Easy Delicious Chicken Salad
Ingredients:
2 1/2- 3 cups of shredded chicken (You can use leftover chicken like rotisserie chicken)
3 tablespoons of Mayo made with Olive Oil (The difference is in the taste, and I think it’s so much better than regular mayo plus better for you! And only 60 calories a serving!)
1 teaspoon of Spicy Brown Mustard (I like deli style mustard, change it to a tablespoon if you want your salad to have more of a kick)
Optional: Add a cup of chopped onion and celery, and top it off with freshly chopped parsley. Since I have friends who are not big fans of onion or celery, I tend to leave those out of the recipe.
Directions: 
Combine your chicken, mayo, mustard, (and celery and onion if you so choose) in a large mixing bowl. Be sure to coat the chicken well.
Easy as that! You can eat a serving on it’s own, or I love it as a wrap. I placed two dollops of the salad on one romaine lettuce leaf and wrapped it in half of a tortilla. Absolutely delicious!!
