This vegan leek quiche tart has a healthy whole wheat olive oil crust and the savory flavors of leeks and tofu. It's a tasty and healthy choice for any meal. It's great for brunch, lunch, or a light dinner, and both vegans and non-vegans will love it!
Ingredients: For the crust:. 1 1/4 cups whole wheat flour. 1/4 cup olive oil. 3-4 tablespoons cold water. Pinch of salt. For the filling:. 2 medium leeks, thinly sliced. 1 tablespoon olive oil. 1 cup firm tofu, pressed and crumbled. 1/2 cup unsweetened almond milk. 2 tablespoons nutritional yeast. 1 tablespoon cornstarch. 1/2 teaspoon turmeric. Salt and pepper to taste. 1/4 cup chopped fresh parsley. Optional: vegan cheese shreds for topping.
Instructions: Turn on your oven and heat it up to 375F 190C. For the crust, mix the whole wheat flour, olive oil, and a pinch of salt in a bowl. Mix until it falls apart. One tablespoon of cold water at a time should be added until the dough comes together. Do not forget to cover the bottom and sides of the tart pan with the dough. Fork the crust, and bake it for 10 to 12 minutes, until it's just beginning to turn golden. Take it out of the oven and set it aside. Put 1 tablespoon of olive oil in a pan and heat it over medium-low heat. It will take about 5 to 7 minutes of cooking after adding the sliced leeks. Break up the tofu and add it to a blender along with almond milk, nutritional yeast, cornstarch, turmeric, salt, and pepper. Mix until it's smooth. Add the tofu mixture to the pan with the leeks that have been sauted. Stirring all the time, cook for two to three minutes until it gets a little thicker. You can add chopped parsley now. Check the seasoning and make changes if needed. Fill the tart crust that has already been baked. Spread out evenly. If you want, you can top it with vegan cheese shreds. The tart should be baked in a hot oven for 25 to 30 minutes, or until the filling is set and the crust is golden brown. Take it out of the oven when it's done and let it cool a bit before cutting it. Enjoy while still warm!

Leek tart
Once I've tried a leek tart at my friend's. It was so good that I've decided to give it a go as well.
I'm using ready for use dough (available in all supermarkets), 3 large leeks, 1 double cream (18% fat) mixed with egg, ham and cheese on the top, salt and pepper.
***My tip***
Bake the crust first for about 10min, don't forget to make some wholes with fork before putting dough in the oven. Then add all the ingredients and bake it for another 25min in 180deg.
