Dear Sephiroth: (a letter to a fictional character, because why not) #316
Today's letter might be a bit short; my focus is scattered all over the place, and my legs are screaming at me from a long walk in the woods today. I don't have any profound thought to share or anything insightful to write about today, because it is late and my brain is the consistency of soup.
…And it's not even some kind of soup with a thick consistency, either - like a bisque or a chowder. No, this is more like a thin soup with sad, scraggly little noodles, and maybe a small piece of carrot floating around aimlessly.
Still, I had fun today, even if I'm tired now. 😁
I got up early today to pick up my friend, BB, from a car shop; she had to leave hers there to get it inspected and all that. But M needed his car for an appointment today, so I couldn't go on my own because she wanted hangouts afterwards. So M and I both went, and we picked her up, and M dropped BB and I off at her house for hangouts and then he went home.
BB and I did all sorts of fun stuff together!! She showed me some of the music from Final Fantasy 14, and then we watched some kitboga on YouTube (the guy who scams scammers), and then… I gathered up a bunch of their bottles and cans.
In my world, bottles and cans can be recycled. Where I live, one can get money for this if you use special recycling places. You insert the cans or bottles into a special machine, one by one, and in the end, you get a receipt that you can redeem for money - 5 cents per can or bottle turned in this way.
For reference, 100 cents makes up a dollar. It takes about 4 dollars to purchase one gallon of milk. It takes about 3 dollars to purchase a carton of 12 chicken eggs. I don't know how much gil these things cost in your world, or what the economics are that influence the price of these things in your world, though, so I can't say how many gil a dollar is worth. Sorry about that.
Normally, we of my house just put our cans and bottles into the recycling bin at home and some folks take it away, and we do not get any money for it. But at my job, they want to host some kind of potluck, and the people setting it up are accepting the receipts from those special machines to pay for the potluck. BB and her husband N go through a lot of bottles and cans, so with their help, I gathered up everything they have, and managed to fill up a giant trash bag about halfway! I should get at least a couple dollars for it, and then I'll give it to the folks organizing the potluck!
I helped to clean up N's study a little, too, in the process! And from there, BB's car's inspection was done, so M returned, and we drove BB to the place where her car was so she could pick it up. And then M and I went home, and we got some candy for tomorrow on the way. It feels good to be able to help my friends! And I even got a nice picture of the sky on the way home, too...
After I got home, I finally got around to cooking some rice in the leftover juices from those chicken leg quarters I made before. I know that it's been sitting in my fridge for a while now, but chicken juices tend to be pretty stable, especially if they're put into the jar hot and the fat rises to the surface and solidifies to prevent bacterial growth. It still won't keep forever, but still, it's usually good for about a week or two, as long as it doesn't smell weird.
But then, I forgot that tonight, J and I were supposed to do a night walk in our nearby nature trails with a group of hikers! So I put the rice in and set it to cook in the chicken juices (I added a little water to it, to make up for the volume taken up by the fat), and then we left the house pretty much right after that; I asked M to unplug the rice cooker when it beeped, so that the rice wouldn't get dried out and weird; that's what happens if you let it sit in the "keep warm" setting for too long.
The walk was done at night; it was dark. I couldn't get a whole lot of pictures, but I did get a couple…
...I feel really lucky to have been able to snag these, even with my silly little cellphone camera!
The walk was two hours long, though. And the people we walked with were nice enough, but... my body hasn't engaged in lengthy activity for some time now, so even though we got back at like 8:30pm and it is now 12:30am, my legs are still kinda yelling at me, haha...
The rice was ready by the time I got back! By J's request, I had put the steamer basket in there, too; he had cut up some carrots and broccoli ahead of time and left it in the fridge inside the steamer basket. The veggies were maybe a little over-steamed, but they were still good. I put it in a bowl with the rice and the leftover salmon and mushrooms; it was very good!

I had intended to go to bed sooner than this, but like I said, my focus was scattered everywhere. But, as a happy result of my lack of focus, I got to have a very heartwarming conversation with one of my readers today, and I hope it leads to a nice friendship! We seem to have similar views on a variety of things, and she has told me a little about herself and her world, and I was really impressed by the upbeat attitude she maintains despite the various challenges she faces; I'm sure I could learn a lot by interacting with her, and I feel really lucky that she reached out!
...I wonder if I should make more effort to reach out more often. I'm generally afraid of making the first move when it comes to that sort of thing, though - even with people I know well. I feel like this attitude is rather limiting; maybe I'll talk about figuring out how to change it with my therapist on Tuesday...
Well anyway. My soup brain is getting the better of me. So I'm gonna stop writing now and go to bed.

Do you have a screenprinted shirt/hoodie that's stained? A pair of jeans that you hate the color of? Do you really want that cool merch hoodie but it's only sold in an ugly ass color? Do you want to dye something but not mess up the decal?
You need: fiber reactive dye! This is my how-to; it's enough stuff for a hoodie, a couple t-shirts, and a pair of jeans. About 5lb of cloth when it's dry.
Here's how this hoodie was sold and how it turned out. I bought it before he had the black one in the shop, back when the only color options were pink and blue.
Note: these instructions are for a front-loading washing machine and natural plant fabrics like cotton. Other methods are listed here:
Supplies:
The dye (1 8-ounce jar) https://a.co/d/aR1U5tP

3 26-ounce containers of non-iodized salt https://www.walmart.com/ip/10448311
A 5-gallon bucket https://a.co/d/12sZoPR
Something to boil 1gal of water in (I did it in 2 batches with my kettle)
Something to stir with (I used a big serving spoon, this dye will NOT stain anything but fabric)
A washing machine, regular laundry stuff
Vinegar
How I did it:
1. Wash the clothes you want to dye normally, but don't add fabric softener.
2. While the load is finishing, put all 3 things of salt, 3 cups (700ish ml) of soda ash, and half a cup (115ish ml) of dye, in the bucket.
3. Boil 1 gallon (4ish liters) of water and pour it in the bucket (I did this by boiling 2L at a time in my kettle)
4. Stir stir stir! Dissolve it as well as you possibly can.
5. When the load is done, take the clothes out.
6. Pour the whole bucket of dye mix straight into the washing machine. I was able to tip the whole bucket into my machine, but do be careful and think ahead on how you're going do this part.
7. Put the wet clothes back in the machine. Don't add anything else like soap.
8. Start the machine, using the hottest and longest cycle possible (on my machine this is the 'whites' setting).
9. Once the cycle is finished, add your regular laundry stuff to the machine (soap, fabric softener), and fill the bleach compartment with vinegar.
10. Run the machine again on the hottest and longest cycle.
11. Tumble or hang dry. Enjoy!

okay psa because i’m officially obsessed with this stuff:
if you knit/crochet and block items regularly or even if you handwash clothing sometimes: invest in a no-rinse laundry detergent
i got this stuff at a local yarn store recently and i fucking love it. you fill up your sink or whatever, add 5 ml/1 tsp of detergent per gallon of water, put your item in and swish it around, let it sit for 15 minutes, and boom! done! no rinsing! you just take it out and dry as you would normally!
it was $17 USD for this 500 mL bottle….which means that if i’m only using 1 gallon of water at a time, it’ll last me 100 washes. it comes in scents but the unscented is sooooo nice, esp. if you’re sensitive to scents like myself. you can even add this stuff to washing machines! i can’t because i don’t have in-unit laundry but the bottle says you can!
seriously save yourself some time and energy and get a no rinse detergent. 10/10 would recommend

December 16 - Almost time to head home for two weeks!!! I won’t like the cold but I will love seeing family and friends. I will also love the large washer and dryer (no coins!!), an endless supply of hot water without having to run a generator, no worrying about the interior lighting draining the batteries, a huge shower (and not having to take a dinghy ride to get to it!), endless trips to stores without having to plan trips around a bus schedule, not having to worry about holding tank capacity and pumpout, and not having to replenish the water in the tank 5 gallons at a time. It will be great to take a break from our “normal” routines of living on the boat.
Vero has had some very warm days where even walking produces a sweat. There have also been many cloudy, windy days that have been chilling but welcomed. David and I both don’t do well with sweltering heat. We have been able to walk the beach from Jaycee Park Beach to Humiston Park beach, a distance of a little over a mile. The beach changes daily and we never know what we will discover.
Seaweed on the beach is a rare occurrence in Vero. Then again, the beaches have been subjected to high winds and surf for days on end.

We were able to get reacquainted with Vic and Heather (on Journey) whom we met last fall in Charleston. They were in Vero for a short time but we managed to meet up for a happy hour at Mulligan’s and dinner at Pomodoro Grill.

David and I went to the VB Christmas parade. Thanks to advice given to us by a parade volunteer, we chose a viewing spot on Greytwig and Silver Palm which was near the end of the parade route. Great spot! It wasn’t crowded and we were really close to all the parade participants. We enjoyed viewing the parade with new Island Packet friends, Neal and Sharon, from Enso.

After several cloudy days, the lizards that live behind the sign decided to emerge to bask in the warmth of the sun. Gross!
Just a few of the lizards that live behind the sign board. Several more were on the entrance walkway to the restrooms and were emerging from behind the soda machine. One very big lizard made its way to the roof of the building.
An arts and crafts holiday fair was held in Riverside Park last weekend. There were vendors who had beautiful handmade items for sale. I had to pass on them, as Molly D does not like having breakable items aboard.

When the weather is good, the dinghy dock is full. The moorings at the marina are now filling with 3 boats per mooring. Molly D is the “sandwich” boat on mooring 5. Not ideal at all with the strong winds that we have been having!

The Ocean Grill on Ocean Drive goes all out in decorating for Christmas. David and I enjoyed a delicious lunch there yesterday. Great food and atmosphere!

Kouign Amann with Cardamom
Kouign Amann (pronounced queen ah-mon) is an extraordinary pastry from Brittany. In Breton kouign means cake and amann means butter. They are indeed small butter cakes with a ridiculous amount of sugar. I added cardamom to mine, because why not? And the cardamom gives the name of the butter cakes an aliteration that Ogden Nash would approve. One word of warning, according to the Times kouign amann is “the fattiest pastry in all of Europe”.
The basic dough seems innocent. Using the stand mixer you start with 400 grams of flour, add a teaspoon of sugar, a teaspoon of kosher salt, and tablespoon of yeast. This is whisked together, then 290 grams of water are slowly as the dough hook brings it all together. The dough is kneaded by the machine for five minutes or so. This gives a nice soft dough that is covered and allowed to rise for an hour.
While the dough is rising you prepare the butter. You need a half pound of high fat European style butter. The butter is placed in a gallon size zip-lock bag and with a rolling pin you smash and roll the butter into a rough rectangle of about 5 x 8 inches. This is then placed in the fridge to keep it cool.
After the hour rise, the dough is punched down and rolled out into a roughly 10 x 16 inch rectangle with the long axis left to right. Flour the bench to well before you begin. The butter is removed from the plastic bag and placed on top of the dough in the middle with the butter long axis pointing up. Using your hands the butter is extended upward and downward toward the edges of the dough. The dough is then given a letter fold with the right third folded over the butter in the middle third, followed by a fold of the left third topping it off.
You then turn the dough ninety degrees, roll it out to a the same roughly 10 x 16 inch rectangle again and repeat the folds. Square up the dough as best you can, then cover it with plastic wrap and cool it in the fridge for another hour.
While you are waiting, measure out two tablespoons of cardamon seeds and give them a course grind. Measure out two 100 gram portions of granulate sugar. Clean the flour off your bench top and prepare it for the next step by covering it with a healthy coating of sugar.
Take the dough out of the fridge place it on the sugar coated bench top and roll it out once again into a 10 x 16 inch rectangle. Sprinkle half the ground cardamom on top, followed by one of the 100 gram portions of sugar. Use the rolling pin to push it all into the dough a bit, then make another letter fold. Turn the dough a ninety degree and repeat the process. Roll to a 10 x 16 inch rectangle, coat with the remaining cardamon and the second 100 gram sugar portion. Fold it up, square it up, cover with plastic and return it to the fridge.
At this point all the sugar will begin to absorb moisture so the cooling time is cut to just 15 minutes. Return the dough to the sugar coated bench top and this time roll it out with more precision to a rectangle slightly bigger than 12 x 16 inches. You want it slightly bigger, because the next step is to expose the layered edges by using a sharp knife to trim the edges to give a more precise 12 x 16 inch rectangle. Once the trimming is done, cut the dough into twelve 4 inch squares.
Two half-sheet pans are lined with parchment paper, then six 4-inch tart rings are arranged on each pan. Each 4 inch dough square is then folded. Each corner is folded toward the middle and pinched together. The smaller folded squares are then each placed in the middle of one of the tart rings. The prepared pans are covered with a towel and the pastry is allowed to rise for an hour.
After an hour the pans are placed into a 375 degree oven. The temperature is immediately reduced to 350 degrees and the pastry is baked for 35 minutes. An aroma of cardamom fills the air!
The pans are taken out of the oven, the tart rings are immediately removed using your kitchen tongs and the Kouign Amanns with Cardamom are cooled on wire racks.
They may be “the fattiest pastry in all of Europe”, but trust me, they are worth it. The still soft butter layers have a caramel covered bottom and the cardamom comes through with its own distinctive aroma and taste. They are a lot of work, but give them a try. All reverse osmosis systems waste water during the RO process. This is due to the design of the membrane - it rejects contaminants (causing them to rebound back into the RO chamber) rather than trapping them in its pores, which means the contaminants must be flushed away with a small amount of waste water. The RKIN U1 has a 1:1 wastewater to pure water ratio, meaning that 1 gallon of water is wasted for every 1 gallon of pure water produced. This is very efficient compared to the average pure water to wastewater ratio of 1:4 for conventional reverse osmosis systems. So, while you still will have to dump half the water produced by the RKIN U1 (it’s dispensed into a separate compartment), you can enjoy a decent amount of purified water, too. Contaminant Removal Finally, let’s touch on the contaminants removed by this machine. The RKIN U1 is designed to remove up to 99% of all contaminants, including chlorine, fluoride, lead, other heavy metals, and more - exactly as you’d expect from a reverse osmosis filter. We’re disappointed that we haven’t been able to find a datasheet of third-party test results to confirm these contaminant removal claims. RKIN has also applied for an NSF certification to Standard 58, for reverse osmosis performance, back in August 2022, but we can’t currently find the product listed in the NSF’s catalog of certified water filters (the NSF certification process can take quite a while). The good news is that we do have access to IAPMO testing for the removal of contaminants including TDS, Fluoride, Lead, Chromium III, Chromium VI, and PFOA/PFOS - it’s just not available on the manufacturer’s website at the time of writing. Additional Performance Features Are there any other performance features to note for this system? If we look at the performance features that affect ease of use, there’s a lot to like about the RKIN U1. There are a number of preset buttons on the touch-screen display that make it really easy to dispense the purified water you need for a specific purpose, including modes for coffee, tea, milk, and different buttons for different water temperatures and cup sizes. You can also view the filter life on the display, so it’s clear when the machine’s performance may be affected by a filter that needs changing. Plus, there’s a rinse cleaning feature that means you won’t have to take the machine apart to do all the internal cleaning yourself. 🔧 Installation & Maintenance What sort of installation and maintenance tasks should you expect for the U1? Good news if you’re not a fan of these - the answer is “not many”. Like all countertop RO systems, the RKIN U1 is a plug-and-play type of machine. You just assemble it, plug it in, fill the ½-gallon water tank and place it in the system, and press to dispense water. The U1’s zero-installation design makes it a good choice for folks who live in apartments or anyone who doesn’t want the hassle of plumbing a filtration system into their water line. Maintenance for the RKIN U1 is also easy. The system has a few self-cleaning features, including a UV light that zaps the stored water to prevent microbe formation when it’s not in use, and a “rinse” setting that drains the system and flushes the filters. In short, you won’t have to take apart the entire system to get it clean. You will still need to wipe down the outside of the machine occasionally and replace the filters every 1-4 years on average. There’s a filter life notification for each of the 3 filters which turns yellow once filter life reaches 80%, and red when the filter needs to be replaced, so no need to guess when new filters are needed. The final maintenance task is to dump the wastewater from the tank every now and then (frequency depends on your rate of water use). This reject water contains contaminants and isn’t recommended for drinking, but you could use it for cleaning, watering your plants, and so on. 📝 Filter Info The filters in the RKIN U1 are particularly interesting because we’re seeing some filters that aren’t always used in other RO systems. There are the 3 standard filter stages: a sediment filter (which removes large sediment particles), an activated carbon filter (which removes chlorine, tastes, odors, and some VOCs and pesticides), and a semi-permeable membrane (which rejects up to 99.9% of all TDS). There’s also a remineralization filter. Remineralization filters are becoming a popular option for RO post-filtration because they add healthy alkaline minerals back into purified water and give it a better taste. And finally, the most unique of the filter stages is the hydrogen infusion stage, which creates “hydrogen-rich water”. There are several known benefits of hydrogen water, including reduced oxidative stress in cells and better sport performance, but research so far is limited. You can choose to turn off this treatment stage if you’d rather not use it. These filter stages are split into three separate cartridges: a sediment and carbon cartridge, an RO membrane cartridge, and a final post-RO filtration cartridge. The pre-and post- filters need replacing every 12 months and the RO membrane lasts 2-4 years, depending on your water quality.
