Just made the best grilled chicken of my bbq life and it was so damn easy
I have to share
The chicken: bone-in skin on thighs
The prep: open package, place the chicken on a plate and salt on both sides with kosher salt in an even layer.
The marinade: 3 Tablespoons of ranch dressing and a 1/2 cup of buttermilk, or mixture of yogurt and milk.
Place the thighs in a ziplock with marinade and let it sit while you set the grill up. You can marinate longer, or even overnight for improved texture/flavor, but mine only went about 90 minutes before I cooked them and they were fantastic.
Set up the grill half with coals, half with a water bath. Add a few chunks of smoking quality hardwood on top of your coals. You can use a gas grill for this but you won't get the smokey flavor which is a big part of this. If you have a gas grill, you may want to baste the chicken with a bbq sauce near the end of cooking to enhance flavor. You need at least a full size Weber for this, you can't do this on a smokey joe. When your temperature hits 350, close your dampers (I used 1/4 open on top and bottom on my weber) and keep the temp as close to 350 as possible.
Put the chicken on the cool side of the grill, with the skin facing up. Shut the lid and let cook for 45 minutes without opening the lid. Use your vents to keep your heat low and steady. After 45 minutes rearrange the chicken thighs so that they cook evenly. Check and add charcoal if it is depleted, but if you kept your temp under control, it should be fine. No need to add smoking wood, they should be pretty well smoked by this point. Put the lid back on and cook another 45 minutes. The next time you open up, test the thighs. They need to get to at least 165, but they can go a lot higher without drying out.
Open your vents to stoke up the hot side of the grill, adding more charcoal if needed. Keeping the lid on the grill will help it heat faster. When the temperature gets up over 400 put the thighs skin side down on the hot side. As the fat renders out of the skin you will get flare ups. That's fine, you want some of that. Don't let them catch fire and you'll be fine. Use tongs to get the charring on all sides of the meat. This is the point to add some bbq sauce to your thighs if you want. Cook for five-ten more minutes with the meat on the cool side of the grill and the lid on to set the sauce.
When the thighs are at the doneness you prefer (I personally like well done 180F+ on chicken thighs), remove them to rest a few minutes.
These grilled chicken thighs are great as is hot, or cold in picnic lunch, cut up in a salad, shredded for tacos, put in a wrap etc. Serve with BBQ sauce on the side.

Right that's it. Dropping everything else this week to spend some time learning how to cook things I can actually stomach.
#had to ditch art group today bc i couldn't sleep so i was already a wreck#and then to top it all off it's been a Bad Food Day so i couldn't eat before it was time to go and i didn't wanna go and then like pass out#anyway recently a lot of my safe foods have been feeling less safe#bc apparently i'm craving flavours#but not too many flavours??? idk man#maybe the t is changing my taste buds#but i can't slog through a plate full of like plain carbs n veg with just salt anymore#so i have to start cooking things#i know i like stuff seasoned with lemon and i know i like chicken tikka seasoning so i guess i'll start there#the trick is gonna be finding ways to cook/season things that gives them the flavour boost i need but doesn't make em all squishy and gooey#frying and grilling and roasting will be involved i imagine#this is why i can't go vegetarian#the food i can eat is already so goddamn restricted#if you cut chicken out of my diet i'd be surviving on potatoes and fruit and you could knock me over with a stiff breeze lmao#anyway. i dislike cooking it takes so much time i'd rather be doing other stuff with.#but i can't rely on dad to help me with this and i need to do somethng soon or we're gonna be in trouble#so if anyone has any super quick easy cooking/seasoning tips (pref. ones that don't involve onions) hmu 💛#mr. bees speaks

Grilled Spicy Soy Chicken Drumsticks
A warm and sunny Summer Sunday is made for lighting up the barbecue and making a meal of smoky grilled meat or fish. There is something contemplative about watching wood and coat set alight, the hypnotic dance of fire and flames, until they turn to red embers, which perfectly suit a lazy day. And besides the setting of the barbecue, preparing the meat takes very little effort: it's a matter of assembling a marinade and forgetting it in the fridge for a few hours, and then, it cooks in minutes!
Thus I reckon it's well worth it to fire up the barbie and make these finger-licking delicious Grilled Spicy Soy Chicken Drumsticks, even if it's just for yourself! Happy Sunday!
Ingredients (serves 1):
1 heaped tablespoon Hot Pepper Sauce
1 tablespoon soy sauce
2 heaped teaspoons honey
1 teaspoon toasted sesame oil
3 beautiful chicken drumsticks
In a shallow dish or plate, combine Hot Pepper Sauce, soy sauce, honey and sesame oil, stirring well until perfectly blended.
With a sharp knife, score the flesh of the chicken drumsticks. Place drumsticks in the dish and toss well with clean hands, thoroughly rubbing marinade into the chicken flesh.
Cover with cling film and place in the refrigerator, to marinate, at least a couple of hours.
Prepare barbecue: half an hour before grilling, arrange a layer of coals in the barbecue. Top with a few small branches of wood (applewood gives good taste), and light.
Wait for the flames to die down, and place the marinated chicken drumsticks on the grill over the red embers. Grill, about 7 minutes on each side until well-cooked through, and nicely charred. As you turn drumsticks on the grill, generously brush with remaining marinade, and once more just before serving, to glaze them nicely.
Serve Grilled Spicy Soy Chicken Drumsticks hot, with a side of mango salad or, and a glass of chilled Gris Rosé or Chardonnay.
