4 lonely Granny Smiths in my fridge..... Voila Cheats Tarte Tatin! Didn't exactly nail my first go but nothing a scoop of icecream can't fix 😉 so you get a visual! Slightly over cooked the caramel, totally didn't nail the flip but managed to delicately piece is back together and burnt my arm on the handle! But totally worth it and only took 30mins... Today as the sun comes up- we are getting ready to jump over our next hurdle that's what they are for right, jumping over? The past 18months have been hectic and HRG @hotrockgranite has changed so much. Our little business of 4 staff to now a team of over 20 amazing men & women (yes I finally have friends in the office) selling the toys refinancing our home to buy our big tin roof dusty shed, to now renovating it to make way for our brand new hi tech machines. With the help of some of our amazing friends (and hopefully energex) this is the final big step in business for us. V͟͟I͟͟S͟͟I͟͟O͟͟N͟͟B͟͟O͟͟A͟͟R͟͟D͟͟ Before my recent vacay to Bali, I decided to take a leap into the unknown and enroll in @rachelcmacdonald Bright Eyed + Blog Hearted eCourse. I've wanted to work with Rach since 2012 but I had 2 little excuses since then.... MY KIDS.. While I still have those excuses and am extremely time poor my kids are 1 & 3 and sleep through the night, giving me an hour in the morning and two hours at night in free time (yay). Rach herself is pregnant with her 1st child, so this year she is only hosting one round. While in Bali I saw a post from my beautiful friend @staystrongmummy that she had completed the eCourse too and she has THREE kids, so that gave me extra motivation and some reassurance that it was possible to complete it & enjoy it. So peeps the time is NOW, I've committed, I'm nervous, a little bit lost but proud I managed to complete one task within the given time frame hahaha.... #bloghearted

G̥ͦO̥ͦG̥ͦO̥ͦ E̥ͦG̥ͦG̥ͦY̥ͦ C̥ͦU̥ͦP̥ͦS̥ͦ my brekkie for time poor peeps wanting a yummy filling breakfast. These were for my Husby as he doesn't have time for breakfast starting at 4am, so he eats it at work later on. Get out your silicone cupcake trays, layer with your choice of meat (hot salami) your veg (baby spinach) grated cheese (mozzarella) crack an egg in each mould, add wedge of baby tomato and sprinkle with S+P and dried basil. Bake at 180 degrees for 15mins or until just set, allow to cool in moulds, run a knife around the edge to remove and store in an air tight container.
