How to cut costs on a gluten-free diet
Actually several of these principles work on anyone's diet, or another type of allergen diet, but gluten free is what I know and what I serve.
My household consists of me and my partner; she's gluten intolerant and I am not. Our grocery budget is $120 a week (including standard household consumables like soap, paper towels, etc. that I also buy at the grocery store) and we could actually tighten that up more if we worked even a little harder at it. I do most of the cooking and shopping for our household so I thought I would share what it is I'm doing.
Eat as many "regular" items as possible
If there is a gluten free version of an item and a "regular" one that contains wheat, normally the gluten free version is twice the price. So one simple way to cut costs is to buy fewer of them. Some examples are packaged GF cookies and crackers, frozen prepared dinners, canned soups that say gluten free in big letters... basically anything that is marketed as GLUTEN FREE and says GLUTEN FREE in great big letters on the front of the package.
There are lots of items that are labeled "gluten free" but aren't marketed as such. Ketchup is often labeled gluten free somewhere on the package, but there's no such thing as "regular" ketchup that normally contains gluten. Those are fine to buy.
The worst offenders are bread and baked goods in general. Gluten free bread is very expensive. Don't buy things like frozen prepared cakes; gluten free cake mix or brownie mix is the better buy.
Here are some "regular"/inexpensive foods that are naturally gluten free:
rice; avoid pre-seasoned rice mix things
potatoes [regular and sweet potatoes]
corn tortillas (plain corn taco shells and tortilla chips are also easy to get GF)
all manner of fruits and vegetables [fresh, canned, frozen w/o sauce/other extras]
peanut butter
milk and dairy products in general
beans; dry or in cans
meat, especially plain fresh or frozen meat without extra marinades, seasoning, or obviously breading
fish [frozen and canned are least expensive]
I still buy special gluten-free stuff, but
it isn't the bulk of our diet
when reasonable, I let my partner eat them and I eat the regular version (e.g. I still buy wheat sandwich bread for myself)
i put in extra work to find the lowest price; comparing different stores, couponing, stocking up when I find a deal, etc.
Speaking of which,
Figure out what stores are the cheapest near you
A key part of this sentence is "near you." I do most of my grocery shopping at two stores that are 10 or 15 minutes away from my house. They are on the same street and in close proximity of each other. As you compare prices, keep in mind which places are realistically convenient enough to shop at based on where you live, work, and spend time.
I prefer a data driven approach and so have a spreadsheet with the prices of lots of items I buy. Doing it this way, you find that while no store has the lowest price on everything, it's easy to find a store that has an overall lower price on most items.
When comparing prices, remember to compare based on the cost per ounce or cost per pound or similar, not just the package.
In my experience, shopping at more than one store is the easiest way to balance many factors including price, selection, convenience, and quality. Most weeks I go to these two stores:
Wegmans: huge selection of items, low prices on some things, but higher to middling on others; lots of choices for GF items and things like special spices or vegetables that I need just once in a while
Aldi: smaller selection, but easily the least expensive on most regular groceries
I used to live near Publix, which is expensive overall but had a big selection and lots of BOGO sales where they would sell certain items at a loss. I would stalk the sale paper online every week and if they had something I ate at a low cost, I would go to Publix just to buy those items in quantity and then leave to go get the rest of my groceries at Aldi or somewhere else cheaper.
Use sales to stock up on stuff you eat when it's cheaper
For example, If I read the sale paper for the Aldi and I notice butter is $3/lb or less, when it's usually more like $4, I'm buying at least two if not three or four packages and putting some in the freezer, even if we're not low on butter.
This goes double and triple for any special gluten free item. Stock up.
Don't stock beyond your means. Start small as you study your household's patterns of consumption. Start with items that are not perishable: things in cans and boxes, already-frozen items. Also, only stock up on stuff that you know your family already likes.
When you are planning meals to eat, choose based on what you have stocked; shop your house first! Then go to the store to fill in the gaps.
Be prepared to eat at home on days you don't want to cook.
There are always going to be some days when you can't or don't want to cook. You get sick, you're too tired, whatever.
Eating restaurant food (takeout, delivery, or dine in) is extremely expensive and comes with a lot of risks regarding gluten. This is best avoided. Eating out will kill your budget faster than anything else you could do.
This is one time when I don't mind buying a specialty GF item, because while they do cost more than the meals I normally make, they are cheaper than eating out and also safer from a gluten standpoint. I don't mind spending an extra dollar at the store to insulate me from spending ten dollars later.
Some ideas for solving this problem:
naturally GF convenience food that can be tossed in the oven or microwave (at Aldi I have found GF frozen shepherd's pie, sometimes can get frozen tamales, instant mashed potatoes, canned soup etc.)
build a repertoire of meals that are made from "ingredients" but are less work than whatever you normally do; what this means is up to you, for some people it's a dump-in-instant-pot type meal, or maybe a microwaved baked potato and a bag of frozen veggies... at my place I make nachos once a week because they're extra easy.
special GF convenience items like frozen pizza or lasagna
Cheapest of all: make a lot of something on purpose and freeze meal-size portions for later. Soups, stews, and casseroles are all top choices. You can also do things like brown a lot of ground beef and then freeze it; later, you can make something like spaghetti sauce or sloppy joes and skip that first step. (Note that some people do ALL their cooking with this in mind and cook just once or twice a week, or even just once or twice per month, and eat out of the freezer the rest of the time.)
Keep a growth mindset. It might be that right now you are eating out a lot and your skills in the kitchen aren't great. Buying more convenience foods and assembling them at home still saves a lot of money. Once that's comfortable and you're used to the routine of getting food from the store then you can expand your repertoire of simple meals from normal ingredients, which builds your confidence so you can try making more things from scratch. Eating is complicated and eating with allergies/intolerances doesn't help. But it's doable. It can be done.
If I wanted to cut costs in my own household and reduce that $120 budget, I would...
buy fewer sodas and drinks in general.
set strict limits on GF bread. (like I'll only buy 1 loaf a month or something) work with partner to make sure she always has food for lunch and therefore doesn't care to make a sandwich.
Try reducing partner's cereal consumption; make other equally easy breakfast choices available; cereal is expensive
cook and freeze more homemade food and buy less convenience food.
prioritize cheaper fruits and vegetables. Decide on a price per lb limit that I want to stay within and stop buying stuff that is more than that (or buy them very infrequently). Things like apples, carrots, onions, bananas, cabbage, and broccoli tend to be cheaper
do the same thing for meat and also eat significantly less meat.

"He will bless those who fear the Lord- small and great alike."Â Psalm 115:13 What will be written on your epitaph? How do you want people to remember you? What type of legacy will your life leave behind? I interviewed a very successful and powerful man one time for a magazine when this question came up. The man ran an international business that is a household name to all. He was a professed Christian, but he had difficulty answering my question. "I always knew someone would ask that question some day. I am not sure I am any more prepared to answer it now either," was the man's answer. He grappled for a few nice words, but it was clear he had not seriously considered his life much beyond his business success. It is said of George Washington Carver that he got up early in the morning each day to walk alone and pray. He asked God how he was to spend his day and what He wanted to teach him that day. Carver grew up at the close of the Civil War in a one-room shanty on the home of Moses Carver - the man who owned his mother. The Ku Klux Klan had abducted him and his mother, selling her to new owners. He was later found and returned to his owner, but his mother was never seen again. Carver grew up at the height of racial discrimination, yet he had overcome all these obstacles to become one of the most influential men in the history of the United States. He made many discoveries with the use of peanuts and sweet potatoes. However, after he recommended farmers to plant peanuts and sweet potatoes instead of cotton, he was led into his greatest trial. The farmers lost even more money due to the lack of market for peanuts and sweet potatoes. Carver cried out to the Lord, "Mr. Creator, why did You make the peanut?" Many years later, he shared that God led him back to his lab and worked with him to discover some 300 marketable products from the peanut. Likewise, he made over 100 discoveries from the sweet potato. These new products created a demand for peanuts and sweet potatoes, and they were major contributors to rejuvenating the Southern economy. As he made new discoveries, he never became successful monetarily, but he overcame great rejection during his lifetime for being black. He was offered six-figure income opportunities from Henry Ford, and he became friends with presidents of his day, yet he knew what God had called him to do. His epitaph read: He could have added fortune to fame, but caring for neither, he found happiness and honor in being helpful to the world." Get creative with salads "The Salad Lab: Whisk, Toss Enjoy!" has lots of recipes for flavorful and unique salads that can easily be a meal.

Itâs the time of year when many of us enjoy eating a salad, especially on a hot, humid day. Thatâs why May was proclaimed as National Salad Month. But what exactly is a salad?
What comes to mind: Caesar, Waldorf, potato, tuna, pasta? Some even think of it as rabbit food, which perhaps is true, if you think about how salads were prepared back in the day âŚiceberg lettuce, a slice of onion and cucumber, a wedge of tomato, some shredded carrots, and perhaps an olive or two. Today, many restaurants, especially fast-food restaurants, still prepare it this way.
In years past, salad was served as an appetizer or side dish, with little creativity in its preparation. Remember the salads that included cubes of green Jell-O? Perhaps, I am dating myself.
Fast forward, and salads today, quite often, take center stage as meals, using a variety of greens, many unbeknownst to most in the past. Arugula seems to be popular and has become a favorite of mine. Watercress, Bok choy, endive, kale and a plethora of lettuces have taken over from plain old iceberg.
Fruits, both fresh and dried, heirloom vegetables (roasted ones add great flavor), seeds, beans, grains, nuts, meats, fish, cheese and easily made, delicious dressings are now part of the ingredient repertoire.
Salads are a time-poor cookâs secret weapon for putting a healthy and delicious meal on the table. They offer endless possibilities; go to your local farmers market and introduce yourself to some unfamiliar greens and vegetables. Ask local farmers for some suggestions, too.
With some creativity, a simple, easy-to-prepare dish becomes a delicious and healthy lunch or dinner. But remember, some salad dressings can add those unnecessary, and unwanted calories.
Many years ago, I met Wiley Mullins (aka âThe Salad Manâ), author of âSalad Makes the Meal,â published in 2008. He inspired me to add more dinner and lunch salads to my diet. It is quite easy with a cookbook that offers inspiration.
Fresh off the press is âThe Salad Lab: Whisk, Toss, Enjoy!â by Darlene Schrijver (2024, Simon Element, $32.50). It is a welcome addition to my collection, especially with all the local produce becoming available.
You might be thinking you donât need a cookbook to make salad. Perhaps you donât if you choose not to go beyond tossed greens and a couple of other ingredients. Why not take your salads to the next level, mixing textures and flavors. Youâll learn to incorporate roasted, grilled, sauteed and pickled vegetables, as well as grains, dried and fresh fruit, beans and a variety of pastas.
Before getting into the recipes, the author shares her salad philosophy; for example, embracing variety and experimentation.
She writes: âThe experiment section follows every recipe in this book. Itâs where I recommend how to swap out polarizing ingredients, seasonal produce, animal products for plant-based products and more.â
The hints on how to shop and what to shop for to make the perfect salad are helpful. I found the âPantry Control Groupâ interesting. Here, she has a column listing 16 ingredients, for example salad toppings. Then, two columns follow, one labeled basic, and one luxurious. Under basic she lists pita chips, tortilla chips, Italian bread crumbs, and under luxurious is where she lists plantain chips, sweet potato chips, cheese crisps and rice crackers.
I had the opportunity to interview Darlene.
Q: Why are some people afraid to be creative when making a salad. They just use the same old Iceberg lettuce, a few cherry tomatoes, some onion, etc.?
A: I think there are a few reasons:Â Historically Iceberg (and if you were lucky in the summer romaine) was all you could get. Today with overnight delivery networks, hydroponics, local greenhouses, expansion of farmers markets, home gardening, plus trending farm to table restaurants, the options are endless.
Like mac and cheese, some foods are just comforting. For salads, you see that with the resurgence of âthe wedgeâ salad in restaurants.
Increases in produce prices are no joke. Itâs safer to use what you know. I really support substituting what is in season, on sale, or what you have on hand, and then trying a couple of new ingredients to discover what you like. I really encourage people to experiment.
Q: Some people donât prepare salad at home because it doesnât taste like the ones they have enjoyed at a restaurant. Why is this?
A: Fresh herbs! I canât emphasize this enough, such a game changer, it brings out the freshness and flavor and makes your salad pop!
Salt, I am a huge Maldon flake sea salt fan. Season your salads with freshly cracked pepper and flake sea salt (it is in almost every recipe). It enhances the flavors.
Say no to bottled dressing, make your own! It makes a huge difference. No preservatives, bad tasting oils or chemical flavors when you make it yourself. You can adjust the level of garlic, mustard and heat/spice to your personal taste.
Q: Salads are sometimes not as healthy as one might think. Psychologically, people eat a salad and think they will lose weight. What suggestions do you have regarding this?
A: You are absolutely correct, some salads (like ones with french fries on top) are not going to put you in a calorie deficit or lower your bad cholesterol. I am not a nutritionist nor dietitian, and anyone going on any sort of health or weight loss journey should educate themselves on that topic.
My platform is about having fun making salads, and hopefully a side benefit is people enjoy, experiment and create more meals with fresh vegetables and protein. I donât know too many people that have gotten sick from including a larger variety of vegetables in their meals (unless they have allergy issues and there are always substitutes).
Q: What separates your book from the other salad cookbooks in the market?
A: There is something for everyone! Our âsalad communityâ is very diverse, and I have included an experiment section for each recipe that has some substitution recommendations for vegans, vegetarians and hard-to-find ingredients.
From beginning cooks to experienced ones, I have recommendations on how to fill your pantry full of ingredients to have on hand from must haves to the luxurious for a salad. It includes my style of recipes for most of the favorites you see at family gatherings and on menus, destination salads from different states like Hawaiian Poke salad, and countries like a West African style citrus and avocado salad.
There are seasonal and holiday salads, including one that is a whole Thanksgiving dinner, and the perfect colorful wedding salad with both roasted and fresh vegetables for everyone, including vegans (itâs the bookâs cover), a few fabulous celebrity favorites that helped launch my platform, plus my favorite section called, âEverything is a Saladâ where I have created favorites like fish tacos, grinder sandwiches, and pizza into a salad too.
My goal in writing this book was to share the fun and joy of preparing your own salads, and experiencing them with others. I tell my kids, everyone needs a hobby, why canât it be making salads? Experiment!

The headnote says: âWho doesnât love Doritos? Called âa swinging Latin sort of snackâ when first advertised in the 1960s, Doritos are still the number one chip in the United States today. Fun fact: the name combines the Spanish words doradito and dorado, both of which describe fried golden things. They are considered comfort food for some. and almost everyone has some sort of teenage flashback related to these cheesy corn chips. This salad recipe is a little trip down memory lane. I put the Salad Lab twist on the dressing and replaced the traditional bottled, syrupy Catalina dressing (yikes) with this lighter homemade one (yum). We also enjoy a little more spice in our house, so I used chorizo and pickled jalapeĂąos instead of the classic âtaco meat.ââ
Serves 4 as a meal or 6-10 as a side
Ingredients:
START OUT
1 ½ cups fresh Mexican chorizo (not cured), casings removed if necessary
Ice water
Âź cup diced red onion (1â4-inch pieces)
1 cup quartered cherry tomatoes, or substitute what looks best at the market
WHISK
1 teaspoon pressed garlic
1â3 cup avocado oil
Âź cup red wine vinegar
Âź cup ketchup
3 tablespoons grated yellow or red onion
2 tablespoons sugar
1 teaspoon Worcestershire sauce
1 teaspoon celery seed
1 teaspoon sweet paprika
1 teaspoon chili powder
Flaky sea salt and freshly cracked black pepper
TOSS
4 cups chopped iceberg lettuce (bite-size pieces)
4 cups chopped romaine lettuce (bite-size pieces)
1 ½ cups crushed Nacho Cheese Doritos (bite-size pieces)
1 cup cooked or rinsed and drained canned pinto beans
1 cup cubed avocado (½ inch pieces)
1â3 cup grated Monterey Jack cheese
1â3 cup grated medium-sharp cheddar cheese
Ÿ cup drained pickled jalapeùo slices
Nacho Cheese Doritos, for serving (optional)
EXPERIMENT: Try substituting this dressing with the Cilantro Lime Dressing on page 251. There are so many canned beans available now; experiment with black beans, Great Northern beans or black-eyed peas. Use any lettuce you like or already have. If you donât like spicy or are not a chorizo fan, substitute ground turkey or beef prepared with taco seasoning. If you like to eat the salad as a dip, donât crush the chips and toss them in; use them as your spoon instead.
Directions:
START OUT: Heat a medium skillet over medium-high heat. Line a plate with paper towels. When the pan is hot, add the chorizo. Cook, stirring occasionally and breaking up the meat in small, bite-size pieces using a spatula, until well browned and cooked through, 6 to 9 minutes. Transfer to the prepared plate with a slotted spoon to drain. Meanwhile, fill a 500-ml beaker or a small glass bowl halfway with ice water and add the diced onion. Soak for 10 minutes, then drain and pat the onion dry. Place the tomatoes in a colander and gently press down with a spoon to drain off excess liquid.
WHISK: Rinse the pressed garlic in a very fine mesh strainer and shake off any excess water. In a large salad bowl, combine the garlic, oil, vinegar, ketchup, grated onion, sugar, Worcestershire sauce, celery seed, paprika, and chili powder and season with salt and pepper. Whisk until well combined, then taste and adjust the seasoning if needed.
TOSS: In the bowl with the dressing, add the iceberg lettuce, romaine lettuce, crushed Doritos, beans, avocado, jack cheese, cheddar cheese, jalapeĂąos, chorizo, diced onion, and tomatoes. Toss until all the ingredients are evenly combined and coated with dressing and serve. If you want to get fancy, garnish with extra chips around the bowl.
ENJOY: Iâm having it with a merlot or soda.
Red, White, and Blue Potato Salad

The headnote says: âEveryone loves potatoes. The average American eats 120 pounds of potatoes each year. Thatâs double the amount of the next largest consumed vegetable, lettuce. Hey, thatâs a lot of salads; maybe I should make more potato salads? This one is for all the potato lovers out there looking for a great alternative to the classic mayonnaise-based potato salad (find my version on page 48). I love the rich buttery texture of the mixed potatoes paired with the Meyer lemon, dill, and chive dressing. Itâs one of my favorites to accompany a meal on a hot summer day.â
Serves 8-12 as a side
Ingredients:
START OUT
Flaky sea salt
3 pounds mixed baby red, Yukon gold, and purple potatoes
Ice water
½ cup diced shallot (1â4-inch pieces)
WHISK
½ cup extra virgin olive oil
Ÿ cup fresh Meyer lemon or regular lemon juice (remember to zest first)
Âź cup finely chopped fresh chives
3 tablespoons finely chopped fresh dill
2 tablespoons finely chopped fresh flatleaf parsley
1 teaspoon white wine vinegar
1 teaspoon lightly packed grated Meyer lemon zest or regular lemon zest
Flaky sea salt and freshly
cracked black pepper
TOSS
Flaky sea salt, for serving (optional)
Directions:
START OUT: Fill a large pot half full of water and lightly salt the water. Over high heat, bring to a boil, add the potatoes, then cover and lower the heat to medium low or a soft boil. Cook until you can easily pierce the potatoes with a fork all the way to the center, 15 to 20 minutes. Remove the potatoes from the pot, drain, and let cool. Cut into quarters or 3â4-inch pieces.
Meanwhile, fill a 250-ml beaker or a small glass bowl halfway with ice water and add the shallot. Soak for 10 minutes, then drain and pat the shallot dry.
WHISK: In a large salad bowl, combine the oil, lemon juice, chives, dill, parsley, vinegar, and zest and season with salt and pepper. Whisk until well combined, then taste and adjust the seasoning if needed.
TOSS: In the bowl with the dressing, add the potatoes and shallot. Gently toss until all the ingredients are evenly combined and coated with dressing. Let sit covered at room temperature for 20 minutes, or refrigerate overnight, so the potatoes can absorb the dressing (this salad can be kept in the refrigerator for up to 5 days). Serve cold or at room temperature, garnished with flaky sea salt, if you like.
ENJOY: Iâm having it with sparkling wine or lemonade.
EXPERIMENT: Head to your local farmersâ market and try the many varieties of potatoes available there, as they often have the best flavor. I have made this many times with all baby red potatoes. You can also substitute sweet yellow or red onions if shallots are not available. Donât forget this one for Independence Day!

World Nutella Day
Happiness is a warm taste of hazelnut spread on a warm flaky pastry! And that hazelnut spread is known across the world as its brand name, Nutella. This delightful, chocolatey hazelnut spread can be slathered on toast or baked right into the center of pastries or other baked goods.
This might not be the case for everyone, but many people have been known to consume it simply with a spoon or finger! And others have certainly found creative ways to eat it, using pretzel sticks or even potato chips to get their taste of it. It seems like everyone who is a fan has their favorite way to get their Nutella fix.
And World Nutella Day is the perfect day to share all of those wonderful ideas with the world!
History of World Nutella Day
Nutella, released to the world by the Fererro family under its current name in the mid-1960s, has roots that go back to the early 1800s. âGiandujaâ was the name for a sweet, chocolate hazelnut confection that was invented in Turin, Italy during the reign of Napoleon. Its creation was motivated by the fact that there was a shortage of cocoa supplies at the time, so a chocolatier added some hazelnuts to stretch the chocolate.
Pietro, the father of the Ferrero family, Pietro, owned a bakery in Alba, Italy, a town that was known for its production of hazelnuts. Originally selling the treat in large blocks (called pasta Gianduja), Pietro then had the idea to begin selling a creamy version of the treat, known as Supercrema Gianduja.
When Pietroâs son, Michelle, decided to ramp up production of the concoction, he changed the recipe slightly and it received its new name: Nutella. The first jar was sold in 1964 and it has been a delightfully popular treat throughout Europe ever since. By the mid-1980s, the Fererro family was importing it into the United States and now it has become a staple in many places all over the world.
World Nutella Day was first celebrated in 2007. The idea for the day came from Sara Rosso who was an American blogger who was living in Italy at the time. What made her think to start World Nutella Day? Why it was her love of the product of course! The fans of Nutella embraced the day with gusto and took the joy of the day to social media around the world.
2015 saw the transfer of the day from Sara Rosso to the company that makes Nutella, Ferrero. Making this transfer allowed for the day to become even larger and ensured its longevity. The company has done some pretty creative things to support World Nutella Day. There is a website (nutelladay.com) to keep current on all of the plans for the holiday. It is even possible to sign up for a chance to become the Chief Nutella Ambassador!
World Nutella Day Timeline
1926 Pietro Ferrero moves to Alba, Italy
Pietro Ferrero is a candy baker and when he moves to Alba, he finds hazelnuts to be an abundant supply. Noticing that local workers are often eating sandwiches made of tomatoes, cheese and olive oil on bread, Ferrero gets creative and comes up with a thick spread made from chopped hazelnuts.
1946 Ferrero sells Giandujot paste
Coming from an Italian town that is known for the production of hazelnuts, Fererro begins producing a hazelnut and cocoa paste. It comes in a loaf and is meant to be sliced and placed on bread. The name Giandujot is in honor of a carnival character local to the area.
1951 SuperCrema is sold
With an improved recipe to make the âGiandujotâ paste more tasty and spreadable, the Ferrero company begins selling SuperCrema in a jar instead of in the blocks that it originally came in which had to be sliced.
1964 First jars of Nutella are marketed
After time is spent perfecting the recipe blend of hazelnuts and cocoa cream, the first jar of Nutella leaves the factory on April 20. It is put on the market in Italy and the brand becomes almost an instant success.
1983 Nutella arrives in America
While most of Europe has experienced Nutella by this time, Nutella only arrives in the United States after it hits Australia. In the US, it is originally marketed as a delicious addition to a healthy breakfast. It becomes super popular and continues to be to this day.

Really, there is no wrong way to celebrate World Nutella Day. No matter how you spread it, melt it, share it or hoard it, the joy that comes once you taste it makes this one of the best world days ever! And this is a true statement, even when Nutella is enjoyed on other days as well. Because any day with Nutella in it is the best day ever!
