Spicy Sweet Shrimp and Water Chestnut
One of my go-to proteins, shrimp, is excellent for a quick weeknight supper and makes it simple to make midweek dinners in a pinch. The quick preparation methods for shrimp include boiling, roasting, grilling, and pan-frying. My ideal way to prepare them is as a quick evening supper, like this spicy sweet shrimp and water chestnut dish. A dash of chili heat has been added to liven up the sauce.
Get people back into the kitchen and combat the trend toward processed food and fast food. - Andrew Well

juls's super easy sweet coconut curry for when you're sick
note: this is super easy because i have curry paste and an instapot and a rice cooker. if you don't have these things on hand. well like, you can still make it, but it may not be super easy sick food for you
1lb chicken (approx)
1/3 cup of sugar
1 tbsp red curry paste
2 tbsp fish sauce
1 can coconut cream (trader joe's recommended)
cashews, unsalted
separately, rice
(there's a version of this where you brown the chicken first. the super easy version is not that version.)
okay so get your instapot. you can make this in a big one or a small one. i just started a double batch in my baby instapot.
Put in the can of coconut cream. (Tj's is recommended because it is just coconut and water, no thickeners. if you don't have ibd or some shit and thickeners don't bother you, use whatever.) Note: you can also use coconut milk if you and thicken it with like a teaspoon or two of cornstarch, but due to the nature of pressure cookers you can't add the cornstarch until after you cook, or the instapot won't reach pressure.
Add the sugar. Other people who may have originated this recipe kept dicking with the amount because "oh it's too sweet" they ended up working in eighths of a cup who even has eighths of a cup. Fuck that, I like it sweet, I'm sick, it's comfort food, 1/3 cup measure is easy to find.
Add the red curry paste and fish sauce. Note: the original amounts on this were 2tsp red curry paste and 1.5tbsp fish sauce. This was changed because using a tablespoon measure for both is easier and also stronger flavors are better when you're congested. If you think this might be too spicy for you, go easy on the red curry paste. If for some ungodly reason you are trying to recreate this from scratch, red curry paste contains: red chilis, lemongrass, galangal, garlic, coriander, cumin, shallots, lime zest, and usually shrimp paste but mine's kosher. Fish sauce is a mixture of soy sauce and fish so you can use like a tablespoon of soy if you don't have fish sauce, and maybe like a dash of worcestershire (the closest western equivalent to fish sauce, though it is considerably more gussied up).
Give the mix a good stir. This is not strictly necessary but I'm always paranoid about chunk of curry paste won't separate. I also turn the instapot on saute mode at this point because heat gets things moving.
Cube the chicken and add it to the pot. Or if you bought pre-diced, good on you. I prefer breasts to thighs because I think they're easier to chop up. Also I've discovered that if you're pulling chicken out of the freezer, you do not have to thaw it 100% it is actually easier to cube if it's half-frozen.
Add cashews. I will be honest, I've never measured this. Somewhere between half a cup and a whole cup? You do not want there to be more cashews than chicken but otherwise go wild. If you only have salted cashews, wash them in a strainer first. They will get soft. That's fine, they'll get super soft in the curry. If you wanted a crunch instead, try peanuts, they hold their form better.
Close the instapot and set it to meat/stew.
Make some rice. Maybe like a cup and a half before cooking? Tbh I've never totally figured out how to match the rice to the curry to make them run out at the same time. The curry makes 4-5 servings if that helps.
In like an hour you will have food.

[ID: Rice noodles topped with yellow fried tofu and chives; piles of chili powder, peanuts, and chive stems to the side. End ID]
ผัดไทย / Phad thai (Thai noodle dish with tamarind and chives)
Phad thai, or pad thai ("Thai stir-fry") is a dish famous for its balance of sour, sweet, savory, and spicy flavors, and its combination of fried and fresh ingredients. It's commonly available in Thai restaurants in the U.S.A. and Europe—however, it's likely that restaurant versions aren't vegetarian (fish sauce!), and even likelier that they don't feature many ingredients that traditionalists consider essential to phad thai (such as garlic chives or sweetened preserved radish—or even tamarind, which they may replace with ketchup).
Despite the appeals to tradition that phad thai sometimes inspires, the dish as such is less than 100 years old. Prime Minister Plaek Phibunsongkhram popularized the stir-fry in the wake of a 1932 revolution that established a constitutional monarchy in Thailand (previously Siam); promotion of the newly created dish at home and abroad was a way to promote a new "Thai" identity, a way to use broken grains of rice to free up more of the crop for export, and a way to promote recognition of Thailand on a worldwide culinary stage. Despite the dish's patriotic function, most of the components of phad thai are not Thai in origin—stir-fried noodles, especially, had a close association with China at the time.
My version replaces fish sauce with tao jiew (Thai fermented bean paste) and dried shrimp with shiitake mushrooms, and uses a spiced batter that fries up like eggs. Tamarind, palm sugar, prik bon (Thai roasted chili flakes), and chai po wan (sweet preserved radish) produce phad thai's signature blend of tart, sweet, and umami flavors.
Recipe under the cut!
Patreon | Tip jar
Serves 2.
Ingredients:
For the sauce:
3 Tbsp (35g) Thai palm sugar (น้ำตาลปึก / nam tan puek)
2 Tbsp vegetarian fish sauce, or a mixture of Thai soy sauce and tao jiew
1/4 cup tamarind paste (made from 50g seeded tamarind pulp, or 80g with seeds)
Thai palm sugar is the evaporate of palm tree sap; it has a light caramel taste. It can be purchased in jars or bags at an Asian grocery, or substituted with light brown sugar or a mixture of white sugar and jaggery.
Seedless tamarind pulp can be purchased in vacuum-sealed blocks at an Asian grocery store—try to find some that's a product of Thailand. I have also made this dish with Indian tamarind, though it may be more sour—taste and adjust how much paste you include accordingly.
You could skip making your own tamarind paste by buying a jar of Thai "tamarind concentrate" and cooking it down. Indian tamarind concentrate may also be used, but it is much thicker and may need to be watered down.
For the stir-fry:
4oz flat rice noodles ("thin" or "medium"), soaked in room-temperature water 1 hour
1/4 cup chopped Thai shallots (or substitute Western shallots)
3 large cloves (20g) garlic, chopped
170g pressed tofu
3 Tbsp (23g) sweet preserved radish (chai po wan), minced
1 Tbsp ground dried shiitake mushroom, or 2 Tbsp diced fresh shiitake (as a substitute for dried shrimp)
Cooking oil (ideally soybean or peanut)
The rice noodles used for phad thai should be about 1/4" (1/2cm) wide, and will be labelled "thin" or "medium," depending on the brand—T&T's "thin" noodles are good, or Erawan's "medium." They may be a product of Vietnam or of Thailand; just try to find some without tapioca as an added ingredient.
Pressed tofu may be found at an Asian grocery store. It is firmer than the extra firm tofu available at most Western grocery stores. Thai pressed tofu is often yellow on the outside. If you can't locate any, use extra firm tofu and press it for at least 30 minutes.
Sweetened preserved radish adds a deeply sweet, slightly funky flavor and some texture to phad thai. Make sure that your preserved radish is the sweet kind, not the salted kind.
For the eggs
¼ cup + 2 Tbsp (60g) white rice flour
3 Tbsp (22.5g) all-purpose flour (substitute more rice flour for a gluten-free version)
1 tsp ground turmeric
About 1 ¼ cup (295mL) coconut milk (canned or boxed; the kind for cooking, not drinking)
¼ tsp kala namak (black salt), or substitute table salt
Pinch prik bon (optional)
To serve:
Prik bon
2 1/2 cups bean sprouts
3 bunches (25g) garlic chives
1 banana blossom (หัวปลี / hua plee) (optional)
1/3 cup peanuts, roasted
Additional sugar
Garlic chives, also known as Chinese chives or Chinese leeks, are wider and flatter than Western chives. They may be found at an Asian grocery; or substitute green onion.
Banana blossoms are more likely to be found canned than fresh outside of Asia. They may be omitted if you can't find any.
Instructions:
For the eggs:
1. Whisk all ingredients together in a mixing bowl. Cover and allow to rest.
For the noodles:
1. Soak rice noodles in room-temperature water for 1 hour, making sure they're completely submerged. After they've been soaked, they feel almost completely pliant. Cut the noodles in half using kitchen scissors.
For the tamarind paste:
1. Break off a chunk of about 50g seedless tamarind, or 80g seeded. Break it apart into several pieces and place it at the bottom of a bowl. Pour 2/3 cup (150mL) just-boiled water over the tamarind and allow it to soak for about 20 minutes, until it is cool enough to handle.
2. Palpate the tamarind pulp with your hands and remove hard seeds and fibres. Pulverise the pulp in a blender (or with an immersion blender) and pass it through a sieve—if you have something thicker than a fine mesh sieve, use that, as this is a thick paste. Press the paste against the sieve to get all the liquid out and leave only the tough fibers behind.
You should have about 1/4 cup (70g) of tamarind paste. If necessary, pour another few tablespoons of water over the sieve to help rinse off the fibers and get all of the paste that you can.
3. Taste your tamarind paste. If it is intensely sour, add a little water and stir.
For the sauce:
1. If not using vegetarian fish sauce, whisk 1 Tbsp tao jiew with 1 Tbsp Thai soy sauce in a small bowl. You can also substitute tao jiew with Japanese white miso paste or another fermented soybean product (such as doenjang or Chinese fermented bean paste), and Thai soy sauce with Chinese light soy sauce. Fish sauce doesn't take "like" fish, merely fermented and intensely salty, and that's the flavor we're trying to mimic here.
2. Heat a small sauce pan on medium. Add palm sugar (or whatever sugar you're using) and cooking, stirring and scraping the bottom of the pot often, until the sugar melts. Cook for another couple of minutes until the sugar browns slightly.
3. Immediately add tamarind and stir. This may cause the sugar to crystallize; just keep cooking and stirring the sauce to allow the sugar to dissolve.
4. Add fish sauce and stir. Continue cooking for another couple of minutes to heat through. Remove from heat. Taste and adjust sugar and salt.
To stir-fry:
1. Cut the tofu into pieces about 1" x 1/4" x 1/4" (2.5 x 1/2 x 1/2cm) in size.
2. Separate the stalks of the chives from the greens and set them aside for garnish. Cut the greens into 1 1/2” pieces.
3. Chop the shallots and garlic. If using fresh shiitake mushrooms, dice them, including the stems. If using dried, grind them in a mortar and pestle or using a spice mill.
4. Roast peanuts in a skillet on medium heat, stirring often, until fragrant and a shade darker.
5. Remove the tough, pink outer leaves of the fresh banana blossom until you get to the white. Cut off the stem and cut lengthwise into wedges (like an orange). Rub exposed surfaces with a lime wedge to prevent browning. If your banana blossom is canned, drain and cut into wedges.
6. Heat a large wok (or flat-bottomed pan) on medium-high. Add oil and swirl to coat the wok's surface.
If you're using extra firm (instead of pressed) tofu, fry it now to prevent it from breaking apart later. Add about 1" (2.5cm) of oil to the wok, and fry the tofu, stirring and flipping occasionally, until golden brown on all sides. Remove tofu onto a plate using a slotted spoon. Carefully remove excess oil from the wok (into a wide bowl, for example) and reserve for reuse.
7. Fry shallots, garlic, preserved radish and tofu (if you didn't fry it before), stirring often, until shallots are translucent. Add mushroom and fry another minute.
8. Add pre-fried tofu, drained noodles, and sauce to the wok. Cook, stirring often with a spatula or tossing with tongs, until the sauce has absorbed and the noodles are completely pliant and well-cooked. (If sauce absorbs before the noodles are cooked, add some water and continue to toss.)
9. Push noodles to the side. Add 'egg' batter and re-cover with the noodles. Cook for a couple minutes, until the egg had mostly solidified. Stir to break up the egg and mix it in with the noodles.
10. Remove from heat. Add half the roasted peanuts, half of the bean sprouts, and all of the greens of the chives. Cover for a minute or two to allow the greens to wilt.
11. Serve with additional peanuts, bean sprouts, banana blossom wedges, chive stems, and lime wedges on the side. Have prik bon and additional grated palm sugar at table.

(IDOLiSH7) Minami Natsume - An Idol's Daily Life Rabbit Chat: Part 5 - First touring experience
Part 1 | Part 2 | Part 3 | Part 4 | Part 5
Tsumugi Takanashi: Good work today, Natsume-san. I'm looking forward to IDOLiSH7 and ŹOOĻ appearing together on the music program tomorrow.
Tsumugi Takanashi: I’m excited to hear ŹOOĻ’s new song!
Minami Natsume: Good work today, Takanashi-san. Thank you for your kind greeting.
Minami Natsume: We will deliver the best performance, so please look forward to it.
Tsumugi Takanashi:
Minami Natsume: I was actually about to contact you as well.
Tsumugi Takanashi: Me?
Minami Natsume: Yes. I’m currently visiting the port town you recommended, and it’s such a wonderful place. I wanted to thank you.
Tsumugi Takanashi: Wow! So today is your touring day! The weather is perfect too. It must feel amazing.
Minami Natsume: Indeed, the scenery is beautiful. I’m glad I chose this place. Actually, Izumi-san and Nanase-san also recommended it to me recently.
Tsumugi Takanashi: I remember the three of you discussing it in the dressing room…!
Minami Natsume: At that time, Nanase-san enthusiastically showed me photos of the dishes here, saying, "You absolutely need to try this," so I decided to come here.
Minami Natsume: Izumi-san’s food review was very tempting as well.
Tsumugi Takanashi:
1) How was your first touring experience?
Minami Natsume: It was exhilarating. The feeling of cutting through the wind is very refreshing. I might get addicted to it.
2) What did you order for your meal?
Minami Natsume: Nanase-san recommended both dishes, so I ordered the sashimi set meal with a side of simmered fish. The sweet-simmered sea bream was delicious and went well with the rice, and the seasonal sashimi was fresh and exceptional.
3) What were you doing just now?
Minami Natsume: My members told me to let them know once I reached the location, so I was taking pictures of the sea. I’d love to come back here with everyone next time so we can enjoy the view together.
Tsumugi Takanashi: I’m glad you’re enjoying yourself! There are many souvenir shops, and just browsing them is fun, so please do check them out.
Minami Natsume: I did peek inside one earlier. I was thinking of getting something for the people who helped me with obtaining my license.
Tsumugi Takanashi: Wow, that sounds great! I’m sure they’ll be delighted.
Tsumugi Takanashi: Have you decided what to get?
Minami Natsume: I was thinking of seafood-based snacks, but since many of them live alone, giving them too many might be troublesome.
Tsumugi Takanashi: Choosing souvenirs can be quite the challenge > <
Minami Natsume: That’s true, but it’s also fun to think about what would make them happy.
Minami Natsume: Did Nanase-san and Izumi-san buy anything?
Tsumugi Takanashi: There were sea creature keychains, so they bought one for each member.
Tsumugi Takanashi: Yamato-san got a sea anemone one because he's good at impersonating them, and Mitsuki-san got a shrimp one because he makes delicious shrimp chili. They chose the keychains for each member based on things like that.
Minami Natsume: Indeed, Nikaido-san’s sea anemone impression is quite good. Every time I see one at an aquarium, I remember it.
Tsumugi Takanashi: Yamato-san’s unique moves really capture the essence, don’t they? He was so pleased with the keychain, saying it felt familiar, and now he carries it on his bag.
Minami Natsume: I might go with keychains too. There were ones with names on them.
Minami Natsume: Wouldn’t it be cute if everyone had a seagull keychain on their bags with “Torao” or “Shiro” written on it?
Tsumugi Takanashi: Definitely! Seeing them would make me feel warm and fuzzy inside.
Tsumugi Takanashi:
Tsumugi Takanashi: Especially given Utsugi-san's smart and mature image, it would be quite a contrast.
Minami Natsume: Despite how he looks, he’s surprisingly quite funny.
Minami Natsume: He once tried to sign off his Rabbit Chat messages with “From Mom,” aiming to be more motherly.
Tsumugi Takanashi: Utsugi-san did something like that...!
Minami Natsume: Yes, he also tries to lighten the mood by using a lot of paw emojis and even using teen slang like "LMAO" to make it easier for us to talk to him.
Tsumugi Takanashi: That’s such thoughtful consideration! As expected of him! I should try to learn from him as well.
Minami Natsume: Takanashi-san, you’re already very considerate. You’re also just as amusing as Utsugi-san.
Tsumugi Takanashi: Do you really think so?
Tsumugi Takanashi: If I’ve managed to entertain you even a little, I’m happy!
Minami Natsume: Yes. Have confidence in yourself.

Hiii, it's a random question time: What are favorite foods and drinks for Sonic characters in your AU? 👀
Ooo~ a good question! To be honest I didn’t really think about this before, but I think it’ll be interesting to give it a try! ^^
Sonic is the most obvious due to his cannon love for chili dogs, and he could eat them all the time if he could! For drinks, I feel like for a time it’d be Pepsi, but then swap it out for more “healthy” drinks, such as water or the occasional monster can for some extra energy!
Shadow is a little tricky, but due to his time with Maria, he probably has a favorite food from his times with her! I’d honestly say that he’d probably enjoy a good old medium rare steak and some red wine, but his absolute favorite? Chocolate. As he used to make a lot of chocolate with Maria back on the ark, and if you get chocolate from him, it’s going to be the best you’ve ever tasted! (He tends to make dark chocolate for Amy when her cramps get too bad!)
Silver is a pasta type, so any kind of pasta is his favorite dishes! He specifically loves Iris’ shrimp scampi, he doesn’t know what she puts into it, but it feels like it’s made with love and care every time!
Knuckles and tails love potatoes. However, knuckles likes the baked potatoes more, as it’s fluffy and soft, and you can customize it to your heart’s content! For drinks, knuckles tries to keep with just water, but he does drink the occasional beer with the boys, but not too much, he doesn’t want to give rouge the opportunity to steal the master emerald!
Tails loves anything to do with fries or chips, as they’re his go to with most dishes! Although on sick days, he loves himself some loaded potato soup that knuckles makes for him when he’s sick! For drinks, I say Coca Cola is his favorite drink, but specifically from the glass bottles. It just tastes heavenly.
Amy loves anything sweet, and shadow’s dark chocolate is one of her favorites! It’s just perfectly balanced between dark and bitter, yet sweet and creamy! Her absolute favorite though? Vanilla’s strawberry cake. It’s just absolutely delicious and creamy, and yet the strawberries blend in perfectly with their sweet and juicy flavor! It’s a perfect match with her teas, earl grey being her favorite. She always asks for vanilla to help with her parties, and the woman has recipes for every occasion!
Same goes for cream, her mother makes such amazing baked goods, it’s hard to ever choose a favorite! However, her favorite food in general is anything with veggies in them! (Can’t beat the rabbit allegations-) and her favorite drink is hot chocolate or milkshakes!
Nazo - due to his pots, he can’t have a lot of foods without them having the possibility of making his heart rate jump too high and make him pass out. However, he tends to eat more salty and protein filled foods to keep his blood pressure from becoming too low. They’re usually in small quantities and are ranging from cheeses and nuts to a small thing of pretzels or something salty. However, a favorite food? Probably Iris’ salmon mushroom carbonara. It’s filling, but yet it doesn’t make him feel like passing out from the blood instantly rushing to his stomach! For drinks, he needs salt, so he tends to carry some kind of electrolyte water around him. This is why if you see them out in public, seelkadoom has a small backpack or a tote bag on him at all times, except for when they go on fancy dates and all that. Iris usually packs a fancy satchel for those occasions.
Seelkadoom - now unlike nazo and Iris, he just likes the taste of more salty foods. However, his favorite food outside of his beloveds’ cooking? It has to be the funnel cakes and cotton candy that come around with the Solaris festival! And he ranges his drinks between water, Pepsi, an occasional monster, and on fancy occasions? Red wine.
Iris (TW: mentions of eating dead bodies 0-0||) - much like Nazo, she can’t have many foods due to her pots, and she’s kind of traumatized by eating one too many mobian sailor corpses for her own survival. So, she opts for lean proteins and veggies. It makes sense why sushi is her favorite dish! Although, she makes a wide variety of dishes that can help with the symptoms of pots at least a little bit.
Mephiles - he gets offered foods and drinks on the daily, and he really can’t choose an absolute favorite. However, ask him about his favorite memory regarding the food offerings, it’d be about a sweet trans woman who was visiting solleanna and left behind some homemade honey-sugar cookies, roasted tomato soup, and some noir wine. She stayed by his statue and chatted with him about a lot of things, and it was quite endearing that she was so willing to talk to him, especially about her own life. The food was made with a lot of love, just like her; He still watches over her to this day, hoping she’ll come back one day to talk to him again.
Iblis - she loves anything spicy, and there’s a Spanish chef in solleanna who makes some delicious foods with just enough spice that is just delicious. They’re also one of her most frequent visitors to her statue and temple. So let’s just say iblis has a small amount of favoritism to the cute chef she buys soup from! For drinks, a good old red wine is her favorite!
Circe - she loves a good old medium rare steak, but her favorite of all time? It’s actually quite odd for a hedgesiren, Cesar coast salad, a local specialty with the land close by. It’s the mixture of the local fish and veggies with a Cesar salad, and it’s honestly perfect for her!!
Scylla - she doesn’t really eat, especially since her dad is a piece of sh+t. But back when she was a teen, when she snuck out a lot. She always had these delicious octopus kebabs mixed in with some kind of kelp or seaweed. It was always so good, if she could go back in time for just a small amount of time, she’d go and buy some of those kebabs and savor their taste one last time before she got locked into the castle. Her favorite drink? Usually tea that a few of the guards sneak into her tower or the blood of enemies. The guards still do it, even though she and Circe are currently being interrogated by their father as we speak..!
