Naked Shrimp Dumplings in Dashi

Plunged into a homemade dashi broth, Chef John's all-filling, no-skin dumplings combine shrimp with an ingredient you wouldn't expect to find in an Asian dumpling! 6 cups cold water, 1.5 teaspoons kosher salt, 8 ounces Burrata cheese, 6 pieces kombu, 1 pinch cayenne pepper, 2 tablespoons soy sauce, 1/2 teaspoon paprika, 2 tablespoons mirin, 1/2 teaspoon finely grated ginger root, 1/4 teaspoon sesame oil, 1 pound medium raw shrimp peeled and deveined, 4 cups lightly packed shaved bonito flakes

Teochew Png Kueh (潮州饭粿) or poong tor, as it is called in Teochew, are savoury dumplings made to resemble peaches as the fruit represents longevity in Chinese folklore. These kuehs are often sold in pink or white coloured skins made from glutinous rice flour. The colours are symbolic with the pink kuehs representing joy and are usually served as offerings to deities, while the white ones are for ancestor worship.

Png Kueh is a savoury dumpling which contains glutinous rice, peanuts, mushrooms and dried shrimps. While you can eat it freshly steamed as it is, it is often pan-fried until slightly brown and charred. This results in a lovely caramelized crisp skin, while the inner skin and filling remained soft and tender.

xiaolongbao literally top dumpling EVER anyone who says otherwise is literally wrong sorry!!! unless you are a vegetarian i guess in which case i respect your hustle 🫡 but surely there must be vegetarian xiaolongbao in this world, no?
ok this doesn't take #1 because whether or not it counts as a dumpling is up for debate but zongzi are sooo good and people do call them 'sticky rice dumplings' SO. i am counting it. it's more of a dumpling than an empanada or samosa is imo
there were these amazing pork & leek steamed dumplings at lili's which is a xi'anese restaurant in amherst massachusetts. now to be clear if you go to lili's you should get the biang biang noodles first and foremost BUT!! the pork and leek dumplings are a very good appetizer
ok i wikipedia'd 'list of dumplings' to make sure i didn't forget any and among other things they listed empanadas, samosa, pupusas, and......tamales. which. i realize tamales (especially oaxacan tamales which are the best kind) and zongzi are TECHNICALLY very similar except that tamales are made of masa and zongzi are made of sticky rice but calling a tamale a dumpling feels WRONG. but objectively i cannot disagree that if a zongzi can be on this list then so can a tamale. so oaxacan tamales take the #4 spot, even though i like them more than #3, because imo they do not have Dumpling Vibes
i refuse to concede that a samosa or empanada are dumplings however. those are Pastries. i am also skeptical of baozi being dumplings even though i concede that xiaolongbao is technically a type of bao. but baozi are much breadier it's different imo. also i prefer open bao buns to baozi which is definitely not a dumpling that's a sammich. however i do like dessert bao especially chocolate lava bao. so i will choose to allow baozi into the dumpling category and put chocolate lava bao at #5

Pardon the messy bowl of Pork & Shrimp Dumplings Noodles (水饺面) from Choo Chiang Roasted Meat Noodle House (珠江烧腊面家). I have to dig out the dry style mee kia or thin yellow noodles from underneath all the dumplings. After this photo was taken, I mixed up the sambal chilli paste with the noodles and tucked in on the juicy dumplings and leafy chye sim.
