. 1 cup mixed roasted vegetables such as bell peppers, onions, and mushrooms. 1/2 cup nutritional yeast. 1/4 cup unsweetened almond milk. 2 tablespoons olive oil. 2 tablespoons all-purpose flour. 1 teaspoon garlic powder. 1/2 teaspoon turmeric. Salt and pepper to taste.
Instructions: Preheat the oven to 375F 190C. In a bowl, mix together the shredded hash browns and 1 tablespoon of olive oil. Press the mixture into the bottom of a greased pie dish to form the crust. Bake the crust for 10 minutes, then remove from the oven and set aside. In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the crumbled tofu and cook for 5 minutes. Add the roasted vegetables to the skillet and cook for an additional 2 minutes. In a small bowl, whisk together the almond milk, nutritional yeast, flour, garlic powder, turmeric, salt, and pepper. Pour the almond milk mixture over the tofu and vegetables in the skillet. Stir to combine and cook for another 2 minutes, until the mixture thickens slightly. Pour the tofu and vegetable mixture into the prepared hash brown crust. Bake the quiche for 25-30 minutes, or until set and lightly golden on top. I made a vegan quiche for the first time...filled with tofu, mushroom, tomatoes and kale. I wish I had tried it sooner! It’s also gluten free. The only thing was that the filling didn’t hold together as firmly as I thought quiches are supposed to be but that might be the type of tofu used. However, I didn’t mind the texture at all as it had a nice creamy, “cheesy” flavour with the added nutritional yeast. But if you want it more sliceable, the recipe includes an extra 1-2 tbsps of flour. Let me know if you try it! 😊 (Closeups in the instastories) . Gluten-free, vegan Quiche . Crust: 140g/about 1 cup all-purpose gluten free flour 1 tbsp/15g tapioca starch (or sweet rice flour) 1 tbsp/15g sugar 1/2 tsp psyllium fiber or xanthan gum (omit if already on flour blend) 1 tbsp oil 1 tbsp ground flaxseed mixed with 2 tbsps water 2 tsps lemon juice or apple cider vinegar 2.5 tbsps water . Mix all the dry ingredients in a bowl then gradually add oil, flaxseed mixture, lemon juice and water. Mix until a firm but not sticky dough forms (add a little extra water if needed). Press dough into a 7 inch tart pan and set aside. . Filling: 3 mushrooms, sliced and browned in hot pan 300g/10.5oz firm tofu, drained (extra firm if you can find it) 2 tsps all purpose seasoning 2 tsps nutritional yeast 2 cloves garlic, minced 1 stalk scallions, slice (plus extra for garnish) 1-2 tbsps gluten-free flour Handful of kale 4 grape tomatoes, sliced Black pepper, to taste . Blend together the tofu, garlic, scallions, nutritional yeast, flour and seasonings until smooth and creamy. Stir in kale then pour into the tart shell, spreading evenly. Top with tomatoes, mushrooms and extra scallions. Bake at 180F for 15 to 20 mins. Cool slightly before slicing (Who am I kidding? Raw Vegan Quiche! For the crust, I used Russel's recipe: 1 tbsp flaxseed, ground 1 cup cashews, soaked 2 hours 1/4 cup macadamia nuts, soaked 2 hours 2 tsp nutritional yeast 2 tsp @marylebonegroup 1/4 tsp salt 3 tbsp water 1 tbsp lemon juice Here's what I used for the filling: 1 cup of coconut meat ¼ tsp paprika ¼ tsp @organicule turmeric ¼ tsp black salt 2 tsp psyllium husk Also added some homemade tempeh bacon, microgreens from @thefarmasia and red radish. Ok so the tempeh isn't technically raw but everything else is! I'm supposed to make a baked quiche for my @foodfutureinstitute assignment but since i ran out of all purpose flour, I decided to make a raw vegan one instead. Loved the taste - and no icky feeling I usually get when eating baked quiche.
