It's a crazy jungle out there, folks. The sweetest pumpkin plants are rubbing leaves with the toxic castor oil plant, okra with datura. Beans are being grown for their colours and shapes, but I don't know how they taste. Sunflowers and amaranth are headed skyward. And the corn? Tri- coloured popcorn and rainbow coloured glass gem. Chinese cucumbers, heirloom tomatoes, and Mexican tomatillos fight for light. No proper Italian vegetable gardener would ever allow this mess to happen, but it is somehow happening, physically challenging to create and maintain, botanically more interesting than it is useful in the kitchen, and always amusing. Home grown ingredients made this (extremely simple) dinner DELICIOUS. I had 3 types of #beans from our garden, shelled, in a little glass bowl in my fridge and I was determined to not let them go bad since it was an incredible amount of work to get to that point. We had done meatless the night before so I knew my SO would rather have it that night. So i grabbed some chicken breast from the freezer, chopped it into large chunks, put it in several cups of water in my dutch oven on the stove, chopped up a green onion, a couple large #garlic cloves, a #shallot, red pepper flakes, salt, black pepper, and brought it to a boil. At that point. I threw on my beans as well as an equal amount of yellow split peas (because it was not a lot of beans) and gently boiled an hour. At the end I threw in some #GermanThyme & #PineappleSage from my herb garden and when it cooled I roughly shredded the chicken. #meatlessmonday this week was all home grown veggies! I soaked #eggplant in #glutenfree #soysauce & #worchestershiresauce and layered it with #shreddedcheese and #pattypansquash #purpletomatillos #tomatoes #herbs #blackpepper #himalayanpinksalt then baked covered for 45 minutes at 400° f then uncover and lower heat to 375° for 15 min or untill it browns.
