I've fallen behind with @quezify 's Eggtober as I've been busy lately. Today I was busy making gnocchi.

Cheesy Artichoke and Spinach Stuffed Garlic Bread
Ingredients:
• For the Garlic Bread:
• 1 large loaf of French bread or Italian bread, sliced in half lengthwise
• 1/2 cup unsalted butter, softened
• 4 cloves garlic, minced
• 1 teaspoon dried parsley
• 1 teaspoon dried oregano
• 1 teaspoon dried basil
• 1/2 teaspoon red pepper flakes (optional)
• Salt and pepper to taste
• For the Cheesy Artichoke and Spinach Filling:
• 1 (14 oz) can artichoke hearts, drained and chopped
• 1 cup fresh spinach, chopped
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• 1/2 cup mayonnaise
• 1/2 cup sour cream
• 1/4 cup cream cheese, softened
• 1/4 cup chopped fresh parsley
• 1/4 cup chopped green onions
• Salt and pepper to taste
Instructions:
1. Preheat Oven:
• Preheat your oven to 375°F (190°C).
2. Prepare the Garlic Bread:
• In a small bowl, combine the softened butter, minced garlic, dried parsley, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper.
• Spread the garlic butter mixture evenly over the cut sides of the bread halves.
3. Prepare the Cheesy Artichoke and Spinach Filling:
• In a large bowl, mix together the chopped artichoke hearts, chopped spinach, shredded mozzarella cheese, grated Parmesan cheese, mayonnaise, sour cream, cream cheese, chopped parsley, and chopped green onions.
• Season with salt and pepper to taste.
4. Assemble the Bread:
• Evenly spread the cheesy artichoke and spinach mixture over the garlic buttered bread halves.
• Place the bread halves on a baking sheet, cut side up.
5. Bake the Bread:
• Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly, and the bread is golden and crispy around the edges.
6. Garnish and Serve:
• Remove from the oven and let cool for a few minutes.
• Garnish with additional chopped fresh parsley if desired.
• Slice into pieces and serve warm.

I made homemade ricotta cheese gnocchi for the first time!! They are light, fluffy pillows of love and goodness!! ❤️ they cost pennies to make, and they're sooooooo easy to make. I finished cooking them and plating them in less than half an hour. I made the sauce yesterday because it always tastes better the day after making it because it gives it time for the spices to blend. Although they have Parmesan cheese in them, I sprinkled it on top because it tastes great. I can never have enough Parmesan 😋😍 next time, I'm gonna try making gnocchi with potatoes. I think that will be wonderful, too! I, highly, recommend cooking homemade gnocchi. It's easy, cost-effective, nutritious, and delicious. They're, also, very fun to make. In the words of Julia Child.... bon Appétit 😊

ok. will be trying to go for evening walks from today on. but one little detail of my life was that loved all the meals i had today. breakfast was multigrain toast with homemade fig preserves (courtesy of my grandma) + passionfruit cold tea. lunch was munggo (mung bean soup) (again, grandma's handiwork), rice, and a dragonfruit shake my sister made. dinner was sushi i made with imitation crab meat, topped with some rice seasoning, sriracha mayo + gochujang hot sauce. i ate some lychee afterwards too. love is stored in the cooking. really. that's my small joy of the day. i hope you all eat well.
