Maybe you’re just coming into work, and some thoughtful soul has laid out a tray of chocolate cupcakes, each with their own design and one waiting for your mouth to wrap lovingly around it and fade away on a cocoa fueled holiday. However you like your chocolate cake, National Chocolate Cake Day gives you an excuse to indulge as deeply as you’d like!
History of National Chocolate Cake Day
Chocolate cake has been with us just over 150 years, having first come on the scene in 1764, when it was discovered that grinding cocoa beans between heavy stones produced cocoa powder, which could then become chocolate. 60 years would pass before Conrad Van Houten discovered a method by which he could mechanically extract fat from the cacao liquor which produced cacao butter. Long story short, this man is the reason that chocolate is actually affordable, and we all have him to thank for it!
From this point forward the types of cake and techniques involved in making them just kept expanding, so there are dozens of kinds of cake on top of the original ‘traditional’ chocolate cake. From the Black Forest cake with its cherries to the German Chocolate Cake with its rich coconut pecan frosting, new types are being invented all the time, and chocolate still reigns as King.
In the early days, people didn’t consume chocolate as a solid snack we do today in the form of bars or cakes. During the era of the 1830s and 1840s, it was primarily a drink that you mixed with water. Furthermore, it wasn’t even sweet. The original chocolate drinkers would often make up a savory, almost bitter beverage that they would typically consume early in the morning.
The first verifiable recipe for chocolate cake appeared in Eliza Leslie’s 1847 cookbook. The actual formula, however, wasn’t quite what we’d recognize as a chocolate cake today. Leslie’s recipe called for chopped pieces of chocolate inserted into a plain sponge, instead of adding cocoa powder to the mix itself. You can imagine, though, how delicious this thing would have tasted. There would have been tiny chunks of melted chocolate throughout its core, providing a melt-in-the-mouth experience people would still very much enjoy today.
Over the years, authors and cooks such as Maria Parloa added their own twists on the chocolate cake. They began incorporating all of the trappings of the modern version we’d recognize today. First came the frosting, followed by the inclusion of de-fatted cocoa powder into the batter mix. After that came a range of chocolatey fillings, designed to make the dessert even more delightful.
By the 1920s, the humble chocolate cake had become mainstream, and manufacturers began to sell the recipe outright. O. Duff and Sons released the first boxed chocolate cake, ready to eat – no baking required. And in 1947, Betty Crocker released a pre-made chocolate cake mix. Ultimately, making chocolate cake became more straightforward. Almost anyone could do it, even if they lacked experience in the kitchen.
Chocolate cake became a part of the culture increasingly throughout the late twentieth century and early 21st, leading to the development of National Chocolate Cake Day. This particular day was designed as an opportunity for chocolate and cake lovers to pay homage to this chance invention. Remember, it was only with the discovery that sweetening chocolate created a delicious dish that we even have this most beloved of desserts.
National Chocolate Cake Day Timeline
1764 Cocoa beans are ground between stones to make chocolate
Dr. James Baker financially backs the production of grinding cocoa beans to make chocolate, which would eventually become an important ingredient in chocolate cake. This is the beginning of the company still known as Baker’s chocolate.
1847 First recipe for chocolate cake is printed
The Ladies Receipt Book by Eliza Leslie (of Philadelphia, Pennsylvania, USA) is the first to print a recipe for chocolate cake. While other cakes containing chocolate were referred to or known of previously, this is the first recorded recipe for the public.
1948 Pilsbury launches first boxed chocolate cake mix
Motivated by making life easier for women in the kitchen, the idea for a powdered cake mix comes in the 1930s, but is set aside for a time due to WWII. It is picked up again after the war and Pilsbury is one of many companies trying to market the product.
1957 First published recipe for German Chocolate Cake appears
Created in the United States using the “German’s” brand of chocolate, this cake covered in coconut-caramel frosting is featured in the Dallas Morning Star newspaper.
1967 First Ding Dongs are produced
Making little chocolate cakes accessible to just about anyone, even on the go, Hostess Brands supplies North America with these little cream filled, chocolate covered cakes. About the size of hockey pucks (but a bit taller), in Canada they are known as King Dons.
How to celebrate National Chocolate Cake Day
The way to celebrate National Chocolate Cake Day is deliciously simple and perfect. 
Throughout your day, incorporate as many types of chocolate cake as you can! Take chocolate cake batter and use it to make chocolate pancakes in the morning, topped with caramel syrup and whipped cream. Use the rest of the batter to produce chocolate cupcakes, place a strawberry in the center of each one and take them to work to share with your workmates.
Then when you get home, go ahead and go all out and serve yourself up a big old slice of chocolate cake for dessert, and then eat it first. After all, when it comes to dessert you really shouldn’t wait, who knows what could happen during dinner! National Chocolate Cake Day is all about this delicious treat, so don’t make yourself shirk one opportunity to wrap your lips around another delectable bite of these cocoa-rich concoctions!
Don’t forget, though; National Chocolate Cake Day is an opportunity for you to be adventurous. You don’t have to stick with today’s boxed cakes or even modern recipes. What about digging out Eliza Leslie’s original 1847 cookbook and trying the very first official chocolate cake for yourself? Pure indulgent projecting. It was a really shitty day.

The house was eerily quiet when Aymeric arrived home. Synnove had the day off, and normally on such a day the windows would be thrown open to let in the breeze, an orchestrion merrily playing away while she did chores or prepped dinner and the carbuncles clattered throughout the house and yard.
He opened the door and stepped inside carefully, eyebrows rising a bit at the late afternoon shadows that filled the interior. Faintly, he could hear the orchestrion, but the volume was too low to make it out. He hung his coat on the rack and toed off his boots, then shoved his feet into his house slippers and padded further into the house, in the direction of the den.
The door to the den was cracked, just a hair, and he rapped his knuckles against the wood. “Synnove?” he called quietly.
An absolutely miserable groan was his answer.
Aymeric pushed the door further open and peered inside. Almost immediately, he felt his heart give a pang.
Synnove was stretched out on the couch, chest flat against the seat but her hips twisted so her legs, twisted around a blanket, were sideways in the way that meant she was trying to relieve pressure or pain in her lower back. Her face was wan and her skin pale, and she cracked an eye open to stare at him, bleary and pained. Most telling about her current state, however, was Ivar pressed up against her pelvis and purring furiously, with little Amandina plopped on her head, right on her temple, and doing the same.
“Oh, sweetheart,” he said fondly, padding over to her. Once he reached the couch he bent over, reaching behind Synnove to press his knuckles into her lower back while he kissed her forehead. She groaned in relief as he roughly massaged the tense muscles, ruthlessly loosening them.
“Fuck monthlies,” his lady growled.
“Hit you like a rampaging behemoth this time, hmm?” he said, massaging harder. Amandina headbutted his cheek, and he tilted his head to kiss the little carbunclet on the patch of red between her ears.
“Behemoths can be reasoned with,” Synnove muttered. “Was going to make a chocolate-hazelnut cheesecake after lunch to have for dessert tonight, but…”
Aymeric stroked her hair. “Another time,” he said. As much as he adored her cheesecake, he would much rather she rest when her internal organs decided this was the month to wage war. “Where are the other three mischief makers?”
“Down to the market to fetch some things for dinner.”
“I’ll handle that, then. Would you like to keep this orchestrion on, or would you rather I switch it out for you?”
“Could you put one of the comedies on? Doesn’t matter which.”
“Of course, love.” Aymeric kissed her forehead once more, and gave both Amandina and Ivar scritches behind the ear (Amandina peeped happily, Ivar grudgingly mrowled), before he pulled away.
Once the orchestrion roll was changed to one of the comedic performances put on by one of the local theater troupes, he tiptoed out of the den and headed for the kitchen. Once there, he rolled up his sleeves, washed his hands, and set to dinner prep. No doubt what Tyr, Galette, and Roksana returned with would be easy to cook, but that gave him time to set the table and get the side dishes ready. And perhaps dessert.
By the time Tyr trotted through the kitchen door from the garden, Galette on his heels and Roksana in one of the panniers slung over his back, he had rice cooked and strawberries for dessert washed and halved, and was beginning to wilt and sauté spinach.
Hi, Papa! all three carbuncles chorused.
“Hello, children,” Aymeric said, glancing up from the spinach. “What did you find down at the market?”
Tuna steaks! Roksana cheered as she hopped out of the pannier, a package containing fresh sachets of peppermint tea in her mouth. Tyr held while Galette opened the pannier on the opposite side and carefully pulled out a large package of waxed paper.
Aymeric came over to help Tyr step out of the panniers and while Tyr put them away, he accepted the package from Galette, who headbutted him before trotting off to the den. “Well done,” he said warmly. “These can marinate for a few minutes while the spinach finishes cooking.”
Roksana clambered onto his shoulder, loafing happily as she watched him fetch a large bowl and fill it with a mix of soy sauce, sesame oil, and fresh grated ginger. Her nose twitched curiously as he unwrapped the steaks and set them in the bowl. How long will they take to cook? she asked as he moved back to the spinach.
“Not long at all,” Aymeric said, reaching up to rub the top of her head. Roksana purred. “Just a quick sear on either side.”
Once everything was finally ready, and a pot of peppermint tea brewed, he sent Roksana off to fetch her mama while Tyr assisted him with plating everything. Dinner was a quiet affair, with everyone focused on simply eating and keeping Synnove’s tea mug full; Aymeric took the chair next to Synnove tonight, instead of their usual cornerwise position, so he could wrap an arm around her and let her lean against him in between bites of food. Ivar was on Synnove’s other side, his tails draped across her lap and against her stomach.
Dessert was strawberries with clotted cream. Aymeric ate his serving quickly and then stood, kissing Synnove’s kiss cheek as he did. “I’m going to draw you a bath,” he murmured.
His lady huffed tiredly, drooping over her bowl. “You cooked, I’m supposed to clean,” she grumbled.
“And today is the type of day where you are allowed to be a useless lump,” he said fondly.
Aymeric ended up needing to carry Synnove to the washroom, though it meant Ivar could curl up on her and knead her belly during the walk; barely past sunset and she was exhausted from pain, but unfortunately the only pain potions effective on her cramps also left her nauseous. As much as he hated to see her simply grit her teeth and bare it, keeping her hydrated and fed was important. And Ivar, thankfully, didn’t require refilling like a hot water bottle did.
The constant pain was also beginning to make his lady crabby, and so he didn’t linger in the washroom; there was an art to judging when his fussing was too much, and based on her wordless grumbling while he set her down, any further offers of assistance would be taken poorly. Instead, he double checked that she had fresh towels and a change of ratty-but-comfortable clothes for bed, and left Ivar to keep an eye on her while he went to clean up in the kitchen.
Bedtime was thus a little earlier than usual, but not even the twins complained, though they requested an extra chapter from the book he was currently reading to them. Galette tucked in with the girls for the night, ears flicking softly while she chimed a lullaby for her sisters, and Ivar crawled into the banked coals in their room, passing out almost as soon as he curled into a ball.
When Aymeric slipped in his and Synnove’s room, Synnove was face down on the bed, groaning with relief as Tyr kneaded her back. Her spine made the occasional disconcerting crunching sound of popping cartilage—Tyr was clearly taking the opportunity to deal with her absolutely atrocious case of scholar’s back in addition to the lower back pain that struck during her exceptionally bad monthly courses—but the massage and hot bath had finally resulted in the loosening of the tension she had been carrying throughout the day. Aymeric flicked the lights off and joined her on the bed; the trio eventually settled with all three on their sides, Synnove in the middle spooning Tyr and being spooned in turn by Aymeric. Tyr snuggled back against his mama and began that deep, engine-like purr of his that had Synnove going limp in relief.
“Mmmph,” she said, flopping her head down on her pillow. “Thank you both. Love you.”
Love you, Mama. Go sleep.
“I love you, too, Synnove,” said Aymeric, kissing her temple. “I hope you feel better tomorrow.”
“Me, too.”

Holiday Cookbooks: The Gift That Keeps On Cooking........

I know that I’m not alone when it comes to reading cookbooks similarly to the way one would read a novel. The cookbooks that interest me tell a story about the recipes and the author, or have a unique theme. Who else is a fan of single-subject cookbooks? Those that feature a certain ingredient in each of its recipes.  
There are those who follow comedian Rita Rudner’s quote, “I read recipes the same way I read science fiction. I get to the end and say to myself, ‘well, that’s not going to happen.” However, they still enjoy a cookbook as a “prop”, or appreciate a beautiful coffee table book, where not one recipe is used, but the glossy cover has mouth-watering visuals.  
This is the time of year when so many cookbooks are released; just in time for gift-giving season. Going through my ever-increasing collection, I picked some for you to consider as a gift for the cooks on your list. I am sure you will find one to buy for the cook-in-you too.
With kids spending more time at home these days, it is important to keep them occupied with fun activities. And, what child doesn’t enjoy spending time in the kitchen, and then enjoying the results of their efforts?  Written for 8 to 13 year olds, “The Complete DIY Cookbook for Young Chefs,” by the editors of America’s Test Kitchen (2020, $19.99)  teaches them to prepare common store-bought items from scratch.  From peanut butter, chocolate hazelnut spread, and apple sauce to bagel chips, cheddar cheese fish crackers, and strawberry Pop Tarts, to vanilla no-churn ice cream, hot fudge, pancake mix, hot cocoa mix, they probably won’t go back to store bought! The symbols for each recipe denote if the recipe is for a beginner, intermediate or advance recipe, and if the recipe requires the use of a knife, microwave, stove, oven or no knife or heat required. I found the pages dedicated to secrets for “Success in the Kitchen,” “Decoding Kitchenspeak,” “What’s Up With Ingredients?,” “How to Measure and Weigh,” and ”Essential Prep Steps,”  provide the perfect introduction to cooking. The “DIY Mixes” chapter details ways for kids to make homemade holiday gifts.
A companion book to the above title, is “Kitchen Explorers: 60+ Recipes, Experiments, and Games for Young Chefs,“ also by the editors of America’s Test Kitchen (2020, $12.99. The workbook format structures at-home learning, making it easy for parents to use the kitchen as a classroom. Experiments using food, interactive games and kid-centered recipes, allow youngsters to practice skills in a fun way. I particularly enjoyed the chapter on science experiments and activities, as I learned a few things along the way.  Experiments include “What Makes Fizzy Drinks Fizzy?,” “The Gooey Science of Melting Cheese,” Amazing Emulsions.” After the experiments are completed, the “Understanding Your Results” helps the learning process. The “For Grown-Ups” chapter, created by educational experts, helps guide learning and connect lessons in the workbook to school curriculum.  With “STEAM,” kids will learn how cooking involves Science, Technology, Engineering, Arts and Mathematics.  
Bakers and dessert lovers will appreciate “Holy Sweet!: 60 Indulgent Recipes for Bigger, Better Desserts,” by Peabody Johanson (2020, Page Street Publishing, $21.99).  Like the author, I have a sweet tooth too, so it has been added to my collection. This book was inspired by the author’s childhood favorites. Her introduction, mouth-watering photos, fun-to-read headnotes to each recipe, and  the creative creations drew me to the book. Johanson takes pies, cakes, cookies, and cupcakes and infuses them with flavors of cereal, ice cream, candy and booze. Think, Milky Way Pie, Cookies and Cream Ice Cream Bread Pudding, Cap’n Crunch Boston Cream Pie Layer Cake.  And perfect for the holidays, Peppermint Bark Red Velvet Layer Cake. Now don’t you feel like a kid in a candy store?
Brunch seems to have reemerged as a new craze. During the winter months, I prefer eating brunch, especially on Sundays. “Let’s Brunch: 100 Recipes for the Best Meal of the Week,” by Belinda Smith-Sullivan (2020, Gibbs Smith, $24.99) celebrates the meal that isn’t going away. The author writes in her introduction, “brunch just might become the new dinner party.” When life gets back to normal, this book will be a welcome addition to those who like to entertain. In the meantime, they have many recipes to explore. The chapter “Breads & Toppings,” has a recipe for one my favorites, Sweet Potato Buttermilk Biscuits.  Pannettone Grand Marnier French Toast, Brisket –Stuffed Herb Cornbread, with recipes for jams, syrup and flavored butters to round out the chapter. Starters include Smoked Salmon Blinis, plus Jumbo Shrimp and Lump Crab with Vodka Cocktail Sauce. Of course, Smith-Sullivan includes many egg dishes and sides. Desserts run the gamut with Lemon Curd and Gingersnap Trifle, Savory Spice Olive Oil Loaf Cake among others. And what brunch is complete without a cocktail? Pomegranate Mimosa, and Chef Belinda’s Creole Mary should fit the bill.
Cheese aficionados on your list will welcome I Heart Cheese: A Cookbook, 60 Ooey, Gooey, Delicious Meals for Serious Cheese Lovers, by Mihaela Metaxa-Albu (2020, Page Street Publishing, $19.99). The vivid photography of the dishes coupled with the elegant plating will make the reader want to get right to work, preparing the mouth-watering dishes using a variety of cheeses. I found the breakdown of the chapters by type of cheese helpful. Before each chapter’s recipes, there are details and nuances about the cheeses in the chapter with suggestions on how to draw out the best flavors of each cheese. Both sweet and savory dishes are included, such as Ricotta Coconut Almond Cake, Savory Chili and Grana Padano Cookies, Deconstructed Cheese Board Salad, Savory Pancakes with Crumbled Feta and Chives. The recipient will enjoy their journey to cheese heaven with these recipes.
One doesn’t have to be vegetarian or vegan to enjoy plant based cooking. This style of cooking is popular because of the growing interest in healthier eating and sustainability. “The Complete Plant Based Cookbook: 500 Inspired, Flexible Recipes for Eating Well Without Meat,” by the editors of America’s Test Kitchen (2020, $34.99), is the book to help its recipients prepare meals that are not only healthy where vegetables take the center of the plate, but in a tasty and creative way. I found the makeovers of comfort foods quite interesting. For example, PB & J transforms into Sautéed Grape and almond Butter Toast, featuring fresh grapes sautéed with lemon and thyme, topping crusty bread slathered with almond butter. The book gives the reader inspiration to create plant-forward meals that don’t use processed ingredients. And, those beautiful photos are inspiring, as are their renown signature headnotes; “Why this Recipe Works.”
What cookbook roundup list would be complete without one for chocoholics? I am sure you or someone on your list is one. From everyday recipes to more extravagant treats, Sabine Venier, author of “The Chocolate Addict’s Baking Book,” (2020, Page Street Publishing), shares tips and tricks on how to make it easy to incorporate chocolate into a plethora of dessert recipes. Now, who wouldn’t savor S’Mores Chocolate Cheesecake Bars, Zucchini Chocolate Olive Oil Bars, White Chocolate Carrot Cake Blondies, or Sweet Potato Chocolate Cinnamon Roll Pie, or Apple Cider Chocolate Macadamia Toffee? Venier’s flavor combinations are creative and meld well. For those that prefer standards, there are recipes for Soft Chocolate Peanut Butter Cookies, Peanut Butter Cupcakes with Chocolate Frosting, Brooklyn Blackout Chocolate Cupcakes and Flourless Chocolate Cake.
