Writing Notes: Herbs, Spices & Seasoning
Herbs and spices can add flavor and variety to your food.
Use a little at first, then add more when you are sure you like the flavor.
To substitute dry herbs for fresh, use ¼ teaspoon powder or 1 teaspoon crushed for 1 tablespoon fresh chopped herbs. Some herbs and spices are expensive.
You might want to buy only a few of the less expensive herbs and spices you will use.
Herbs and spices lose flavor and can spoil or get buggy if kept in the cupboard longer than a year.
If you use herbs and spices slowly, buy small containers, or store them in the freezer.
Uses of Herbs, Spices & Seasonings
Allspice - A mixture of cinnamon, nutmeg and cloves. Use in fruit desserts, pumpkin pie, apple cider, cakes, cookies, chicken, beef and fish dishes.
Basil - Tomato and egg dishes, stews, soups and salads
Bay leaves - Tomato dishes, fish and meat dishes
Celery seed - Juices, soups, salads, vegetables, pot roasts, poultry, rolls and biscuits
Chili powder - Chili, bean and rice dishes
Chives - Potato dishes, soups, dips and sauces
Cilantro - Latin American, Indian and Chinese dishes, salsa, stir fries, (Coriander leaves) legume or rice salads, hot cooked rice, grilled chicken or fish, or a dish of ripe tomatoes. Use fresh if possible.
Cinnamon - French toast, fruit and fruit salads, sweet potatoes, pumpkin and squash, puddings and apple desserts, ham or pork chops
Cloves - Whole cloves on ham or pork roast; ground cloves to season pear or apple desserts, beets, beans, tomatoes, squash and sweet potatoes
Coriander seed - Middle Eastern dishes, spice cakes and cookies, soups, roast pork and salad dressing
Cumin - Mexican, Middle Eastern and Indian dishes; beef and lamb, dry bean dishes, marinades, chili and tomato sauces; ingredient in curry powder
Dillweed - Tuna or salmon salad, potato salad, pickles, dips and sauces
Garlic - Mexican, Italian and Oriental dishes and in salad dressings; can be used fresh or dried, minced or powder
Ginger (fresh) - Oriental dishes, marinades for chicken or fish, fruit salad, dressings
Ginger (ground) - Gingerbread, spice cake, pumpkin pie, poultry or meat, soups, stews, stuffing, squash, sweet potatoes
Ground peppers: black, Cayenne & white pepper - Meats, casseroles, vegetables and soups
Italian seasoning - A mixture of marjoram, oregano, basil and rosemary; use in Italian dishes such as spaghetti
Marjoram - Egg and cheese dishes, meats, fish, poultry and vegetables
Mint - Fruit salads and fruit soups, melon, berries, cold fruit beverages, cooked carrots or peas, chilled yogurt soup, lamb, tabbouleh
Mustard - Sauces for meat and fish, in marinades, salad dressings, chutneys, pickles and relishes
Nutmeg - Cooked fruits, pies and desserts, baked items, spinach, sweet potatoes, eggnog and French toast
Onion - Any dish where onion flavor is desired; can be used fresh or dried (minced or powder)
Oregano - Italian dishes, chili, omelets, beef stew, meat loaf, pork and vegetables such as broccoli or tomatoes
Parsley - Meat, soup or vegetable dishes; adds color
Paprika - Stew, chicken, fish, potatoes, rice and hard-cooked eggs
Rosemary - Egg dishes, meats, fish, soups and stews, and vegetables
Thyme - Fish, poultry or meats, in soups or stews, vegetable salads

OVERNIGHT PUMPKIN FRENCH TOAST CASSEROLE
INGREDIENTS
1 (16-ounce) loaf brioche bread, cubed
1 (8-ounce) package cream cheese, cubed
10 large eggs, beaten
1 ½ cups whole milk
1 cup canned pumpkin puree
⅓ cup maple syrup
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
Kosher salt
½ cup chopped pecans
FOR THE BUTTERMILK GLAZE
2 cups confectioners' sugar
3 tablespoons buttermilk
2 teaspoons orange zest
1 teaspoon vanilla extract
Kosher salt
INSTRUCTIONS Spray some nonstick cooking spray in a 9x13 baking dish lightly. In the baking dish, put the bread cubes evenly. Cream cheese should be layered evenly on top. Add the remaining bread cubes on top. Whisk together the eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, vanilla, and 1/2 teaspoon salt in a sizable glass measuring cup or another bowl. Pour the mixture over the bread cubes evenly. For at least two hours or overnight, cover and place in the refrigerator. Set oven to 350 degrees Fahrenheit. Take the baking dish out of the fridge and leave it out for 30 minutes. Sprinkle with pecans and bake for 30 minutes covered in the oven. Remove the lid; bake for a further 25 to 30 minutes, or until the top is golden and the center is firm. Buttermilk glaze should be sprinkled before serving.
THE BUTTERMILK GLAZE REQUIRES Confectioners' sugar, buttermilk, orange zest, vanilla, and a dash of salt are combined in a medium basin. until smooth, whisk. Add additional confectioners' sugar as needed if the glaze is too thin.

This year I'm moving into a school owned apartment on my school's campus, but the kitchenette only has a microwave. I'm kind of having a hard time looking for ways that I can cook myself more meals than just the frozen stuff at the grocery store and I wondered if you had some advice ?

I’m still cleaning up after this feast. It took me days to prepare but it was worth it and so magical. I always wanted to have an experience that was somewhere near the same level of the hogwarts feast and not only did it feel like that but it felt so warm and joyful like the way Christmas feels glimmery and jolly and how you feel loved ones though it was just physically me and my friends. I felt a loving familial presence as if our loved ones that have passed away were there.
I didn’t take such great photos cause fyi we were under some great influences so I didn’t capture it well plus it was dark as I dimmed the lights and just had candles lit.
Not pictured- for starters as we waited for friends to arrived I had carved a large pumpkin with shandy made with pumpking beer, pumpkin pie soda, maple bourbon and ginger zest. It was served with candied bacon carmelized with brown sugar, harvest chips (like sweet potato/ube/beets etc) and apple turkey sausage.
The main course was served with fresh apple cider, iced mugwort tea in the skull bottle and dark mulled wine spiced with anise and flavored with pomegranate. There was pumpkin sweet potato mash, roasted pork with rosemary, potatoes and pomegranate, spiced Mac and cheese in the pumpkin casserole, shredded beet, carrot and apple salad with a fire cider vinaigrette, roasted carrots and roots along with Brussels sprouts with dill. I was going to make sides of sweet corn and curried beans but as you can see there was already a lot lol.
Between main and dessert was the ritual. We lit the candles and incense (dragons blood as usual and pumpkin spice!) and spoke about our ancestors as the candles were lit. We poured wine with pomegranate for them and made a dish of food offerings. We then spoke what we wanted for the new year to come which prepared me to make the flaming absinthe shots which we projected our intent into. We took the shot then prepared for dessert!
Dessert was even more overwhelming than the main course. I was joking with my friends that the real death we were honoring is our food coma that was about to happen. I served an apple prosecco to toast that I mixed with a few teaspoons of candy green apple liqueur (what’s in the potion bottle. I melted green jolly ranchers and mixed with puckers and vodka) that turned the bubbly green. I also had black crystal candy wands to stir in the champagne or tea so it turned it black and sparkly which fit the theme of transformation. I made spiced pumpkin tea with cinnamon sticks and the sweet black honey from my garden. The dessert treats consisted of candy corn jello parfaits with whipped cream, cookie shortbread sandwiches- flavored maple sugar (with maple buttercream filling), dark chocolate (with orange colored white chocolate peanut butter filling so it was like a reeses) and the most popular was pumpkin pie (with pumpkin cookie butter and marshmallow spread filling). Then there was a large sweet potato tart with well toasted marshmallow topping with golden star sprinkles and served with whipped cream and vanilla ice cream. Of course I got like very cute artisanal candies that fit the theme and made it feel really like a hogwarts candy feast. I got black and orange twisted lollies, chocolate skulls, the large round vintage lollipops I covered with white tissue paper and drew ghost faces on them, candy corn sprinkled on the table mostly for decoration, chocolates, it was a lot for just us but a lot of offerings were made and now I have plenty of left overs ha ha. My friends were thrilled at the magical feast and when I get to let my kitchen witchery shine. One suggested I should just host events and people pay me money to do this for a living lol.
Also I’m apart of a witchcraft group on fb and it’s cool to see how many various cultures celebrate a day of the dead whether it be Italy (festival delle ombre), China (Qingming festival), Mexico, Haiti etc and it’s a holiday that has to do so much with heritage and it’s interesting how much the food I made is just very black American soul food (which I associate with mid autumn anyway cause my family would make baked Mac and cheese with sweet and spiced beans this time of year) mixed slightly with French cooking. I mean all together it still feels very Americana but usually since samhain is celebrated in mostly Western European circles and I went to a few samhain feasts this year it’s funny how mine is unique since the food choices are not traditionally Irish/far Western European at all.

Valentine's Day isn't something that I bother much with myself even though I do have a very special person in my life. I show and tell my husband each and every day how much I love him and value him, and I certainly don't relish occasions that make people feel compelled to dash off to the store to purchase things that aren't really needed, such as overpriced roses and treats, or spend an excess of money at expensive and crowded restaurants. My husband is very fortunate to get special meals and treats on a regular basis as part of my food blogging project and just because I like to provide good nourishing meals. And he likes to treat me too, all year round.
But Valentine's Day is an excuse for many people to prepare special foods for their sweethearts, and if you're looking for ideas you may want to try some of these vegetarian recipes that will certainly illustrate your passion for your honey. From breakfast to dinner right through to tempting treats and desserts, there's no shortage of opportunity to make this a special day for your most loved one.
