Anyone else got that thing where they HATE cooking so much they will avoid it at all costs, and the only way to make yourself not avoid it is be so FUCKING GOOD at making the few things that you like that you're FORCED to cook them just because the allure of them is strong enough to make your executives function?
Yeah.
Annoyingly I am a good cook. And I must suffer in order to enjoy the dishes I excel at. If I was bad at cooking I think there would be no hope for me in that regard tbh. Health hanging on by the thread of my ability to use spices intuitively.
#legit this is the hardest part of arthritis for me#having to change to a fresher food diet#when i am loath to cook#and arthritis makes you want to cook even LESS#but my pan-caramelised herb chicken is so fucking good#it HAS to be or I wouldn't make the effort#like yes i want fresh not processed meat#but that necessitates both PLANNING and COOKING#and both of those things are the worst

I have a vision, and it's green (:

For those of you who don't know me, hi— I'm Aniah (: and I have a pretty big green thumb; and by this, I really just mean that I'm a proud plant mom. From succulents to vines, from palms to trees, I have it. However, recently, I've grown an itch to add an additional category of plants to the family- kitchen herbs! I'm super excited to get into the rhythm of research and even more excited to go shopping once I complete my Herbs-To-Buy list! A few herbs that have already added to my list are Oregano, Lavender, Rosemary, Thyme, Parsley, Dill, Basil, and Sage. If you guys have any tips or recommendations at all regarding ideal herbs or just gardening in general, feel free to drop a comment! By the way, these will all be indoors <3

Creamy Pollock and Leek Pasta

This simple Creamy Pollock and Leek Pasta transforms leftover Lemon and Garden Herb Baked Pollock on Leeks into a tasty lunch, both light and indulgent! Happy Tuesday!

1 1/2 tablespoon olive oil
1 lemon
about 2 cups leftover Lemon and Garden Herb Baked Pollock and Leeks (bones removed)
3/4 cup crème fraîche or sour cream
1/2 teaspoon freshly cracked black pepper

Stir in leftover Lemon and Garden Herb Baked Pollock and Leeks, and reduce heat to medium. Cook until hot, about minutes.
Then, stir in crème fraîche, and season with black pepper. Simmer, about 5 minutes more.
Once the fusilli are cooked, quickly drain, saving 1/4 cup of the starchy cooking water, and stir both into the skillet, coating the pasta nicely. Thoroughly squeeze in the juice of the whole lemon.

also fuckin. thinking about miravi with food. aaravi with a foodtruck and enjoying making people food and the love language of it all. miranda slowly recovering from an eating disorder* and needing both patience and a safe environment with support to begin healing. yeah.
#all the care guide says is 'biomass'#miravi.txt#its really good.......#i like one of the love languages of miravi being food#although i guess superficially it can be hard to tell because its not the Typical idea of what that means#which i dont mind so much because neither of them are typical#and your life isnt exactly going to be typical either when youre recovering from trauma/abuse#just. one day miranda comes home with a little potted tomato plant#and gets some potted herbs#and slowly figures out how to nurture them and help them grow and gets them to flourish#and she got them because she wanted to help provide fresh ingredients to aaravi for her cooking#its nice to feel like she can support life. its nice to feel like shes not just doomed to kill everything she touches.#Monster Prom

My wife and I had a little bet about the biodiversity of our garden the other day. I thought there were at least 40-50 different kind of plants growing there. My wife laughed at me and thought we'd be closer to 30.
For context, we grow a lot of vegetables and berries during the summer but now the chilies and cucumbers and tomatoes aren't planted yet because the Dutch weather is a fickle bitch and goes from freezing to 16°C in the span of a week.
Today, after some I could smack her in the face with some truth because even in late winter our garden has a whopping 60 different varieties of plant, flower or other fauna.
The rosemary and thyme have survived the winter with flying colors, and the daffodils, crocus and tulips are starting to come up. Our wisteria needed a very thorough pruning but I'm eagerly awaiting its bloom now that it had a haircut.
Against all hope, the blueberry and gooseberry bushes that I had given up on last year are budding and all signs point to it joining the blackberry, raspberry and strawberry once summer rolls around. In these expensive times, nothing beats homegrown fruits and veggies.

Potato Salad with Fresh Herbs
Follow me on Instagram @RonnieVFein
There is no end to the ways you can make potato salad. Start with cooked (boiled, roasted) waxy potatoes (like baby Yukon gold or red bliss) and then:
peel or not peel — it’s up to you
use them alone or with other solid ingredients such as chopped bell pepper, celery and/or some kind of onion (scallion, chive, shallot, etc.), thawed frozen peas, hard cooked egg chunks, cooked beans or chick peas, capers, anchovies, pickles — and so on. You can even add leftover cooked fish, poultry or meat to make a dinner salad.
season the salad with chopped fresh herbs (rosemary, oregano, dill, thyme and such), dried herbs, chopped chili pepper, spices such as curry powder, Worcestershire sauce, hot pepper sauce, Dijon mustard, wasabi, horseradish — etc. etc. etc.
dress the salad with: oil (olive, avocado, peanut, etc.) and vinegar (white or red wine vinegar, sherry vinegar, Balsamic) or some other acidic liquid such as lemon juice. For a richer flavor add some mayo, plain yogurt, buttermilk or dairy sour cream.
You get the point — I could write an entire book devoted to potato salad. These are just a few ideas.
Yesterday I taught a class about potato salad for the New Canaan YMCA. This is one of the versions I made for the class.
Happy summer although, I’m sure you know, potato salad is never out of season.
POTATO SALAD WITH FRESH HERBS
2 pounds small waxy potatoes
lightly salted water
1/4 cup mayo
3 tablespoons olive oil
2-3 tablespoons white wine vinegar
1 teaspoon Dijon mustard
2-3 tablespoons finely chopped fresh parsley or other herbs (such as rosemary, oregano, thyme, dill, marjoram, etc.)
salt and freshly ground black pepper to taste
Place the potatoes (with their skins intact) in a saucepan, cover with lightly salted water and bring to a boil over high heat. Lower the heat and simmer for 15-20 minutes or until tender. Drain under cold water and peel, if desired. Cut the potatoes into bite-size pieces and place in a large bowl. In a small bowl, whisk the mayonnaise, olive oil, wine vinegar and mustard together until the mixture is uniform in color. Pour over the potatoes. Sprinkle with the herbs and salt and pepper if desired. Toss the ingredients and let rest at least 1 hour before serving.
Makes 6-8 servings
