Festive Baking
Today is Saint-Nicholas Day, celebrated across Europe, from Germany to France, Belgium to Switzerland and the Netherlands (on the 5th December for our Dutch friends), and thus I reckon it's a good day to start indulging in Festive Baking! My Christmas Pudding is maturing in the dark and won't be revealed until Christmas Eve or Day, but whilst we wait, there is plenty of time for spiced biscuits, crisp meringues, soft saffron brioches or mouth-watering custard tartlets! And you can even bake a batch of vanilla, chocolate or gingerbread bikkies to decorate your tree --we are getting ours this weekend! It's cold outside, and it is a season for being nice to yourselves, your friends and loved-ones, and nothing says "I love you" like a plate of freshly baked little pies filled with the right amount of sultanas and flaky pastry (especially when your girlfriend designed a recipe specially to cater to your moderate appreciation of aforementioned sultanas!) Have fun baking, friends, and even more fun eating these beauties!

Sour Cream Cookies Recipe

• 1/2 cup unsalted butter • 2 cups granulated sugar • 4 eggs • 2/3 cup sour cream • 2 teaspoons vanilla extract • 1 teaspoon of salt • 4 cups self-rising flour
Preheat oven to 350 degree and bake for 10-12 minutes
Icing Recipe

• 1/2 cup butter • 2 1/2 cups powdered sugar • 1 teaspoon vanilla • 2 tablespoons of milk • Food coloring (Optional)
Tips and tricks
₊˚ ‿︵‿︵‿︵୨୧ · · ♡ · · ୨୧‿︵‿︵‿︵ ˚₊
• Do not roll them out • Add sprinkles if desired • Mix the wet and dry ingredients separately before mixing them together • When storing in a container put a piece of bread in there to keep them soft • Do not try to use cookie cutters. These are cakey cookies, and will not bake well as shapes.

I would really like to make gingerbread for Christmas but I need to practice a bit first. Sadly I don't have any recipes. I'm going to look on YT and the usual websites but I was wondering if anyone knew of a gingerbread recipe which is really good?

Italian Biscotti
Source: California Wine Country Cooking Secrets (1993)
Yields: 4 Dozen Pre-heat oven to 350° Preparation Time: 45 Minutes
1⁄2 cup butter
1⁄4 cup sugar
3 eggs
1⁄2 tsp. vanilla
3 cups flour
3 Tbsps. baking powder
1⁄2 tsp. salt
2 Tbsps. grated lemon peel
2 Tbsps. grated orange peel
1 Tbsp. anise seed
1 cup almonds, chopped
Cream butter and sugar, then add eggs one at a time, beating well after each addition. Add vanilla. Sift together flour, baking powder and salt. Slowly add to the creamed mixture. Stir in lemon and orange peels, anise seed and almonds, blending well. Divide dough into 3 parts and shape each part into a long roll about 11⁄2" in diameter. Place rolls onto cookie sheet several inches apart and flatten slightly. Bake at 350° for 15 minutes. Remove from oven and slice roll crosswise 4" thick. Lay cut side down on cookie sheet, return to oven and bake an additional 15 minutes.
Cooking tip: This recipe makes a biscotti that is not very sweet, in the traditional manner of Italian baking. For something different. try dunking these biscotti in a glass of Sebastiani Barbera.
