Endives au Gratin

These Endives au Gratin, baked under a generous blanket or cheesy Béchamel sauce make a hearty dinner as evenings and nights get chillier. Happy Sunday!
Ingredients (serves 4):
½ tablespoon unsalted butter
4 large endive heads
6 slices cured ham, like Serranó or Parma ham
1 1/2 cup Béchamel Sauce
Cantal Cheese or Mature English Cheddar
Preheat oven to 200°C/395°F. Generously butter a large baking dish. Set aside.
Halve endive heads and Serranó ham slices. Wrap the bottom of each endive halve with cured ham, and arrange all eight halves in the baking dish.
In a medium saucepan, heat Béchamel Sauce over a medium flame until bubbling. Grate in about 1/3 Cantal or Cheddar cheese, stirring until completely melted.
Pour cheesy Béchamel Sauce over the endives, levelling into an even layer with a spatula. Grate more Cantal or Cheddar Cheese generously on top.
Place in the middle of the hot oven, and bake, at 200°C/395°F, 35 minutes until golden brown.
Serve Endives au Gratin hot.

Soupe de Poisson (French Fish Soup)

Sometimes, it might be cheaper to buy a whole fish at the market, rather than fillets at the store. Ask your fishmonger to gut and cut it, or you can try your hand at filleting yourself if you're making Cured or Smoked Salmon, for the holidays. Keep the heads, tails and spines in zip-lock bags in the freezer, and even after you've eaten all the salmon and Skipjack, there's still plenty delicious things you can cook with what remains. You could make useful Fish Fumet; but in this season, a hearty and warming Soupe de Poissons seems the better option! It takes time, but it is all rewarded in taste and flavour! And there is something festive about dunking or floating toasted bread, slathered with Rouille, and generously topped with grated cheese! Happy Friday!
Ingredients (serves 6 to 8):
2 tablespoons olive oil
1 large onion
3 to 4 medium carrots
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried dill
2 garlic cloves
3 tablespoons olive oil
the head and spine of a large salmon
the head and tail of a skipjack tuna
2 cups water
1 tablespoon Chili and Herb Oil 
1 1/2 teaspoon coarse sea salt
1 teaspoon freshly cracked black pepper
5 Whole Peeled Tomatoes + 1/2 cup of their juice
1 litre/4 cups Fish Fumet 
2 to 3 cups water
1/2 teaspoon Piment d'Espelette or Cayenne Pepper
Heat olive oil in a large, wide pot, over medium-high heat.
Peel and finely chop onion, and add to the pot. Cook, about 3 minutes, until softened.
Peel carrots and cut them into slices. Stir into the pot, with the onion.
Season with dried thyme, basil, oregano and dill. Cook, a couple of minutes.
Peel garlic cloves, and stir into the pot. Cook, a couple of minutes more.
Transfer onion and carrot mixture to a plate; set aside.
Add olive oil to the pot. Once hot, add the salmon and skipjack heads and brown, about 2 minutes on each side. Add salmon spine and skipjack tail, and cook on all sides, as well. Cover with water, and bring to the boil.
Once boiling, reduce heat to medium, cover with the lid, and simmer 15 to 20 minutes.
Drain fish heads, tail and spines, and allow to cool before scooping out the cooked flesh, carefully removing all the bones.
Return large pot over a medium-high flame, and add Chili and Herb Oil. Add cooked salmon and skipjack flesh, and fry, a couple of minutes. Stir in reserved onion and carrot mixture. Cook, a couple of minutes more. Season with coarse sea salt and black pepper.
Roughly chop Whole Peeled Tomatoes, and stir into the pot, along with their juice. Cook, another couple of minutes.
Finally, stir in Fish Fumet, and bring to a slow boil. Once boiling, reduce heat to medium-low, cover with the lid, and simmer, 10 to 15 minutes.
Process soup, in batches in a blender, gradually adding water until mostly smooth, but not too thin.
Return over the heat, to warm. Stir in Piment d'Espelette.
Serve Soupe de Poissons hot, with toasted Sourdough generously slathered with Rouille! You can generously grate cheese, such as Cantal or Mature Cheddar on top, too! Bon appétit!

As the three women stood there, taking leave of each other, the odour of the cheeses seemed to become more pestilential than ever. It was a cacophony of smells, ranging from the heavily oppressive odour of the Dutch cheeses and the Gruyeres to the alkaline pungency of the Olivets. From the Cantal, the Cheshire, and the goats’ milk cheeses there seemed to come a deep breath like the sound of a bassoon, amidst which the sharp, sudden whiffs of the Neufchatels, the Troyes, and the Mont d’Ors contributed short, detached notes. And then the different odours appeared to mingle one with another, the reek of the Limbourgs, the Port Saluts, the Geromes, the Marolles, the Livarots, and the Pont l’Eveques uniting in one general, overpowering stench sufficient to provoke asphyxia. Thinkin of making a new robot OC for my stress-relief world with my sona character. Switch is a doll/robot hybrid with the purpose of "living," but in the solarpunk world they inhabit, and being one of a kind, I imagine they'd feel pretty lonely.
However, despite being unique, they aren't alone. Far away, in france, I have the idea of a french robot girl who's purpose is to "see." They have camera eyes that can become binoculars/telescopes to help them stare at the stars and skies. They would have two large twintails that would go in the shape of a crescent moon. Along with their lunar theming, they would be named Cantal, which is french for Cheddar!
This would be a nice, silly but perfectly thematic name, since 'the moon is made of cheese' exists and all.
Cantal would also speak french and live a nice life, would also probably love going to bars with their friends, showing off their album and taking photos with and for people, at the end of the day, they'd be the designated driver and one to make sure their drunk friends don't get hurt! Completely unintentional, but that fits in with their purpose, to 'see.' To oversee others. Not their purpose, and it's something they simply... fell into. Cantal and Switch would eventually meet, but they wouldn't be able to converse with each other. However, both know sign language, and use that to communicate until both sides learn more English/French to properly talk with each other.
I imagine they meet by complete and utter chance via news articles talking about them, and by the internet, and word of mouth from there, both the US and France learn of their respective robots and... got them to finally meet, to everyones joy.
Cantal's photography skills would be pretty good, and their eyes would be shutterstock, which means their eyelids would probably be weird, and their eyes would look like this

Which I imagine would be kinda freaky, I think at first, people would be creeped out about them, but as time goes on, would learn Cantal is just very timid and shy, and just.. takes photos and shows them off with their projector. Despite being a living camera and projector, I think Cantal would be really nervous about someone taking their own photos. I can imagine them always blinking and looking away.
I also wanna look up some french fashion so I can have some fun designing them, something practical and fun!
