This is a summery cocktail for moments when you feel like a fancy drink, but don’t feel the need for alcohol! Try this for the fun, delicious flavour of a cocktail, and feel refreshed by strawberry tea notes and not have to deal with a hangover afterward!
Here’s Emmie’s quick and easy virgin fruity cocktail infused with Bluebird Teaco’s Strawberry Lemonade tea.
Sliced apple, cold brew tea and your virgin cocktail.
Serves: 4 glasses Time: 5 minutes to create + 5 – 20 hours for your cold brew tea.
What you will need:
2x Strawberry Lemonade teabags
1 red apple
Tropical juice
Tonic water
What to do:
Brew the Strawberry Lemonade tea: Place two teabags in a jug/ bowl/ cold brew tea bottle with up to 600ml water and let sit in the fridge for at least 5 hours, or overnight for best results.
Take one glass: Pour 3 parts tea, two parts juice and one part tonic water to add a little bit of fizz.
Cut apple into thin slices and place in to your drink.
Stir everything together with a long spoon and add cubed ice if desired.

My first introduction to a Shakshuka dish similar to this tomato and egg breakfast, was when I was 18 and an aupair for a family in Brisbane, Australia…
After taking the two boys to school, I came home to find my host-mum in the kitchen. This was quite a surprising sight because she rarely went out of her way to cook something – either I cooked or she made her kids toasts for dinner. She was actually a great cook, and I have 3 or 4 recipe bases I learned from her, when she had enough motivation to cook for us.
She made this dish a little differently to the way I do, but what she showed me was a dish based on tomato and baked beans, with egg added in and some incredibly tasty, chopped chorizo sausage. She threw it all into a small baking dish, then into the oven for 15 minutes and what came out was, honestly, the tastiest breakfast I had ever eaten.
The second time I ate a similar dish was on a recent weekend trip to Szczecin in Poland. We found a cute breakfast place that sold a baked tomato and egg dish, served with feldsalat (leafy greens) cherry tomatoes and balsamic, along with two freshly baked hunks of Ciabatta bread. An almost salivating worthy memory.
So naturally I held these food memories close and have now made it again, in a re-vamped, oven-free method. I don’t have an oven, otherwise I would have baked it, but I’m very impressed with how this turned out. So impressed I’ve eaten it 3 days in a row now.

Bubbling away contentedly in the pan. Ready in a minute!
Tomato, Egg and Balsamic Breakfast Recipe
  Makes 1 serving Time: 10 minutes total timeWhat you will need:
2 eggs
1/2 can of Chopped Tomatoes OR 2 fresh Roma Tomatoes, diced.
1 teaspoon Extra Virgin Olive Oil
Handful of your favourite green leaves – Spinach, Feldsalat, Lettuce, Kale, etc. 
1/2 teaspoon each of Salt and Pepper.  
1 Tablespoon of Balsamic Vinegar.
Heat a small, non-stick fry pan approx. 12-15cm wide, to high or 9 on your stove top. 
Pour in your olive oil and wait for it to warm (wave your hand just above the oil to feel heat, if there is some, it’s time to add tomatoes!). Throw in your tinned or fresh tomatoes, and cook for 2-3 minutes, or until the mix starts to bubble. Crack open your eggs and add them in, no scrambling, just straight in and let them sit for 10 minutes. Turn your heat down to 7 or between mid and high on your stove top. We don’t want to turn anything, but we do want them to bubble away steadily. 
Tear up your salad leaves in preparation. Set aside. 
Find a plate-bowl, yes thats a real thing, a plate thats deep enough to hold your tasty breakfast without it dribbling off the edge.
Gently tilt your pan to allow the dish to slide out and onto your plate, for best presentation, OR you can take a spatular and wriggle it out if it gets stuck. If both fail, you can mush it up and pour on to your plate-bowl – all options taste the same.
Add on your greens, and pour your balsamic vinegar over everything, even the eggs.
Serve with your morning coffee, sit by a window and enjoy your healthy start to the day!

Rome is an exact image of all the typical European elements, painted in our minds as children. It’s the sunshine, fine wine, the variety of new and tasty foods. It’s the attractive foreign men and women, the deep history and the pretty buildings.
I’m sat in my bedroom again, thinking about my time living in Europe, in Berlin to be precise. There’s a blog post about Berlin too, if you click here. It’s a little poetic and reflective story.
I’m remembering Rome in particular today. Thinking of our week spent sharing an apartment with somewhere between 3 and 6 different local Italians. They kept wandering in and out so we don’t actually know who lived there and who didn’t besides 2 of them. Our host and her housemate, who are lovely people with big smiles, bright eyes and an endless passion for Rome’s history. Oh, and their gorgeous black and white dog.
From here, we were lucky enough to have an incredible view over rooftops and church spires and domes. A sea of red roofs, white, green and then the gorgeous blue sky. We could climb up to the top of this building, with the dog by our side, of course, and see for miles on end.
Cobble-stone streets greeted me after stepping out of the main train station. The clop clop of hard shoes tapping onto the hard street with every step in the beating rhythm of Rome’s heart. Traffic noise, sirens of emergency vehicles as the sped past, the babble of the Italian language as it rolled from red lips, weaving into eager ears.
Looking up I was always faced with blue sky and the occasional white, fluffy cloud. Dusty coloured buildings from a modern time, contrasting with the ancient ruins rising up from warm ground. Green, grassy parks scattered about, and heavy, leafy trees leaning over roads as we walked along the river to the city centre.
Stumbling into the centre we found cheesy pizza and cheap wine by the Colosseo, tasty hot coffee in a local cafe, and of course, gelato. The Forum blew my mind, as did Villa Adriana just outside of Rome, and the Appia Antica Trail which we rode by bike through the rain and discovered archeological sites.
We watched the sun set slowly and magically in the Vatican, walked through the narrow pathways of Trastevere and threw coins over our shoulders together at the famous Trevi Fountain.
Rome was exactly what I had imaged, and oh so much more.

It’s not until you’re in the hairdresser’s chair, in front of that mirror with your black front cape on, that you realise how ugly you really are…
Kidding, you’re all beautiful. But really those lights in the hairdresser salons do nobody any favours.
This is just one downfall of using a proper hairdresser to cut your hair. Other than the usual:
Hairdresser: “There, all done. What do you think?”
Me: “Looks great, just what I wanted”… *Thinks it’s hideous what have I done to my head I cannot go out in public what happened here*
Hairdresser: “Great, see you next time”
Me: “Yep, see you then!” …*Thinks I’m never coming back again. Comes back next month for same thing*. 
Anyway! How do we solve this? Cut it yourself.
Really, my actual reason for cutting my own hair is because I live in Berlin and I’m too afraid to go in and try and explain what I want done in another language. As you can imagine, I could go in with my long hair and come out with a pixie cut. I can imagine myself pointing to show length I want off… and they’d cut everything TO that length, not that length OFF. Know what I mean? I wouldn’t suit the pixie cut. As I’ve mentioned before, I do over think things. HOWEVER I’m not ready to throw away my efforts in growing my hair out.
And as well, it’s expensive and I have no money.
It began with me snipping the split ends myself. That went well. So I did it again when the time came. Good again. I’m a pro, I think to myself. Probably shouldn’t have praised myself too much over that.
Then came layering the front. I angled the scissors and snippedy snippedy I went. Not bad! Worked pretty well. Didn’t look like I had seriously fucked up. Here’s a pic of the self snipped hair…

So once this had started to grow out again, and the ends were getting so split it looked like little trees were sprouting branches (see pic below for example), I thought, I should go get my hair done. But I ended up on youtube instead.
This is real hair. This is what happens to the ends. EEWWW
What do I stumble upon once on youtube? “How to cut your own bangs”!! So, you guessed it. I just went ahead and did another home job.
Now, I wouldn���t recommend jumping into cutting your own fringe without having dabbled in the split ends trimming, because it’s hard to ruin that. It’s VERY EASY TO CUT YOUR BANGS TOO SHORT.
Never fear though, I think I did okay. In fact I cut them too long, so I’ve been trimming tiny bits every day since because they’re literally in my eyes I’m so afraid of it being too short and looking fucking terrible. Keep in mind some faces REALLY suit short fringes. I’m sure my face is not one of those however! HAVE A LOOK!
Not bad! For a first go at fringe cutting. I’m sure my hairdresser friends will disagree… I’m super happy with it. Although I do look like a cute mushroom sometimes. Oh well.
If I had a hairdryer or curler to shape this, I think it’d be a liiiiittle better…
