I would do some things differently, but it came out very tasty!

Hey, hey, it's okay. It's gonna be okay. 100g flour, one egg, pinch of salt and a splash of olive oil, knead until it feels like play-dough, wrap in cling film and leave in the fridge for just about 30min, take it out and roll it on a flour dusted counter with any old glass bottle until it's thin enough to see your fingers through, cut in funny shapes or just in strips, cook in boiled salted water for 3min, you made pasta

Tonight, I went all out. I made homemade pasta, homemade ricotta cheese, homemade sauce, and made the filling for my manicotti with the fresh ricotta and the Italian cheeses that I got in NY... Parmesan reggiano, pecorino romano, asiago, and caccicavallo!!! This is the best manicotti I've ever had!! The inside filling is so fluffy and tasty, and the pasta is very tender. The sauce is delicious because I cooked the rinds of all the cheeses in it for hours. Now, I'm gonna have to make manicotti this way every time because I'm spoiled. It was a lot of work, but it was well worth it. This is sooooooo good. Petey agrees. 😊😋😍😁🤗 this was so inexpensive to make, and it's better than any restaurant food I've ever had. 😋 I'm very proud of my manicotti. I've gotta make more soon!!! 😍

We thought for years that my sister was a very picky eater who almost exclusively ate chicken nuggets. It turns out her tastes are just weird as hell and even though our parents exposed us to a wide variety of cuisines, her foods just never came up.
This is her homemade pasta with squid ink black sauce.

This pasta is a bit of a strange one--I wanted a citrus pasta, but I wanted something other than lemon pasta because I’ve done that a lot, and blood oranges are out of season now. I decided to make a grapefruit sauce, which was good if a little bitter, so I might try this again with some orange juice squeezed in to balance out the bitterness of the grapefruit, but it’s definitely intriguing to me.
