JUST Egg vs. Egg
My stomach doesn't always react well to eggs, which limits both my breakfast and ramen topping options. I've seen JUST egg in just about every supermarket I go to, so I finally decided to give it a try. I chose their frozen folded egg, thinking it would make an easy, filling breakfast. And it does! When I'm in the mood for something savory, or an egg sandwich, I toast it and voila, breakfast is ready.
But it's also great in other dishes where eggs are usually found. I've just started experimenting, but I really enjoy it on my ramen. Here's how I make it for two:
Two ramen cakes (I like Lotus Foods' Rice Ramen)
One packet of instant miso soup
Two JUST folded eggs, toasted and sliced
One sheet of nori, torn into small pieces
Green onions, chopped
Cook the ramen according to the package directions.
While the ramen is cooking, split the miso soup powder into two bowls.
When the ramen is finished, before draining, ladle the hot water into the bowls.
Drain the ramen and divide it between bowls.
Top with JUST eggs, nori, and green onions. Add seasoning and sauces if you'd like.

Vegan JUST Egg Copycat
Ingredients:
1/2 cup split Mung beans
1/2 tsp salt
1 tsp kala namak (Indian sulphur salt) or 1.5 tsp of Montreal steak seasoning (and then omit the salt and pepper as there’s already salt and pepper in Montreal)
1/4 tsp each garlic powder, onion powder
1/8 tsp black pepper
1/4 tsp turmeric for color
1 tsp nutritional yeast
1 tblsp oil
2 tblsp cashews
Instructions:
Soak cashews and mung beans together in 3 cups of water for 8 hours or overnight
Pick out the cashews and blend them with 2/3rd cup of water
Drain mung beans and add to blender along with all the seasonings in ingredients (not the oil)
Blend for a minute, let it rest, then blend another minute.
If you want veggies (I highly recommend at least bell pepper and onion, cut up a couple tablespoons of each) and heat up a pan on medium heat, put in the oil and veggies. Let the veggies cook. If no veggies, then just proceed to next step with oil in pan.
Reduce heat to medium low, pour in 1/4th cup of the batter for a single serving and cover with a lid. Let cook for a minute or until you see it solidifying underneath a bit
Then flip and cook for another 30 sec-1 min. You don’t want it to over cook and be too hardened!
And it’s done! I like to break it up a bit and put it in a bean burrito with salsa and sometimes potatoes!
Mine did not come out as good as it could’ve come out because I cooked it on too high of heat! medium low heat is key it seems. I adjusted recipe appropriately for those who want to try. Inspiration from: https://www.veganricha.com/vegan-omelet-with-mung-bean-egg/#recipe
But definitely take my adjustments over the inspiration recipe. Medium is too high of heat and it needs more seasoning than it recommends. Trust

so once me and my wife were watching a documentary where a snake ate like a million eggs. that snake just went to fucking town on eggs. and the snake made the eggs look so good that i kept thinking about it, and thinking about it, and thinking about it, and eventually it was 11pm and i ran out of willpower and decided to eat one (1) singular raw egg just to prove to myself that the snake was surely a liar.
the snake was not a liar. texture is like, super important to me and raw eggs are very Texture so i had another one, and then another one, and then another one, and eventually i ran out of eggs.
i had like, fifteen raw eggs.
i didnt really know how to explain this momentary madness to my wife, so my Plan was to put all the eggshells into a grocey bag, and then throw that grocery bag in the dumpster, and if she never noticed that would be Excellent and if she noticed immediately i could lie and say that the eggs went bad.
except i cant lie very good, and of course with murphys law being such, i got salmonella.
so i threw up a lot and my wife asked me what poisoned me so and i tried very hard to dodge the question but i was oozing shame like oil from a room temperature cheese and eventaully i gave in and told her everything and to her enormous credit she was more flabbergasted than actually upset. she did make me promise to not eat any more raw eggs, which i have stuck to, and she gives me weird looks during nature documentaries now as if desire was the only thing keeping me from eating thousands of pounds of krill anyway i made a joke earlier about being able to eat my age in eggs and my sister in law in law made a drawing to comemorate the moment and also because it was my birthday. she's excellent. thank you 10000000% @cintailed. you should all visit her page and admire her work.
