Transport yourself to the shores of the Mediterranean with this refreshing Greek pasta salad. It's packed with crisp veggies, tangy feta cheese, and a zesty dressing that's sure to brighten any meal.
Ingredients: 12 oz fusilli pasta. 1 cup cucumber, diced. 1 cup cherry tomatoes, halved. 1/2 cup Kalamata olives, pitted and sliced. 1/2 cup red onion, thinly sliced. 1/2 cup feta cheese, crumbled. 1/4 cup fresh parsley, chopped. 1/4 cup olive oil. 2 tablespoons red wine vinegar. 1 teaspoon dried oregano. Salt and black pepper to taste.
Instructions: As directed on the package, cook the pasta. Once it's done, drain it and run cold water over it to cool it down. Put the cooked pasta, cucumber, cherry tomatoes, Kalamata olives, red onion, feta cheese, and parsley in a large bowl. Salt and pepper should be mixed with olive oil, red wine vinegar, dried oregano, and red wine vinegar in a small bowl. Give the salad a gentle toss to coat it with the dressing. Put it in the fridge for at least 30 minutes before you serve it.

Cook Time: 10 minutes

Ingredients: 1 lb green beans, trimmed and halved. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup Kalamata olives, pitted and sliced. 1/2 cup feta cheese, crumbled. 1/4 cup extra-virgin olive oil. 2 tablespoons red wine vinegar. 1 teaspoon Dijon mustard. 1 clove garlic, minced. Salt and pepper to taste. 2 tablespoons fresh parsley, chopped.
Instructions: Blanch the green beans in boiling water for 2-3 minutes, then transfer to an ice bath to cool. In a large bowl, combine the blanched green beans, cherry tomatoes, red onion, olives, and feta cheese. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper to create the dressing. Ingredients: 2 boneless, skinless chicken breasts, sliced. 2 tbsp olive oil. 2 tsp dried oregano. 1 tsp garlic powder. Salt and pepper, to taste. 1 cup cherry tomatoes, halved. 1/2 English cucumber, diced. 1/4 cup red onion, thinly sliced. 1/4 cup Kalamata olives, pitted and halved. 1/4 cup crumbled feta cheese. 2 cups mixed greens. 2 tbsp tzatziki sauce, for serving.
Instructions: In a bowl, toss the chicken slices with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated. Heat a skillet over medium-high heat. Add the seasoned chicken slices and cook for 6-8 minutes, or until cooked through and golden brown on the outside. Remove from heat and set aside.
