A flavourful farewell at Scarborough Arts

As the final session unfolded at Scarborough Arts, the air was filled with the rich aroma of memories and the sweet anticipation of dessert. Over the past few weeks, our senior participants gathered virtually, not only to explore culinary delights, but to also share the deep-rooted stories embedded within the recipes of their lives.

Wendy, whose father's journey to Canada was guided by the unexpected detour of career change, recounted how his accounting skills were eclipsed by the demand for skilled labor. He was skilled at making a unique sweet potato dessert adorned with silk strands of sugar, which he fed Wendy as well growing up. This dish, a testament to adaptation and resilience, became a symbol of the diverse threads that weave our immigrant narratives and Wendy recreates it at home to share with our group, in honour of her father.

Ann Marie shared poignant reflections on her daughter and nieces leaving the nest. Her dessert explored the bittersweet layers of witnessing loved ones embark on their own journeys, leading households of their own.

In the midst of these heartfelt stories, Lisa added a touch of humour with her tale of a delicious Trifle passed down through generations. The irony unfolded when her mother sent the dessert to school, only to discover that its inclusion of Sherry rendered it unsuitable for young students.
As the 12-week program reaches its conclusion, the participants eagerly anticipate the release of "Cooking Up Community," a book that will immortalize not only the recipes but the rich narratives and cultural exchanges that occurred in the Scarborough Arts workshops. The upcoming book launch and exhibition promise to be a celebration of the diverse stories that make up the heart of this community program.
The final session was not just an end; it was the beginning of a new chapter, one that will be written and savoured with each turn of the page in "Cooking Up Community” coming soon…
We will also hold a book launch in March of 2024, and the participants will be honoured with an exhibition of their works.

Irresistible Naral/Khobra Vadi Trio: Perfect Vegan Delights for Festive Seasons
The festive season is approaching, and what better way to start the celebrations than with delightful, homemade sweets that are not only delicious but also free from common allergens like wheat, peanuts, tree nuts, dairy, casein, soy, egg, sesame, fish, and shellfish? We present to you the Naral/Khobra Vadi Trio – a collection of three vegan and allergen-free coconut-based sweets that will tickle your taste buds and leave you craving for more.
1. Plain Khobra Vadi:
Ingredients for Coconut Barfi:
Grated Coconut – 3 cups
Sugar – 2 cups
Coconut cream – 3 TBSP
Raisins – 1 Tbsp
Cardamom powder – 1 Tsp
Method:
Add grated coconut, sugar, and coconut cream to a pan. Mix well and cook over medium flame.
When the mixture starts leaving the sides of the pan, add raisins and cardamom powder.
Cook for an additional 2-3 minutes.
Grease a plate, spread the mixture evenly, and shape it into squares.
Allow it to cool for about 10 minutes, then cut into squares or diamonds.
2. Gajar Khobra Vadi:
Ingredients for Gajar Khobra Vadi:
Freshly Grated Coconut – 1 ½ cups
Sugar – 1 cup
Grated Carrot – 1 cup
Coconut cream – 2 TBSP
Raisins – 1 Tbsp
Cardamom powder – 1 Tsp
Method:
Combine grated coconut, sugar, grated carrots, and coconut cream in a pan. Mix well and cook over medium flame.
When the mixture starts leaving the sides of the pan, add cardamom powder and cook for another 2-3 minutes.
Grease a plate, transfer the cooked mixture, and shape it into squares.
Optionally, garnish with raisins.
Allow it to cool for about 10 minutes, then cut into squares or diamonds.
3. Mango Khobra Vadi:
Ingredients for Mango Barfi:
Grated Coconut – 3 cups
Sugar – 1 cup
Mango juice (freshly squeezed or canned) – 1 cup
Raisins – 1 Tbsp
Cardamom powder – 1 Tsp
Method:
Combine grated coconut, sugar, and mango juice in a wok. Mix well and cook over medium flame.
When the mixture starts leaving the sides of the pan, add raisins and cardamom powder.
Cook for an additional 2-3 minutes.
Grease a plate, transfer the cooked mixture, and shape it into squares.
Optionally, garnish with almond slices.
Allow it to cool for about 10 minutes, then cut into squares or diamonds.

In Pakistan, Ras Malai is a very popular sweet dish. It is a distinctive characteristic of Pakistanis to prepare and serve this delectable delicacy at special occasions. Not only is it appropriate for kids and teenagers, but also older folks who delightfully appreciate it. Ras Malai is greatly improved in flavor by the use of saffron.
Raw materials for ras malai:
One litre of whole milk
2 to 3 teaspoons of vinegar or lemon juice
A half-cup of sugar
Water, 4 cups
Three to four finely crushed green cardamom pods
A dash of saffron, if desired
Pistachios or almonds chopped for garnish
How to prepare ras malai:
To start, boil the milk in a heavy-bottomed pan to make the paneer. Add the lemon juice or vinegar gradually while stirring continuously once the milk has reached a rolling boil. The milk will separate into the watery whey and the solid paneer as it curdles. Cut the heat off.
To drain the extra water, hang the paneer in the cloth for about 30 minutes. To aid in the water draining out, you can also lay a heavy object on top of the towel.

After the paneer has finished cooking, knead it for 5 to 7 minutes, or until it is smooth and malleable. The paneer should be divided into small balls and lightly pressed.
Combine the water, sugar, cardamom pods, and saffron (if using) in a separate pan. The mixture should be heated through before simmering for a few minutes.
Add the paneer balls to the syrup that is boiling, and cook them over low heat for 10 to 12 minutes. The paneer balls will increase in size and soften.
Let it to cool and serve the delicious Ras Malai.
